2 large eggs
1/2 cup sugar
1/2 cup packed brown sugar
3/4 cup corn syrup
1/2 cup whole milk
1/4 cup butter, melted
1 teaspoon vanilla extract
Dash salt
2 cups pecan halves
3/4 cup quick-cooking oats
1/2 cup sweetened shredded coconut
1 unbaked pastry shell (9 inches)

Steps:

  • In a large bowl, whisk the eggs and sugars. Gradually whisk in the corn syrup, milk, butter, vanilla and salt. Stir in pecans, oats and coconut. Pour into pastry shell., Bake at 350° for 45-50 minutes or until a knife inserted in the center comes out clean (cover edges loosely with foil if necessary to prevent overbrowning). Cool on a wire rack.

0.5 (15 ounce) package refrigerated pie dough
cooking spray
1 cup packed dark brown sugar
1 cup light corn syrup
1 cup oats
2 tablespoons butter, melted
1 teaspoon vanilla
1/4 teaspoon salt
2 large eggs, lightly beaten
2 large egg whites, lightly beaten
1 cup semi-sweet chocolate chips
1 cup chopped pecans

Steps:

  • Preheat oven to 325°F
  • Roll dough into a 11" circle; fit into a 9" pie plate, light sprayed with cooking oil. Fold edges under and flute.
  • Combine brown sugar and all ingredients (EXCEPT PECANS AND CHOCOLATE CHIPS, stirring well with a whisk.
  • Pour into prepared crust and sprinkle with nuts and chocolate chips.
  • Bake for 30 minutes or until center is set. Cool completely on wire rack.
  • Serve with whipped topping or ice cream.

2 cup(s) flour
1/4 cup(s) oatmeal, uncooked
1/4 cup(s) pecans, toasted
1 cup(s) sugar
1 large egg yolk
2 teaspoon(s) pure vanilla extract
1 cup(s) butter, unsalted, diced
PEACH FILLING
6 large peaches, peeled & sliced
1 cup(s) sugar
1/4 cup(s) bourbon
2 tablespoon(s) cornstarch
2 teaspoon(s) cinnamon, ground
1 teaspoon(s) ginger powder
2 tablespoon(s) butter, unsalted
1 quart(s) high quality ice cream

Steps:

  • For Crust: in food processor, combine the flour, oatmeal, pecans and sugar. with the motor running, add the egg yolk, vanilla,and butter through the feed tube and process until a dough forms on top of the blades.Cut the dough in half. On a well floured board, roll the dough out into two 10 inch circles. set aside.(the dough can be prepared ahead of time. roll into ball and wrap with plastic wrap and refrigerate for up to 4 days or freeze up to 6 months.
  • Filling: Preheat oven to 425*, place peaches in a bowl. Add the sugar, bourbon, cornstarch, cinnamon and ginger. mix well.Place one circle of dough in a 9 in. pie plate, and top with filling. Dot with butter. lay the top crust over the filling and crimp the edges. Bake for 15 minutes. LOWER, the heat to 350* and bake 25 to 30 minutes longer or until golden brown. Let cool for about 15 minutes. Serve warm with vanilla ice cream

1 cup mashed cooked sweet potato (1 medium sweet potato)
1 cup unsweetened almond milk or other milk of your choice
1 large egg
1/4 cup pure maple syrup
2 teaspoons pure vanilla extract
1 1/2 cups rolled oats
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground ginger
1/4 teaspoon fine-grain sea salt
1/2 cup chopped raw pecans
2 tablespoons dark brown sugar
2 tablespoons white whole wheat flour or all-purpose flour (or substitute your favorite gluten-free blend)
1 tablespoon coconut oil (Earth Balance butter, or butter, cut into small pieces)

Steps:

  • Preheat oven to 375 degrees Fahrenheit. Grease a standard-sized pie pan or coat with non-stick spray.
  • Add sweet potato to a large bowl. Mash until as smooth as possible. Add milk, egg, maple syrup, and vanilla. Stir with a whisk until well-combined. Add the oats, cinnamon, nutmeg, ginger, and salt. Stir with a wooden spoon until combined. Pour into pie plate and smooth slightly with the spoon.
  • Make the streusel topping. Add the pecans, brown sugar, and flour to a small bowl. Add the coconut oil or butter. Use your fingers to distribute the oil or butter throughout the mix until the butter pieces are approximately sunflower-seed-sized. Distribute topping over the top of the oatmeal mix.
  • Bake until the nuts are toasted and the oatmeal is no longer jiggly, about 35 minutes.
  • Serve with an extra drizzle of maple syrup if desired. You can also add a dollop of coconut whipping cream or whipping cream and/or a sprinkle of cinnamon if you wish.

4 eggs
1 1/4 cups sugar
1/2 cup plus 2 tablespoons butter (melted and cooled)
3/4 cup light corn syrup
1 teaspoon vanilla
1 1/2 cups pretzels (crushed)
3 tablespoons butter, melted
2 tablespoons sugar
1 deep dish pie shell, unbaked

Steps:

  • .
  • Beat eggs and add sugar, butter, corn syrup and vanilla. Mix well.
  • Pour into unbaked pie shell.
  • Set aside.
  • Pretzels, butter and sugar are ingredients for topping.
  • Place pretzels in a plastic and crush using a rolling pin. DO NOT PULVARIZE.
  • Mix melted butter and sugar in a mixing bowl.
  • Empty crushed pretzels into bowl with butter and sugar and mix well to coat pretzels.
  • Put pretzel mixture on top of pie filling.
  • Bake at 350 degrees for 1 hour.
  • Cool before slicing.
  • NOTE: Buy twisted pretzels rather than straight. (twisted pretzels more closely resemble chopped pecans).
  • Margarine may be used instead of butter but taste will not be as good.

Cooking Spray
1 Cup packed Dark Brown Sugar + 2 tbsp. for topping. (You can use a Splenda blend for even fewer calories.)
1 Cup Light Corn Syrup
2/3 Cup of Regular Rolled Oats + 2 tbsp. for topping. (You can use instant, but I prefer the rolled oats for chewier bites!)
1/2 Cup Chopped Pecans + 2 tbsp. for topping. (I add additional 1/4 cup for more nuttier nibbles!) + Whole pecans for decoration.
2 tablespoons Butter, melted
1 Teaspoon Pure Organic Vanilla Extract
1/4 Teaspoon of Salt
2 Large Eggs, lightly beaten
2 Large Egg Whites, lightly beaten

Steps:

  • 1) Preheat oven to 325 degrees. 2) Roll dough into an 11-inch circle; fit into 9-inch pie plate coated in cooking spray. (Be sure to coat the edges, since the dough/filling rises.) Fold edges under and flute. OR, use frozen ready made pie crust. 3) Combine brown sugar and remaining ingredients, stirring well with a whisk. Pour into prepared crust. 4) Bake at 325 degrees for 50 minutes or until center is set. (I always bake for 60-70 minutes, since I don't like runny fillings.) **Fifteen minutes before the end of baking, I pull the pie and sprinkle the top with 2 additional tablespoons of brown sugar/oats/pecans for crispy crumble; then decorate with a few whole pecans, and return to oven for the last 15 minutes of baking. 5) Cool completely on a wire rack. (You can make this pie up to a day ahead, but store in the refrigerator.) Easy as Pie! Enjoy!!
