My Mom was a fan of mincemeat... pie or cookies, either one. If you are, too, here's a nice old fashioned oatmeal cookie recipe for you that has mincemeat in it. If I remember correctly, she used "None Such" brand. Modern mincemeat does not usually have any meat in it, but it is a flavor you either love.... or not. This one is...

1 1/4 c sifted flour
3/4 tsp baking soda
1/2 tsp salt
1/2 c butter
1 c brown sugar, firmly packed
1 whole egg
1 1/3 c mince meat
1 1/2 c rolled oats (not instant)

Steps:

  • 1. Sift the flour, soda, and salt (set aside)
  • 2. Cream the butter, gradually add the sugar, beat until fluffy
  • 3. Beat in the egg, stir in the mincemeat
  • 4. Gradually add the flour mixture, blending well
  • 5. Stir in the oats
  • 6. Drop by teaspoonfuls on greased cookie sheet about 2 inches apart (they spread)
  • 7. Bake until lightly browned, 350 F, 15 minutes

Number Of Ingredients 9

1/2 cup Butter Flavor Crisco (or 1/2 stick of Butter Flavor Crisco)
1 cup firmly packed brown sugar
1 egg
1 1/3 cups prepared mincemeat
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup quick oats (not instant or old fashioned)
1/2 cup coarsely chopped walnuts (optional)

Steps:

  • Heat oven to 350 degrees. Grease baking sheet with shortening. Place sheets of foil on countertop for cooling cookies.
  • Combine 1/2 cup shortening, sugar and egg in large bowl. Beat at medium speed of electric mixer until well blended. Beat in mincemeat.
  • Combine flour, baking soda and salt. Mix into creamed mixture at low speed until blended. Stir in oats and nuts with spoon.
  • Drop rounded tablespoonfuls of dough 2 inces apart onto prepared baking sheet.
  • Bake at 350 degrees for 12 minutes, or until set and lightly browned around edges. DO NOT OVERBAKE! Cool 2 minutes on baking sheet. Remove cookies to foil to cool completely.
