This is such a simple and delicious way to prepare oatmeal! And finally an oatmeal that's not just mush. The whole family will love this! You can also prep the night before and bake the following morning (chill overnight then remove and let it rest at room temp while the oven preheats).

1 1/2 cups milk ((preferably anything but skim))
2 large eggs
1/2 cup maple syrup or packed light-brown sugar*
1/4 cup butter, (melted)
1 1/2 tsp baking powder
1 1/2 tsp vanilla extract
1 tsp cinnamon
1/4 tsp salt
3 cups rolled oats ((quick oats works fine too))

Steps:

  • Preheat oven to 350 degrees. Butter an 8 by 8-inch baking dish, set aside.
  • In a large mixing bowl whisk together milk, eggs, maple syrup or brown sugar, butter, baking powder, vanilla, cinnamon and salt.
  • Mix in oats.
  • Pour into prepared baking dish and spread evenly**.
  • Bake in preheated oven 30 - 40 minutes until set.
  • Let cool slightly then cut into squares and serve warm with fresh fruit, nuts, milk, a little cream or half and half, maple syrup or honey if desired.

2 cups old fashioned rolled oats ((jumbo rolled oats) (use GF oats if GF))
1/2 cup sliced almonds ((flaked almonds))
1 teaspoon baking powder
1/2 teaspoon salt
1 large egg
1/2 cup almond butter
1/4 cup maple syrup
2 cups milk
1 teaspoon quality vanilla extract
1/4 cup dark chocolate chips

Steps:

  • Preheat the oven to 375°F / 190° C. Grease an 8x8 pan with oil.
  • In a medium bowl, mix together the oats, almonds, baking powder, and salt. Set aside.
  • In a large bowl, beat the egg. Whisk in the almond butter and maple syrup. Stir in the milk and vanilla extract. Stir in the oat mixture.
  • Pour the mixture into the prepared pan. Sprinkle the dark chocolate chips on top. Stir it very slightly, just enough so some of the dark chocolate chips mix into the batter.
  • Place in the oven and bake for 45 minutes, until the oatmeal is set in the middle. Allow to cool for about 10 minutes, then dust with powdered sugar (if desired) and serve. Top with additional maple syrup if desired.

6 medjool dates, pitted and chopped (1/2 cup)
4 cups old fashioned rolled oats
1 teaspoon baking powder
1/2 teaspoon kosher salt
1/2 teaspoon ground cinnamon
4 cups whole milk
1/4 cup pure maple syrup, plus more for serving
2 large eggs
2 teaspoons pure vanilla extract
1 cup fresh or frozen mixed berries
1/4 cup toasted pepitas
2 tablespoons hemp seed hearts

Steps:

  • Heat oven to 350°F. Butter a 3-quart baking dish. Sprinkle dates evenly along bottom. In a large bowl, whisk together oats, baking powder, salt, and cinnamon. In another bowl, combine milk, maple syrup, melted butter, eggs, and vanilla extract. Add to bowl with oats and stir to combine. Transfer to prepared dish.

GRANDMA'S OLD FASHIONED OATMEAL

This isn't my Grandmother's recipe. I have had it over 10 years and don't remember where I got the recipe. I am guessing at the time it takes to make this.

2 1/2 cups water
1/8 teaspoon salt
2 cups dry oatmeal
2 tablespoons sugar
1/2 teaspoon cinnamon
1 (5 ounce) can evaporated milk
3 tablespoons butter
2 tablespoons brown sugar, to taste

Steps:

  • Bring the 2 1/2 cups water to a boil.
  • Then add the salt.
  • While stirring constantly, gradually add the oatmeal.
  • Continue to stir the oatmeal and add the sugar and cinnamon.
  • Cook 1 minute and add the evaporated milk.
  • After adding the evaporated milk reheat to boiling.
  • Pour oatmeal in a serving dish and top with the butter and brown sugar.
