OMG MEATLOAF
The title says it all. Some in my family don't care for chunks of onion in meatloaf, so the use of onion powder and dicing the green peppers small take care of that. The mix of sausage with the ground beef is crucial, and the Worcestershire is the killer ingredient.

Steps:
- Beat eggs.
- Add 1 1/2 cans tomatoes (reserve 1/2 can for top of loaves).
- Add Worcestershire, onion powder, salt and pepper.
- Mix above with meats, oatmeal, and bread crumbs.
- Mix in green pepper.
- Shape into two loaves.
- Place in loaf pans sprayed with Pam.
- Arrange the rest of canned tomatoes on top of loaves.
- Bake at 350 for about 1 hr and 15 minutes.

Steps:
- Saute onion, green onion, celery, carrot, green pepper, red pepper and garlic in butter until veggies are soft and liquid is absorbed. Cool and Reserve.
- Combine salt, cauenne, black pepper, white pepper, cumin, and nutmeg: Add to vegggie mixture. Stir in half and half, catsup, beef, prok, eggs, and bread crumbs. Mix well.
- Form into loaf and place on greased baking sheet, 9x5 loaf pan, or other similar sized pan. Bake at 350 degrees for 45 to 50 minutes. Let stand 10 minutes before slicing. Pour off excess fat. Slice and serve with gravy.
- Sauce Prep
- Saute shallots in 1 tablespoon butter with thyme, bay leaf and black pepper. Add white wine and simmer over high heat until reduced to glaze.
