When you combine caramelized onions and zucchini with eggs and grated cheeses into this zucchini omelet you get a healthy meal that is very light and delicious tasting! Nothing fancy, and no fuss at all, just a dish that is simple, easy and decadent!

2 medium zucchini- chopped
2 Tbsp. extra virgin olive oil - divided
2 garlic cloves - sliced
1 large onion- chopped
1/4 tsp. dried parsley
salt and black pepper, to taste
3 whole eggs
1 Tbsp. grated pecorino cheese
1 Tbsp. grated parmesan cheese

Steps:

  • In a large or medium-size non-stick skillet, and on medium heat, add 1 tablespoon of olive oil, garlic, and chopped onions. Saute for about 2 minutes, until the onions are softened.
  • Add chopped zucchini and saute zucchini for a few minutes until the zucchini is cooked and softened, stirring occasionally about 5 minutes. Season with salt and pepper to taste. Remove from heat. Set aside to cool for a few minutes.
  • Meanwhile, lightly scramble 3 eggs in a mixing bowl. Transfer the zucchini into the eggs, add the grated cheeses and stir until well combined.
  • Using the same skillet (and no need to clean it), heat on medium heat, and add the additional tablespoon of olive oil. When the oil is hot, gently pour in the egg and zucchini mixture and lower the heat to low. Gently shake the skillet to make sure the omelet isn't sticking to the bottom. Simmer on lowest heat for 2 to 3 minutes, or more if needed (it's a thicker omelet).
  • Use a spatula and gently lift one side of the omelet to see if the eggs are golden brown, and not burning. When the eggs on the bottom are cooked (not loose or running).
  • Then use a small plate, one that is about the same size of the skillet and turn it over and on top of the omelet, hold your hand on top of the plate and carefully flip over the omelet onto the plate. Then slide the omelet back into the skillet to finish cooking, additional 2 to 3 minutes.
  • Remove and cut into pieces and serve.

3 tablespoons extravirgin olive oil
1 large red onion, quartered and thinly sliced crosswise
1 bunch chard, leaves only, coarsely chopped
Salt and freshly milled pepper, to taste
1 garlic clove
6 to 8 large eggs, lightly beaten
2 tablespoons chopped parsley
2 tablespoons chopped or torn basil leaves
2 teaspoons chopped thyme leaves
1 cup grated Gruy re cheese
2 tablespoons freshly grated Parmesan cheese

Steps:

  • Heat 2 tablespoons of the oil in a 10inch skillet. Add the onion and cook over low heat, stirring occasionally, until completely soft but not browned, about 15 minutes. Add the chard and continue cooking, stirring occasionally, until the moisture has cooked away and the chard is tender, about 15 minutes. Season well with salt and freshly ground pepper. Meanwhile, mash the garlic in a mortar with a few pinches of salt, then stir it into the eggs along with herbs. Combine the chardonion mixture with the eggs, stir in the Gruy re cheese and half the Parmesan.
  • Preheat the broiler. Heat the remaining oil to the skillet and when it's hot, add the eggs. Slide the pan back and forth a few times to make sure the eggs are not sticking. Keep the heat at mediumhigh for about one minute, then turn it to low. Cook until the eggs are set but still a quite moist on top. Add the remaining cheese, slide the pan under the broiler and broil until browned.
  • Serve the trouchia in the pan or slide it onto a serving dish and cut into wedges. The gratined top and the golden bottom are equally presentable.

MUSHROOM, TOMATO AND ONION OMELET WITH HOME FRIES AND BACON

6 slices bacon
4 Yukon Gold potatoes
1 clove garlic
Kosher salt
1 medium onion
4 cremini mushrooms
2 Roma tomatoes
Extra-virgin olive oil
4 eggs
1/2 cup shredded fontina cheese
Chopped fresh chives, for garnish
4 slices pumpernickel bread, toasted

Steps:

  • Preheat the oven to 400 degrees F.
  • Place the bacon on a baking sheet and bake to the desired crispness, 12 to 15 minutes.
  • Meanwhile, quarter the potatoes and place them and the garlic in a medium pot with cold water to cover; add salt. Bring to a boil over high heat, then lower the heat and simmer until potatoes are fully cooked and soft, about 15 minutes. Drain well.
  • While potatoes are cooking, start on the omelet filling: Cut the onion into small dice; you'll need 1/2 cup. Remove and discard the stems from the mushrooms, then thinly slice the caps. Seed the tomatoes and cut into small dice.
  • In a skillet over medium heat, sweat half of the onions, seasoned with salt, in some olive oil until translucent and soft, about 5 minutes. Add the mushrooms, season with salt, and continue cooking until slightly soft, another 5 minutes. Add the tomatoes; cook for 3 to 4 more minutes. Add salt to taste.
  • Whisk the eggs together with 2 tablespoons water and 1/2 teaspoon salt until fluffy. Set aside.
  • Heat a cast-iron skillet over medium-high heat; add olive oil to coat the pan. Add the remaining 1/4 cup diced onions and cook for 2 minutes. Add the potatoes; cook until golden brown and crispy, about 6 minutes.
  • Place a nonstick skillet over medium heat; add olive oil to coat. Add the egg mixture and cook until set, frequently moving the edges away from the pan with a rubber spatula. Sprinkle with a layer of shredded fontina, add the filling to the middle, and fold the omelet. Cook until the cheese has melted, another minute or two.
  • Arrange all--bacon, home fries and omelet--on a serving platter, sprinkle with fresh chives, and serve with pumpernickel toast on the side.

