1 can (28 ounces) diced tomatoes, undrained
1 cup chicken broth
1/4 cup butter, cubed
2 tablespoons sugar
1 tablespoon chopped onion
1/8 teaspoon baking soda
2 cups heavy whipping cream

Steps:

  • In a large saucepan, combine the first six ingredients. Cover and simmer for 1 hour. , In the top of a double boiler or metal bowl, heat cream over simmering water; add to tomato mixture just before serving.

This is an original recipe from the kitchen of 4B's restaurant. My whole family craves 4B's soup often and would head over to get it "to go". Now that I don't live in Montana, I got the recipe from them to make whenever I wish here in Iowa.

32 ounces tomatoes, canned and diced
9 ounces chicken broth
1 ounce butter
2 tablespoons sugar
1 tablespoon onion, chopped
1 pinch baking soda
2 cups cream

Steps:

  • Mix tomatoes, chicken broth, butter, sugar, onions and soda.
  • Simmer over low heat for 1 hour.
  • Heat cream in a double boiler.
  • Add cream to hot tomato mixture and serve.

This is the way they made cream of tomato soup before Campbells came along....not that I don't love Campbells.

4 tablespoons butter
4 tablespoons flour
1 1/2 teaspoons salt
2 cups milk
1 (16 ounce) can tomatoes
1/4 teaspoon pepper
1 bay leaf
1/2 teaspoon ground cloves
1 tablespoon onion, minced
1/2 teaspoon salt

Steps:

  • In a saucepan, melt butter over medium heat.
  • Add flour and salt, blending well.
  • Slowly add milk, stirring constantly.
  • Cook until mixture boils and thickens.
  • Set aside Press tomatoes through a sieve or blend until smooth.
  • In a soup pot, combine remaining ingredients and bring to a boil.
  • Lower heat and simmer 10 minutes.
  • Pour white sauce into soup, stirring constantly.
  • Heat thoroughly before serving.

1 can(s) (29 ounce) diced tomatoes (fresh diced tomatoes may also be used)
1 can(s) (10 ounce) chicken broth
2 Tbsp butter
2 Tbsp sugar
2 Tbsp finely minced onion
1/4 tsp baking soda
2 c cream

Steps:

  • 1. In a heavy bottomed stock pot over medium heat cook the onions in the butter until onions are translucent.
  • 2. Add tomatoes, chicken broth, sugar, and baking soda. Simmer on medium heat, 20 minutes or so, to reduce a little.
  • 3. Meanwhile, slowly heat the cream, being careful not to scorch the bottom. Do not boil. (I usually heat it in the microwave)
  • 4. When the cream is hot and beginning to steam, add it to the tomato mixture.
  • 5. Cook on med-low, stirring often, until heated through (about 20 minutes).

1 1/2 lbs ripe tomatoes, peeled,seeded and chopped
1 medium onion, studded with
10 whole cloves
1 1/4 cups beef stock
2 tablespoons chopped fresh basil
2 teaspoons salt
1/2 teaspoon freshly ground black pepper
1/4 teaspoon ground nutmeg
1/4 teaspoon ground coriander
1/4 teaspoon baking soda
2 teaspoons sugar
2 tablespoons flour
2 tablespoons butter, softened
1 1/2 cups heavy whipping cream, heated almost to boiling
fresh basil leaf, finely chopped,for garnish

Steps:

  • In a large deep saucepan, over a medium heat, cook the tomatoes, onion, beef stock, basil, salt and pepper, nutmeg and coriander for 30 minutes.
  • Let cool a little, then remove and discard the cloves from the onion.
  • Puree the soup in a blender until smooth (This may be done in batches).
  • Return the soup to the saucepan and stir in the baking soda and sugar.
  • Blend the flour and butter together to form a smooth paste.
  • Stir this into the soup.
  • Watching carefully, cook the soup, over a medium-low heat, until thickened, 10 to 15 minutes.
  • Remove the saucepan from the heat and slowly stir in the warmed cream.
  • Return the soup to the heat and continue to warm it, just until it is piping hot and about to come to a boil.
  • (Don't let it boil or it will curdle and truly disappoint you).
  • Serve this soup garnished with fresh basil leaves.
