1/4 cup olive oil
1 large sweet onion, rough chopped
1 large tomatoes, chopped
3 garlic cloves, crushed
1 tablespoon italian seasoning
1 bell pepper, chopped
8 -10 okra pods (or 1/2 bag frozen okra, about)

Steps:

  • Cook the onions in the oil until tender.
  • Add the tomatoes, garlic and spice mix; simmer about 5-8 minutes to blend the flavors.
  • Wait till the last minute to first wash, then dry and cut the okra (about 1/4 inch) to help prevent bleeding.
  • Add the okra and peppers to the pot, cover and simmer until the okra is tender.
  • For a main dish, add smoked sausage, or cubed, cooked chicken or pork and serve over rice.
  • This is also excellent with black beans mixed in!

My husband, Charles, came up with this recipe. Pair it with a crispy pan of hot corn bread and you have a wonderful healthy meal.

1 medium onion, chopped
2 tablespoons butter
2 cups sliced fresh okra
3 to 4 medium tomatoes, peeled and chopped
2 cups frozen corn
1 teaspoon sugar
1 teaspoon salt
1/4 teaspoon pepper

Steps:

  • In a large saucepan, saute onion in butter until tender. Add okra; cook and stir for 5 minutes. Stir in the remaining ingredients; bring to a boil. Reduce heat; cover and simmer for 10-15 minutes or until corn is tender.

3 cups corn kernels
2 cups okra
1/4 cup chopped yellow sweet onion
1 -4 small sweet pepper, red & green chopped and seeded
2 tablespoons margarine
salt & pepper
1 chopped medium tomatoes

Steps:

  • Mix all ingredients, except tomato in large frying pan. Stir on medium heat till color turns to deep yellow on corn. (This is a good hint to test cooking time ).
  • Now, keeping stirring and add chopped tomato. Cook a few more minutes and serve hot !

1 pound fresh okra, sliced crosswise
1 pound frozen whole kernel corn, thawed
1/2 cup chopped red bell pepper
1/4 teaspoon salt
1/8 teaspoon pepper

  • 1. In large nonstick skillet, cook bacon until crisp. Remove bacon from skillet crumble. Set aside.2. Drain all but 1 tablespoon bacon drippings from skillet, or drain off all drippings and add 1/4 cup water to skillet. Add okra cook over medium heat for 4 to 6 minutes or until crisp-tender, stirring frequently.3.
