5 pounds red potatoes, peeled and cut into 1/2-inch cubes
1 pound sliced bacon, diced
8 hard-boiled large eggs, chopped
1 large onion, chopped
1/2 teaspoon salt
1/2 teaspoon pepper
1-1/2 cups mayonnaise
3 tablespoons cider vinegar
2 tablespoons Worcestershire sauce
1 pound process cheese (Velveeta), cubed

Steps:

  • Place potatoes in a Dutch oven and cover with water. Bring to a boil. Reduce heat; cover and cook for 10-15 minutes or until tender. Drain., In a skillet, cook bacon over medium heat until crisp. Using a slotted spoon, remove to paper towels; drain, reserving 1 tablespoon drippings., In a large bowl, gently toss the potatoes, bacon, eggs, onion, salt and pepper. Combine the mayonnaise, vinegar, Worcestershire sauce and reserved bacon drippings; add to potato mixture and toss to coat., Divide half of the mixture between one greased 13x9-in. baking dish and one 9-in. square baking dish. Top with half of the cheese cubes. Repeat layers. Bake, uncovered, at 350° for 40-45 minutes or until golden brown and bubbly.

In northeastern Ohio, we love German flavors. This delicious casserole is a trifecta mashup of my favorite dishes. It combines the flavors of classic cheesy hash brown casserole with bratwursts and sauerkraut, pretzels and beer cheese. It takes less than 10 minutes to mix and takes only one bowl. 2 cans (10-1/2 ounces each) condensed cheddar cheese soup, undiluted
1 cup beer or chicken broth
1 cup sour cream
1 package (32 ounces) frozen cubed hash brown potatoes, thawed
1 package (14 ounces) fully cooked bratwurst links, chopped
1 can (14 ounces) sauerkraut, rinsed and well drained
2 cups shredded cheddar cheese
2 cups pretzel pieces

Steps:

  • Preheat oven to 350°. In a large bowl, whisk soup, beer and sour cream until combined. Stir in potatoes, sauerkraut, cheese and chopped bratwurst. Transfer to a greased 13x9-in. baking dish. Cover and bake for 45 minutes., Uncover; bake 30 minutes. Top with pretzel pieces. Bake until bubbly and heated through, 12-15 minutes longer. Let stand 10 minutes before serving., Freeze option: Freeze cooled potato mixture in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally; add broth or water if necessary.

1 (20 ounce) package Simply Potatoes Diced Potatoes with Onion
1 (10 ounce) can cream of chicken soup
1 pint dean's French onion dip or 16 ounces French onion dip
2 cups shredded cheddar cheese
1 (10 ounce) bag potato chips (once home, smash into bits in bag)

Steps:

  • Preheat oven to 350 degrees.
  • Spray non stick cooking spray on bottom and sides of large casserole dish or casserole pan.
  • Empty and mix all ingredients ( except potato chips ) directly into the casserole dish/pan and spread evenly.
  • Cover with foil and bake 30 minutes until dish starts to bubble at sides.
  • Remove foil and cover casserole with small smashed bits of potato chips.
  • Resume cooking uncovered for 15 minutes more.

1 (20 ounce) package Simply Potatoes Diced Potatoes with Onion
1 (1 lb) package beer bratwurst (uncooked)
1 (14 ounce) can sauerkraut, drained
1/4 cup honey dijon mustard
2 cups swiss cheese, shredded

Steps:

  • Preheat oven to 350 degrees.
  • Coat 13 x 9 inch baking dish with cooking spray.
  • Cook Simply Potatoes according to package directions. Set aside.
  • Remove casing from beer bratwurst, cook in skillet, breaking up in small pieces as it cooks. Remove bratwurst from skillet onto a paper towel.
  • In a small bowl, blend honey dijon mustard into sauerkraut.
  • Evenly layer potatoes, then bratwurst, then sauerkraut in baking dish. Sprinkle cheese on top.
  • Bake for 25 to 30 minutes, until cheese is melted and browned.
  • Remove from oven and cool for 10 minutes before serving.
