Made these for my daughter one day. She likes them more than store-bought ones, and I like knowing what she's eating.

1 ½ cups rolled oats
1 cup whole wheat flour
½ teaspoon salt
1 tablespoon white sugar
1 teaspoon ground cinnamon
½ cup water
5 tablespoons olive oil

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a baking sheet.
  • Place the rolled oats into a blender or the work bowl of a food processor, and pulse several times to grind them into coarse flour. Stir the oat flour together with whole wheat flour, salt, sugar, and cinnamon in a bowl. Pour in the water and olive oil, and mix to form a soft dough. Place the dough onto the prepared baking sheet, and roll out 1/8-inch thick. Using a knife, partially slice through the dough in desired shapes.
  • Bake in the preheated oven until just barely brown, 10 to 15 minutes. Watch carefully, as they burn easily. Allow to cool completely on baking sheet before breaking along score lines into individual crackers.

"When I was a child, we kids helped Mom cut these crispy crackers into all sorts of shapes," recalls Bob Dittmar of Trout Run, Pennsylvania. "They're not too sweet, but sweet enough that we always wanted more."

2 cups sugar
2 cups old-fashioned oats
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup shortening
1/2 cup hot water
1 tablespoon vanilla extract
2 to 2-1/2 cups all-purpose flour

Steps:

  • In a bowl, combine sugar, oats, baking soda and salt. Cut in shortening until crumbly. Add water and vanilla; stir until blended. Add enough flour to form a stiff dough. On a lightly floured surface, roll dough to 1/8-in. thickness. Cut into rectangles or use cookie cutters dipped in flour. Using a floured spatula, transfer to greased baking sheets. Bake at 350° for 8-10 minutes or until lightly browned. Cool on wire racks.

3 cups quick oats
2 cups whole wheat flour
1/2 cup cornflour
1/2 cup wheat germ or 1/2 cup rice germ
1 teaspoon salt
3 tablespoons brown sugar
3/4 cup oil
1 cup water

Steps:

  • Combine all dry ingredients.
  • Blend (in a blender works best) the oil and water.
  • Add to the dry ingredients.
  • Roll out on pastry or wax paper.
  • Place on cookie sheet (can be ungreased).
  • Score into squares and texturize with fork.
  • Bake at 350 F for 20 minutes.

2/3 cup (150 mL) oat bran or oatmeal
11/3 cups (325 mL) whole-wheat flour
2 level teaspoons (10 mL) baking powder
1 teaspoon (5 mL) dried mustard powder
1/2 teaspoon (2 mL) freshly ground black pepper
1 teaspoon (5 mL) sea salt
1 stick unsalted butter, diced and chilled
2 level tablespoons (30 mL) golden superfine sugar
3 tablespoons (45 mL) milk All-purpose flour, for rolling

Steps:

  • Sift the oat bran, flour, baking powder, mustard powder, pepper and salt into a large bowl and add any bran left in the sifter. Pour into the bowl of a food processor and add the diced butter and super-fine sugar. Using the pulse button, process the mixture until the butter has been rubbed into the flour. Add the milk and pulse again until the mixture comes together to form a dough. Place dough on a flour-dusted work surface and knead very lightly and just enough to bring together. Cover with a clean cloth and set aside for 15 minutes. Meanwhile, preheat the oven to 350 degrees F (180C) and line two baking sheets with non-stick parchment paper. Lightly flour the work surface again, then roll the dough to about 1/4-inch (6 mm) thickness and cut out shapes, using a cookie cutter. Reroll any trimmings. Prick the crackers with a fork, arrange on the prepared baking sheets and bake on the middle rack of the preheated oven for about 12 minutes, or until starting to turn golden at the edges. You may need to swap the baking sheets around halfway through cooking. Cool the crackers on the baking sheets for two minutes, then transfer them to a wire cooling rack.
