1 medium russet potato (8-9 oz.) cut into chunks
1 c water
3 Tbsp unsalted butter, cut into pieces
4 c bread flour
1 1/2 Tbsp granulated sugar
2 tsp gluten
2 tsp salt
2 1/4 tsp saf yeast or 2 3/4 tsp bread machine yeast or 1 pkg of fast rising yeast

Steps:

  • 1. Combine potato and water in a small saucepan. Simmer, covered, until the potato is tender, abut 10 minutes;slip off the peels. Mash or puree the potatoe with its water (do not drain; you want the water). Pour the potato-water mixture into a 2 cup glass measuring cup and add additional water to make 1 2/3 cups. Cool to room temperature.
  • 2. Place all the ingredients in order specified by the manufacturer of your machine; adding the potato mixture with the liquid ingredients. Set crust to medium and program for the Basic cycle. This recipe will not work with the Delay Timer function. Immediately remove bread from the bread pan and place it on a rack. Let cool to room temperature before slicing. Yeild 1 (2 lb) loaf.

This is a wonderful bread recipe and one of my favorites from my Ukrainian grandmother! There is nothing like potato bread!

3 1/2 c whole milk
6 Tbsp sugar
6 Tbsp butter
2 tsp salt
1/2 c mashed potatoes
2 pkg dry yeast
1/2 c lukewarm water (about 110 degrees)
3 c whole wheat flour
7 - 8 c unbleached white flour

Steps:

  • 1. Scald milk. Add sugar, butter, salt and mashed potatoes Cool to lukewarm (about 110 degrees).
  • 2. Meanwhile, dissolve yeast in lukewarm water. Add to the cooled milk mixture.
  • 3. Add whole wheat flour and 1 cup white flour. Beat 2 minutes with mixer. Stir in 6 to 7 more cups of flour until dough leaves sides of bowl.
  • 4. Turn onto lightly floured surface. Knead gently until dough forms a smooth ball.
  • 5. Place in a greased bowl. Turn once to grease top of dough. Cover and let rise in a warm place and let rise again until double.
  • 6. Turn onto floured surface and divide dough into 3 equal parts. Cover and let rest 10 minutes. Form into 3 loaves and place in greased bread pans.
  • 7. Bake at 350 degrees for 40 to 45 minutes. remove from pans and place on rack to cool.

Steps:

  • Combine the potato and water in a small saucepan; simmer, covered, until the potato is tender, about 10 minutes.
  • Slip off the peels; mash or puree the potato with its water (do not drain, you want the water).
  • Pour the potato-water mixture into a 2-cup glass measuring cup and add additional water to make 1 1/3 cup; cool to room temperature.
  • Place all the ingredients in the pan according to the order in the manufacturer's instructions, adding the potato mixture with the liquid ingredients.
  • Set crust on medium and program for the Basic cycle; press Start.
  • When the baking cycle ends, immediately remove the bread from the pan and place it on a rack.
  • Let cool to room temperature before slicing.
