- Preheat oven to 350°. In a large bowl, cream butter and sugars until light and fluffy. Beat in eggs. Combine flour, baking soda and pie spice; gradually add to creamed mixture and mix well. Stir in oats and raisins., Drop by tablespoonfuls 2 in. apart onto greased baking sheets. , Flatten slightly. Bake 13-15 minutes or until golden brown. Cool 5 minutes before removing to wire racks. Store in an airtight container.

GLUTEN FREE SURPRISE OATMEAL CHIP COOKIES
My family has several favorite homemade cookies that we all enjoy. One night I was in the mood to make cookies, I wanted oatmeal raisin, the kids wanted chocolate chip, and the husband wanted peanut butter chocolate chip. So how do I choose? Thats easy... make one cookie to please everyone. Thats just what I did. Because it's what I do.

- Pre-heat oven to 350 degrees F. In a large mixing bowl, cream together butter, peanut butter, sugar, & brown sugar. Add eggs, one at a time. Beat in vanilla.
- In a large bowl, combine gluten free flour, oats, nutmeg, xanthan gum, and baking soda. Mix together. ** will post link to my all purpose gluten free flour mixture below in comments.
- Add dry mixture to creamed sugar mixture and mix well. About 3 minutes. Be sure to scrape down sides of bowl. Fold in milk chocolate chips.
- Line cookie sheet with wax or parchment paper. Drop by tablespoon, or use a cookie scoop to drop in one inch balls on cookie sheet, about two inches apart. Flatten dough with a fork to about a quarter inch thick.
- Bake at 350 degrees F for 10-12 minutes, or until golden brown. Cookies will be soft inside, crispy outside. Let cookies stand for 2 minutes on cookie sheet, then remove to wire rack and allow to cool. Or eat warm... thats the best!

- 1. Preheat oven to 350 degrees. Prepare cookie sheet with parchment paper.
- 2. Combine flour, oats, cinnamon, salt, protein powder and baking soda in medium bowl, blend, and set aside.
- 3. In a large bowl, cream the sugars and the butter together. Add the eggs, lemon juice and vanilla.
- 4. Stir in the dry ingredients with the wet until well blended. Add the raisins, cranberries, chocolate chips and walnuts.
- 5. Form balls approximately 1 inch in diameter and place on cookie sheet. Bake for 10-12 minutes. Cool on wire rack, and serve when ready.
IRRESISTABLE OATMEAL "SURPRISE" COOKIES
Steps:
- Heat oven to 350 degrees. Sift together flour and baking soda and set aside. In the bowl of an electric mixer fitted with the paddle attachment, cream butter and both sugars on med-high speed until light and fluffy, 2-3 min. Scrape down the sides of the bowl once or twice during mixing. Add egg, and mix on high speed to combine. Add vanilla extract, mix to combine. Scrape down the sides of the bowl. Add the sifted flour a bit at a time on a low speed until well combined. Add oatmeal, cherries, chocolate, and toffee; mix to combine. Divide dough into three equal portions, and roll into logs using plastic wrap, approx. 1 1/2 inches in diameter. To bake, cut logs into 3/4 inch pieces. Bake on parchment-lines baking sheets, until golden brown, 8-10 minutes. Remove from oven, and transfer to a baking rack to cool.
SURPRISE OATMEAL COOKIES

- Beat eggs till well blended. Stir oil into eggs; blend in sugar till mixture thickens.
- Stir in the molasses.
- Sift flour, baking powder and salt together. Add to egg mixture with the oats and gumdrops.
- Mix until well blended.
- Drop a teaspoon at a time, 2 inches apart, on a greased cookie sheet.
- Sprinkle a very small amount of sugar on each cookie.
