1 tbsp vegetable oil
1 pound boneless beef sirloin steak cut into 1/2-inch chunks
1 medium onion chopped
1 medium red bell pepper chopped
1 can (16 oz) black beans drained and rinsed
1 can (14 1/2 oz) diced tomatoes drained
1 package McCormick® Chili Seasoning Mix, Original
1 package (8 oz) processed cheese product cubed

Steps:

  • Heat oil in large skillet on medium-high heat. Add beef; cook 4 minutes or until browned on all sides. Remove from skillet.
  • Stir onion and bell pepper into same skillet; cook and stir 3 minutes or until tender. Stir in beans, tomatoes and Seasoning Mix. Bring to boil, stirring occasionally.
  • Return beef to skillet. Reduce heat to low; cover and simmer 15 minutes. Add cheese; cook and stir 5 minutes longer or until beef is tender and cheese is melted.

I love this Chili. It started as plain, by the time I got done, WOW is all I can say. Can be doubled to feed more. Please note that the Rotel can be left out for those who would rather not go up in flames

1 lb hamburger
1 lb beef stew meat
2 small shallots
1 can(s) green chilis {4-6 oz}
1 can(s) rotel original diced tomatoes {10oz}
2 can(s) hunt's tomato sauce {8oz}
1 can(s) texas style beans {15oz}
1 Tbsp corn
1 small onion
1 can(s) fire roasted tomatoes {14 1/2oz}

Steps:

  • 1. cut stew meat down into smaller sizes, brown with hamburger until no longer pink in large size skillet
  • 2. dice both shallotts. In small skillet brown shallots with a small bit of butter til clear or lightly brown, add to meat.
  • 3. empty can of Texas syle beans & Rotel into colander & rinse in cold water for about a minute, add to meat mix
  • 4. to meat mix, add tomato sauce, green chilis, can of fire roasted tomatoes & corn, mix well & simmer uncovered for about 7 minutes. Serve, top with cheese & extra onion.

1 lb jimmy dean hot sausage
1/2 cup onion, chopped fine
2 lbs Velveeta cheese
2 (8 ounce) cans Rotel Tomatoes

Steps:

  • Brown meat, sausage and onion.
  • Drain.
  • In large crock pot, combine cubed Velveeta, Rotel tomatoes and meat.
  • Cook on high for 1-2 hours or until melted.
  • Put on low to serve.
  • Stir occasionally while melting and while serving.
  • Serve with tortilla chips or Fritos.
