These are the ones my grandmother used to make: warm, flaky, apple-y sweet and drizzled with a sauce that bakes right with them. These are not difficult to make, just a little time-consuming. Serve warm with whipped cream or ice cream.

1 recipe pastry for double-crust pie
6 large Granny Smith apples, peeled and cored
½ cup butter
¾ cup brown sugar
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
3 cups water
2 cups white sugar
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Butter a 9x13 inch pan.
  • On a lightly floured surface, roll pastry into a large rectangle, about 24 by 16 inches. Cut into 6 square pieces. Place an apple on each pastry square with the cored opening facing upward. Cut butter into 8 pieces. Place 1 piece of butter in the opening of each apple; reserve remaining butter for sauce. Divide brown sugar between apples, poking some inside each cored opening and the rest around the base of each apple. Sprinkle cinnamon and nutmeg over the apples.
  • With slightly wet fingertips, bring one corner of pastry square up to the top of the apple, then bring the opposite corner to the top and press together. Bring up the two remaining corners, and seal. Slightly pinch the dough at the sides to completely seal in the apple. Repeat with the remaining apples. Place in prepared baking dish.
  • In a saucepan, combine water, white sugar, vanilla extract and reserved butter. Place over medium heat, and bring to a boil in a large saucepan. Boil for 5 minutes, or until sugar is dissolved. Carefully pour over dumplings.
  • Bake in preheated oven for 50 to 60 minutes. Place each apple dumpling in a dessert bowl, and spoon some sauce over the top.

These apple dumplings are so good served warm with a little bit of vanilla or butter pecan ice cream. If someone you know needs a little something to make them smile, bring on a big happy face with these dumplings.

1 1/2 recipe pastry for double crust pie (my recipe follows)
3 lb johnathon apples, quartered
1/2 c real butter
1 1/2 c light brown sugar
2 tsp ground cinnamon
1 tsp apple pie spice
4 c apple cider
1 c water
4 Tbsp white karo syrup

Steps:

  • 1. Preheat oven to 400 degrees F (200 degrees C)
  • 2. Butter 2-9x13 inch pans. I use a large (14") round cake pan.
  • 3. Mix together brown sugar, cinnamon and apple pie spice and set aside.
  • 4. Prepare pie crust. On a lightly floured surface, roll pastry into a large rectangle.
  • 5. Peel and cut apples into quarters or halves if you prefer a larger piece of apple.
  • 6. Cut pastry into squares large enough to wrap each individual apple quarter or half.
  • 7. Place one apple quarter or half in center of one of the pastry cut sections. Add 1 Tablespoon of the brown sugar mixture and 1 teaspoon butter.
  • 8. With slightly wet fingertips, bring one corner of pastry square up to the top of the apple, then bring the opposite corner to the top and press together. Bring up the two remaining corners and seal. Slightly pinch the dough at the sides to completely seal in the apple. Repeat with the remaining apples. Place in prepared baking dish. Dumplings can be frozen at this point.
  • 9. In a saucepan, combine apple cider, water, and white corn syrup. Place over medium heat, and bring to a boil. Carefully pour over dumplings.
  • 10. Bake in a preheated oven 50-60 minutes. In my oven, I bake for 60 minutes. The crust needs to be slightly golden in color. Place in dessert dishes with some sauce spooned over the top and a scoop of ice cream if you like.
  • 11. TO MAKE PASTRY: 3 cups of all purpose flour 1 Cup plus 2 Tablespoons solid Crisco Shortening 12 Tablespoons (3/4 cup) of ice water 1 teaspoon of salt
  • 12. Add flour and salt together. Cut Crisco into flour until crumbly. Add ice water and stir until combined.
  • 13. Turn pastry dough out onto slightly floured board. Knead about 3 turns and sprinkle lightly with flour. Roll out dough into large rectangle.

6 medium apples, mcintosh
2 c flour
2 1/2 tsp baking powder
1/2 tsp salt
2/3 c shortening, butter flavor
1/2 c milk
SAUCE INGREDIENTS:
1 1/2 c white sugar
1/4 tsp ground cinnamon
1/4 tsp ground nutmeg
dash salt
1 1/2 c water
2 Tbsp butter

Steps:

  • 1. Make APPLE DUMPLING SAUCE as follows: Combine sauce ingredients: sugar,dash of salt,spices and water. Bring to a boil & Simmer 3 minutes,remove from heat add butter. SET ASIDE PEEL & CORE APPLES (LEAVING THEM WHOLE)
  • 2. To make pastry: sift flour,bkg. Pwd. & salt together.Cut in shortening until particles are about the size of peas. Sprinkle milk over mixture and press together lightly.WORKING DOUGH only enough to hold together.Roll dough as for pastry and cut into 6 squares, place an apple on each one.
  • 3. Fill cavity in apple with a small pat of butter and fill with some cinnamon & sugar. Pat dough molding it .around each apple to cover it completely
  • 4. Place Dumplings 1" apart in a greased 9"x13" bkg. pan. POUR over them the sauce Bake 350 degrees for 35-40 min. BASTE OCCAISIONALLY with sauce during BAKING. SERVE with RICH cream or ice cream!

