For the first time in my 67 years, I asked for a recipe after being served this salad. There aren't words to describe how good it is!!!! I took 1 bite and said, "Oh my gosh!!!! I have to have this recipe!!!!! I went straight to the store and bought the ingredients! The other people at this meeting ALL asked for the recipe! This could easily be a dessert as well! Keep in mind, it needs to cool for 24 hours, and a metal bowl will help keep it cool.

Number Of Ingredients 10

2 - eggs
1/2 pint(s) whipping cream
2 tablespoon(s) butter
1/2 cup(s) sugar
1 cup(s) small marshmallows
1 can(s) mandarian orange slices (15 oz.)
1 - lemon (juice of 1 lemon) or 3 tbs lemon juice
1 cup(s) maraschino cherries
1 cup(s) white grapes
pinch(es) salt

Steps:

  • Place eggs, sugar, salt and lemon juice in pan. Beat until well mixed. Place pan over low flame. Stir constantly until mixture becomes thick. Mix in butter and put pan in a cool place until the custard mixture is completely cool.
  • While the custard is cooling, cut up the grapes, maraschino cherries and Mandarian Oranges.
  • Whip the whipping cream until peaks form. Fold in the lemon custard, fruit and marshmallows. Mix well. Put in a metal bowl, cover and place in the coolest part of the refrigerator for 24 hours.

These muffins are delicious -- they are my uncle's recipe. Since I was born until I was ten or eleven I would have one of these muffins with breakfast every morning. They have just the perfect amount of everything, light and sweet. Then I learned to bake them myself and have been ever since. It's also a good way to use up bananas that are somewhat past their best days.

½ cup butter, softened
1 ½ cups sugar
1 teaspoon vanilla extract
1 cup mashed banana
¼ cup sour cream
2 eggs, lightly beaten
2 cups all-purpose flour
1 ½ teaspoons baking powder
½ teaspoon baking soda
1 cup semisweet chocolate chips

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease 24 muffin cups.
  • In a bowl, cream together the butter, sugar, and vanilla. Mix in banana and sour cream. Stir in the eggs. In a separate bowl, mix the flour, baking powder, and baking soda. Mix dry ingredients into the banana mixture until evenly moist. Fold in chocolate chips. Transfer batter to the prepared muffin cups, filling each cup about 3/4 full.
  • Bake 25 minutes in the preheated oven, or until a knife inserted in the center of a muffin comes out clean.
