This is a sausage omlet for many made all at once! GREAT for summertime vacation! Just mix, set and go to bed! I use the sundried tomatoes since it will rehydrate during cooking. you can use fresh but recommend waiting until serving to top each serving with fresh room temperature diced tomatoes. You can use other meats if you wish, use some leftover ham, or crispy fried bacon. cooked turkey sausage. Add fresh sliced mushrooms or diced bell peppers! or how about a minced jalapeno! what ever you like in your omlet the choices are yours- just make sure any meats are already cooked.

26 ounces frozen hash brown potatoes
1 lb sausage, cooked and crumbled
2 cups mozzarella cheese, shredded
1/2 cup parmesan cheese, shredded
1/2 cup sun-dried tomato, julienne cut
6 green onions, sliced
12 eggs
1/2 cup milk (or half and half)
salt and pepper, to taste
1 pinch cayenne pepper

Steps:

  • Spray a 6 quart slow cooker with cooking spray or use a slow cooker liner (reynolds makes these) Layer 1/2 of the potatoes on the bottom of slow cooker, half of the sausage, 1/2 the mozzarella and Parmesan cheese, 1/2 the sun dried tomatoes and green onion. Repeat with the remaining half of the same ingredients.
  • Beat eggs, milk, salt and pepper and cayenne in large bowl with a wire whisk until well blended.
  • Pour evenly over potato-sausage mixture.Cook on low setting for 8 hours or on high setting for 4 hours or until eggs are set.

An easy recipe for a basic vegetarian omelette with lots of vegetables, including bell peppers. If you like omelets, try this simple bell pepper vegetarian omelet made with onion, eggs, bell pepper and a touch of garlic powder for extra flavor.

1/2 onion, diced
1 tablespoon olive oil
4 eggs, beaten
1 tablespoon butter or 1 tablespoon margarine
salt and pepper
1 red bell pepper, chopped
1 green bell pepper, chopped
1/2 teaspoon garlic powder (optional)

Steps:

  • Sautee the onion in olive oil for 3 to 5 minutes. Add the bell peppers, and cook for another minute or two.
  • Add the onions and peppers to the beaten eggs and combine well.
  • In a large skillet or frying pan, heat the butter or margarine and pour in the egg mixture. Sprinkle with a dash of salt and pepper and the garlic powder.
  • Allow to cook until the bottom of the eggs are lightly golden brown, the either flip or fold in half and cook for a few more minutes.

leftover taco meat and fillings!
3 eggs, beat
splash of heavy whipping cream

Steps:

  • 1. While you are whipping up the eggs to throw into the fry pan, sprayed with cooking spray, just pop your leftover taco meat into the microwave for about 60 seconds and set aside.
  • 2. Pour your beaten eggs into the fry pan and fry on medium heat until slightly set, add the leftover taco meat, top with more cheese, and anything else you normally add to your tacos on one side of the omlet base, fold the other half over and heat on low until cheese is melted and meat mixture is heated through and enjoy! Super simple but so tasty!

4 eggs
1/4 c milk
1/2 tsp baking powder
1/2 tsp oil
salt & pepper
grated cheese (i used cheddar)
favorite omlet fillings (your choice: i used onions, bell peppers and deiced ham)

Steps:

  • 1. Preheat oven to 375 degrees. In a skillet, cook up your favorite omelet ingredients.
  • 2. Grease a 6 spot muffin tin. Fill each muffin cup with cooked omelet ingredients. Top with shredded cheese.
  • 3. Mix eggs, milk baking powder, oil and salt and pepper in a bowl. Pour egg mixture in each muffin cup. You should fill about 4/5 of the way to the top.
  • 4. Put in oven and bake for 20-25 minutes. Take out of oven and let rest for 5 minutes before serving or storing.

My boyfriend loves it when I use left over ribeye for his omlet..He makes sure to leave a little ribeye each time we have it.

small left over rare ribeye
- diced tomatoes
- 1/8 onion diced tiny
- 1/8 bell pepper or anahiem chili pepper diced tiny
- 4 large eggs
- 1/8 cup milk
small can mushrooms
- colby jack cheese finley shedded
- non stick vegtable spray

Steps:

  • Spray non stick skillet with vegtable spray and warm
  • chop onions and peppers very tiny
  • mix milk and eggs and whip with whisk till belended well
  • dice tomates and ribeye in cubes (Small)
  • Pour egg mixture into warm skillet, add ribeye,tomatoes, onions, drained mushrooms to one side of omlet salt and pepper lightly
  • Put heat on low and cover omlet. let cook until almost dry uncover and sprinkle cheese across side of omlet with meat. Using a spatula fold omlet over and cover one additional minute. Remove cover and cut in half.
  • Use what you like sometimes I put fresh baby spinich in omlet as well. Enjoy.

5 large egg whites (Seperated from whole eggs)
1/2 cup red bell pepper, Chopped
1/4 cup red onion, Chopped
3 ounces mushrooms, Chopped
1 large garlic clove, Chopped
1 tablespoon Smucker's No Sugar Added Orange Spread, 75% reduced fat sharp cheddar cheese. (I use Cabot)
cooking spray
1/2 cup fresh blueberries

Steps:

  • Heat a pan coated with cooking spray over medium heat.
  • Add the veggies and saute until soft. About 5 minutes.
  • In another pan coated with cooking spray and heated over medium heat, add the eggs and cheese.
  • Allow eggs to set.
  • Add the veggies to one half of the omlet and flip the other half over to cover the veggies.
  • Transfer the omlet to a plate.
  • Place Blueberries in a small dish.
  • Enjoy!
