½ cup white sugar
½ cup butter
1 egg
1 cup molasses
2 ½ cups all-purpose flour
1 ½ teaspoons baking soda
1 teaspoon ground cinnamon
1 teaspoon ground ginger
½ teaspoon ground cloves
½ teaspoon salt
1 cup hot water

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9-inch square pan.
  • In a large bowl, cream together the sugar and butter. Beat in the egg, and mix in the molasses.
  • In a bowl, sift together the flour, baking soda, salt, cinnamon, ginger, and cloves. Blend into the creamed mixture. Stir in the hot water. Pour into the prepared pan.
  • Bake 1 hour in the preheated oven, until a knife inserted in the center comes out clean. Allow to cool in pan before serving.

1/4 cup dark rum or water
1/2 cup golden raisins
1/4 pound (1 stick) unsalted butter
1 cup unsulphured molasses
1 cup (8 ounces) sour cream
1 1/2 teaspoons grated orange zest
2 1/3 cups all-purpose flour
3/4 teaspoon baking soda
1 1/2 teaspoons ground ginger
1 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1/2 teaspoon kosher salt
1/3 cup minced dried crystallized ginger (not in syrup)
1 cup confectioners' sugar, optional
2 tablespoons plus 1 teaspoon freshly squeezed orange juice

Steps:

  • Preheat the oven to 350 degrees F. Grease an 8 by 8-inch cake pan and line with parchment paper. Grease and flour the pan.
  • Place the rum and raisins in a small pan, cover and heat until the rum boils. Turn off the heat and set aside. Place the butter and molasses in another small pan and bring to a boil over medium heat. Pour the mixture into the bowl of an electric mixer fitted with the paddle attachment. Cool for 5 minutes, then mix in the sour cream and orange zest.
  • Meanwhile, sift the flour, baking soda, ginger, cinnamon, cloves, and salt together in a small bowl. Mix with your hands until combined. With the mixer on low speed, slowly add the flour mixture to the molasses mixture and mix only until smooth. Drain the raisins and add them and crystallized ginger to the mixture with a spatula. Pour into the prepared pan and bake for about 35 minutes, until a toothpick comes out clean. Set aside to cool completely.
  • When the cake has cooled, whisk together the confectioners' sugar and orange juice and pour it onto the gingerbread, allowing it to drip down the sides. Allow the glaze to set. Cut the gingerbread into 9 squares.

Steps:

  • Beat together butter and brown sugar in a large bowl with an electric mixer at moderately high speed until pale and fluffy, 3 to 5 minutes. Add eggs 1 at a time, beating well after each addition, then beat in molasses. (Batter may look separated.) Mix in flour mixture at low speed, then water, mixing until batter is smooth, about 1 minute.
  • Pour batter into a buttered 9-inch square metal baking pan (2 inches deep). Bake in middle of oven until a tester comes out clean, 35 to 40 minutes. Cool in pan on a rack, about 20 minutes, then serve warm.

8 tablespoons softened butter
1/2 cup packed light brown sugar
1/2 cup molasses
1 large egg
2 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 tablespoon ground ginger
1 teaspoon ground cinnamon
1/2 teaspoon ground allspice
2 cups powdered sugar
1/3 cup softened butter
1 teaspoon vanilla extract
2 tablespoons milk or 2 tablespoons cream
1 teaspoon ground nutmeg

Steps:

  • Preheat oven to 350°.
  • Cream together butter and sugar, then beat in molasses and egg.
  • Mix all dry ingredients together in a separate bowl.
  • Add the dry ingredients to the creamed butter/sugar mixture and mix until well blended.
  • Cover and refrigerate for one hour.
  • Roll out dough on a lightly floured surface to about a 3/4-inch thickness.

1/2 c dark brown sugar
1/4 c corn oil
1/4 c applesauce
1 c molasses - mild
1 large egg
2 1/2 c flour
1 1/2 tsp baking powder
1/2 tsp salt
2 tsp cinnamon powder
2 tsp ginger powder
1 tsp ground cloves
1 c hot water
~~~SPICED DRIZZLE RECIPE~~~
1/3 c powdered sugar
2 Tbsp 100% pure maple syrup
1/4 tsp pure vanilla extract
1/2 tsp cinnamon powder
1/4 tsp ground cloves
MIX ALL THE DRIZZLE INGREDIENTS TOGETHER WELL.
THEN DRIZZLE ON COLD CAKES OR COOKIES.
THE DRIZZLE WILL HARDEN AS IT DRIES.

1 large egg
3/4 cup dark molasses
3/4 cup cold water
1/3 cup minced crystallized ginger (or candied)
1 cup heavy cream (not ultrapasteurized, if possible)
1/4 cup maple syrup (or an equal amount of the syrup from candied ginger)

Steps:

  • Heat the oven to 350°F Butter an 8x8-inch cake pan. Sift together the flour, baking soda, ginger, cinnamon, cloves, and salt onto a sheet of waxed paper. Set aside.
  • In a large mixing bowl, beat the butter until light and creamy. Add the sugar and continue beating until light and fluffy. Add the egg and beat until well combined. Scrape down the sides of the bowl and pour in the molasses in a slow, steady stream, beating all the while. Add half of the sifted dry ingredients and mix just until well combined. Mix in the remaining dry ingredients. Slowly pour in the cold water and stir until well incorporated.

1 3/4 c all purpose flour
1 c sugar
1/2 tsp salt
1 tsp baking soda
3 tsp ginger, ground
1 tsp cinnamon, ground
1 tsp vanilla extract
1 Tbsp cider vinegar (may use white vinegar)
1/3 c vegetable oil
1 c cold water

Steps:

  • 1. Preheat oven to 350°F. Lightly grease or spray an 8" or 9" square pan that is at least 2" deep.
  • 2. This can be mixed right in the pan. Measure all the dry ingredients into the prepared pan. Make 3 wells in the flour, and put the vanilla, vinegar, and oil into the 3 wells. Pour the cup of water over all and stir together with a fork until well blended.
  • 3. Here is how I prefer to do it: Whisk the dry ingredients together in a medium mixing bowl. Whisk the liquid ingredients together in a small mixing bowl. Pour the liquid ingredients into the dry ingredients and stir until well combined. Pour the batter into the prepared pan.
  • 4. Bake for 30 to 35 minutes. I think mine was done at 33 minutes. Cool in pan. May be iced with the following glaze:
  • 5. Orange Glaze: Whisk a dash of salt into 2 tablespoons orange juice. Add up to 2 (or so) cups of powdered sugar until thick glaze consistency is reached. Spread on cake and allow to cool before cutting into squares.

1 TBLS lemon rind
3 1/2 TBLS lemon juice

Steps:

  • Beat butter and sugar together. Add eggs one at a time. Add sour cream and molasses. Add all dry ingredients For lemon sauce: Add all ingredients above a double boiler except butter. Thicken sauce. Add butter once removed from stove.