LAYERED ZUCCHINI AND RICOTTA OMELET CAKE

1 cup fresh ricotta or fresh sheep's milk ricotta
1/3 to 1/2 cup whole milk
2 tablespoons finely chopped thyme leaves
Salt and freshly ground black pepper
3 tablespoons extra-virgin olive oil
1 pound small firm zucchini, shredded or finely chopped
1 red chile pepper, finely chopped or very thinly sliced
1 roasted sweet red pepper, chopped
1 small bunch scallions, whites and greens, chopped
12 eggs, lightly beaten
Small wedge Parmigiano-Reggiano, for shaving
1 cup baby arugula leaves

Steps:

  • In a small bowl, combine the ricotta with some milk to thin it out to a spreadable consistency and season it with thyme, salt and pepper, to taste.
  • Line a cake pan with plastic wrap. Choose a nonstick skillet similar in size to your cake pan.
  • Beat the eggs with salt and pepper, to taste. Have 2 plates on hand that are similar in size to the skillet. Heat a tablespoon of extra-virgin olive oil in the skillet over medium to medium-high heat. Add 1/3 of the zucchini, chili, sweet peppers and scallions to the pan, season with salt and pepper, to taste. Saute the mixture for a couple of minutes then add 1/3 of the eggs and brown the omelet. Cover the pan with a plate and flip the omelet over and brown on the other side. Slide the browned omelet onto another plate and repeat twice more to create 3 omelets.
  • Put the most appealing omelet in bottom of a cake pan, spread with half the ricotta mixture and top with another omelet, more cheese and then the third omelet. Invert onto cake plate or stand and top with arugula and shaved Parmesan. Cut into wedges and serve.

PARMESAN ZUCCHINI OMELET

2 slices onion, separated into rings
2 tablespoons butter
3 eggs
3 tablespoons water
1/8 teaspoon dried thyme

Steps:

  • In a 10-in. broiler-proof skillet, saute zucchini and onion in butter until crisp-tender. In a small bowl, lightly beat the eggs, water, thyme, salt and pepper; pour over vegetables. Cook over medium heat; as eggs set, lift edges, letting uncooked portion flow underneath. , When eggs are completely set, top with tomato and cheese. One of my favorite Provençal omelets is a sweet onion omelet, whose name in Provençal means "harvester's omelet." Workers would carry these types of omelets to the fields and eat them as a midmorning meal. I think they're suitable for just about any meal.

1 tablespoon plus 2 teaspoons extra virgin olive oil
3/4 cup finely chopped onion
Salt to taste
1 garlic clove, minced
1 small zucchini, grated (about 1 cup)
4 eggs
1 tablespoon milk
Freshly ground pepper

Steps:

  • Heat 1 tablespoon of the olive oil over medium heat in a heavy 8-inch nonstick omelet pan and add the onion and a generous pinch of salt. Cook, stirring often, until the onion is very soft and sweet, about 10 minutes. Add the garlic and the zucchini, and cook, stirring often, until the zucchini has wilted, about 3 more minutes. Remove from the heat.
  • Beat the eggs in a medium bowl and add the milk and salt and pepper to taste. Stir in the onion and zucchini mixture and mix well. Clean and dry the pan.
  • Heat the remaining olive oil over medium-high heat in the omelet pan. Drop a bit of egg into the pan and if it sizzles and cooks at once, the pan is ready. Pour in the egg mixture, scraping in every last bit with a heat-proof rubber spatula. Swirl the pan to distribute the eggs and filling evenly over the surface. Shake the pan gently, tilting it slightly with one hand while lifting up the edges of the frittata with the spatula in your other hand, to let the eggs run underneath during the first few minutes of cooking. Once a few layers of egg have cooked during the first couple of minutes of cooking, turn the heat down to low, cover and cook 7 to 10 minutes, until the frittata is puffed and just about set. From time to time remove the lid and loosen the bottom of the omelet with a wooden or heat-proof rubber spatula, tilting the pan, so that the bottom doesn't burn. It will however turn golden.
  • If the frittata is still runny on the top, wearing oven mitts, slide the frittata out onto a plate or even better, a saucepan lid that has a handle, reverse the pan over the plate or lid, and holding the two together, flip the plate or lid so that the frittata goes back into the pan on its not-quite-cooked side. Finish for no longer than a minute, then reverse onto a platter. Allow to cool to room temperature, and serve, or chill. Cut into 4 wedges to serve. The wedges pack well and are very portable.

1/4 cup chopped green onion
1/4 cup chopped tomato

4 eggs, beaten
2 tablespoons water
1/2 teaspoon salt
1/2 teaspoon dried basil
1/4 teaspoon celery salt
1/4 teaspoon pepper
2 tablespoons butter or 2 tablespoons margarine
1/2 cup shredded swiss cheese

Steps:

  • Melt 1 tablespoon butter in a small skillet.
  • Add zucchini, onion, and tomato; saute 2-3 minutes or just until tender.
  • Stir in salt and pepper to taste; set aside.
  • Combine eggs, water, remaining salt, basil, celery salt, and remaining pepper; mix well.
  • Melt 2 tablespoons butter in a 10-inch skillet until just hot enough to sizzle a drop of water; pour in egg mixture.
  • As mixture starts to cook, gently lift edges of omelet, and tilt pan to allow the uncooked portion to flow underneath.
  • When the mixture is set and no longer flows freely, sprinkle zucchini mixture on half of omelet and cheese on remaining half.
  • Fold omelet in half, and place on a warm platter.