Dumplings:
2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon salt
2/3 cup chilled butter
1/2 cup 2% reduced-fat milk
4 medium baking apples (such as Rome, Ida Red or Cortland), peeled and cored
6 tablespoons granulated sugar, divided
1 1/2 tablespoons ground cinnamon
1/2 teaspoon ground nutmeg
1/3 cup dried cranberries (optional)
Syrup:
1 cup granulated sugar
1 1/2 cups water
1/4 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg

Steps:

  • 1. Preheat oven to 375F. 2. To prepare dumplings, combine flour, baking powder and salt in a large bowl. Cut in butter, using your hands, until mixture resembles coarse crumbs. Pour in milk and stir to form a dough. Add more flour if needed to make dough less sticky. Do not overwork. Divide dough in half. Roll out one half on a floured surface to about 1/4 inch thick. Cut into two 6-inch squares. 2. Cut off top and bottom of each apple to flatten. Rinse in cold water and pat dry with a paper towel. 3. Mix together 4 tablespoons sugar, cinnamon and nutmeg. Place 1 apple in center of each dough square. Fill cores with cranberries and a little sugar mixture. Generously sprinkle half the remaining sugar mixture on apples. Moisten the edges of pastry square with a finger dipped in cool water and bring corners together at the top of the apple. Press edges together to seal and pinch together any tears in the dough around the apple. Repeat with remaining dough and apples. 4. Place all four dumplings in a baking dish, 1 inch apart, and decorate with cut-outs made from leftover dough. 5. Combine syrup ingredients in a medium saucepan. Bring to a boil then remove from heat to cool slightly. Pour around dumplings and sprinkle with remaining 2 tablespoons sugar. Bake 45 minutes, until apples are tender and pastry is nicely browned. If pastry is browning too quickly, place foil over the top for the final 10 to 15 minutes of baking. Serves 4. For filling
2 small tart apples such as Granny Smith (1/2 pound), peeled, cored, and cut into 1/2-inch pieces
1/3 cup raisins
1/3 cup coarse fresh bread crumbs
1/3 cup packed light brown sugar
1 1/2 tablespoons unsalted butter, melted
1/4 teaspoon cinnamon
For dough
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
3 tablespoons granulated sugar plus 1/2 tablespoon for sprinkling
3 tablespoons cold unsalted butter, cut into pieces
2 tablespoons cold vegetable shortening
1/2 cup whole milk plus 1/2 tablespoon for brushing
For syrup
1 1/2 cups unfiltered apple cider
1 cup packed light brown sugar
Accompaniment: vanilla ice cream

Steps:

  • Make filling:
  • Toss together all filling ingredients.
  • Make dough:
  • Preheat oven to 425°F.
  • Sift together flour, baking powder, salt, and 3 tablespoons granulated sugar into a bowl. Blend in butter and shortening with a pastry blender or your fingertips until mixture resembles coarse meal. Add 1/2 cup milk and stir with a fork just until mixture is moistened.
  • Turn out dough onto a floured work surface and gently knead 7 to 8 times, or until a soft dough forms (do not overwork dough, or dumplings will be tough). Roll out dough on a well-floured surface with a floured rolling pin into a rough 16- by 11-inch rectangle (about 3/4 inch thick). Trim to a 15- by 10-inch rectangle. Halve dough lengthwise, then cut crosswise in thirds (to form 6 squares).
  • Fill dumplings:
  • Divide filling among centers of squares. Bring all 4 corners together over filling and pinch together to seal. Transfer dumplings to a well-buttered 13- by 9- by 2-inch ceramic or glass baking dish and arrange about 1 inch apart. Brush tops with remaining 1/2 tablespoon milk and sprinkle with remaining 1/2 tablespoon granulated sugar.
  • Make syrup and bake dumplings:
  • Bring cider and brown sugar to a boil, stirring until sugar is dissolved.
  • Pour syrup around dumplings, then bake dumplings until golden brown and syrup is bubbling, 20 to 25 minutes. Serve immediately.
