1/4 cup butter
2/3 cup sugar
1 egg
1 teaspoon vanilla
1 1/2 cups flour
2 teaspoons baking powder
1/2 cup milk

Steps:

  • Cream butter and sugar. Add unbeaten egg. Add vanilla. Beat thoroughly.
  • Mix flour and baking powder.
  • Add flour mix alternately with milk to creamed egg/butter/sugar mixture, beating each time for a smooth batter.
  • Pour into well-oiled loaf pan. Bake at 375 F for 35 minutes.

2 cups all-purpose flour
2 teaspoons baking powder
1 cup white sugar
1 teaspoon salt
½ cup butter
1 egg
1 cup milk
1 teaspoon vanilla extract
1 teaspoon lemon extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C) grease and flour an 8x4 inch loaf pan.
  • In a large bowl, mix flour, baking powder, sugar and salt. Cut in butter. Break 1 egg into a measuring cup and then fill to the 1 cup line with milk. Add to dry ingredients and beat well. Add vanilla and lemon flavoring.
  • Pour batter into an 8x4 inch loaf pan. Bake at 350 degrees F (175 degrees C) for 30 minutes or until a toothpick inserted into the center of cake comes out clean.

This recipe was my grandmothers,my mother made this one-egg cake when we were little. This cake was made only when one of her (11)children had a birthday. It made us feel special, being just like all the other kids. I make this cake, because its easy and quick to make. Enjoy!

2 c cake flour
2 tsp baking powder
1/4 tsp salt
4 Tbsp butter or other shortening
1 c sugar
1 egg unbeaten
3/4 c milk
1 tsp vanilla
cake frosting, any flavor is great with this cake i like white frosting with coconut

Steps:

  • 1. Add flour,baking powder, and salt mix together in bowl. In another bowl mix together butter,add sugar, gradually cream together until blended and light.Add egg and mix.
  • 2. Now add flour small amounts at a time with milk into creamy mixture once blended add vanilla.
  • 3. Bake in two greased 8-inch layer pans,in moderate oven (375`F.)25 minutes,or until done

MA'S ONE EGG CAKE

This was my Grandma's recipe. I believe it dates back to the depression. A moist and versatile cake that will please everyone. Really good with recipe #182807 or for strawberry shortcake or pineapple upside-down cake. You can double the recipe for a 10x13 pan or triple the recipe for a 12x16 pan.

1 3/4 cups flour
1 1/4 cups sugar
2 1/2 teaspoons baking powder
1/2 teaspoon salt
1/3 cup butter flavor shortening
2/3 cup milk
1 teaspoon vanilla
1/3 cup milk
1 egg

Steps:

  • Preheat oven to 350 degrees Fahrenheit.
  • Grease and flour a 9 inch x 9 inch pan.
  • Sift dry ingredients together.
  • Add shortening, the 2/3 cup milk, and the vanilla; beat for 2 minutes.
  • Add the 1/3 cup milk and egg; beat for 2 more minutes.
  • Pour into prepared pan.
  • Bake for about 45-50 minutes or until done. You might check a little earlier because my oven runs cool. If doubling or tripling the recipe, you'll have to increase the cooking time substantially.
  • UPSIDE DOWN CAKE:.
  • If making pineapple upside down cake, use the strained juice in the batter, reducing the milk by the amount of juice used.
  • Drop pieces of butter and sprinkle brown sugar on pan.
  • Lay pineapple rings down.
  • Pour cake batter on top.

50 g butter
1 tablespoon golden syrup
1 egg
1/2 cup sugar
1 tablespoon cocoa
1 cup flour
1 teaspoon baking powder
3 drops vanilla essence
1 teaspoon baking soda
3/4 cup milk
2 cups icing sugar
1/4 teaspoon butter, softened
2 tablespoons water, aprox
1/4 teaspoon vanilla essence
1 tablespoon cocoa (2 for a richer icing)

Steps:

  • pre-heat oven to 190 degrees Celsius.
  • grease a 20cm round cake tin and line base with baking paper.
  • melt butter and syrup in a small saucepan.
  • pour melted ingredients into a small bowl.
  • add egg and sugar, beat well.
  • sift cocoa, flour and BAKING POWDER together.
  • fold sifted ingredients and essence into egg mixture.
  • dissolve baking soda in milk.
  • fold into egg mixture.

this is the an easy cake ,when your in a hurry.i use it to make a pineapple udpside down cake,its not to sweet.or you can just frost it,it makes a small cake.this is perfect for a couple of single people.

  • 1. mix all this together,i use a whisk.and pour into a greased round pan,it only makes one layer,its a very basic cake.you can frost this,or i take a can of crushed pineapple,and drain it well,then put it first in the pan,and then some brown sugar and melted butter on that,and then pour the cake over it,and bake .when done ,invert on a plate.and serve with whip cream,this is perfect for 2 people,or a single person.
