2 cups old fashioned oats
1 1/2 cups white whole wheat flour
1 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg

2/3 cup raisins, seedless
1 egg (large)
3 tablespoons canola oil
3/4 cup unsweetened applesauce
1 1/2 teaspoons vanilla extract
1/3 cup brown sugar
1/3 cup Splenda sugar substitute

Steps:

  • Preheat oven to 350 degrees F. Lightly spray a cookie sheet with cooking spray.
  • In a large bowl, combine flour, baking soda, oats, cinnamon, salt, and nutmeg. Toss with raisins.
  • In a medium bowl, cream together egg, applesauce, canola oil, vanilla, and the sugars. Whisk to blend thoroughly.
  • Fold egg-sugar mixture into flour-oat mixture, 1/3 at a time, mixing well.
  • Drop by the tablespoonful onto prepared cookie sheet, about 2 inches apart.
  • Bake for 12 to 15 minutes until golden brown.
  • Using a metal spatula, transfer cookies to a cooling rack.
  • When cool, store in an airtight container.

Steps:

1 cup whole wheat pastry flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 tablespoons butter
1/2 cup sugar
1/2 cup light brown sugar

Steps:

  • Heat the oven to 375°F Lightly grease cooking sheet.
  • In a large bowl combine the flour, baking powder, baking soda and salt.
  • In the bowl of an electric mixer, cream the butter and both sugars together. Beat until smooth, about 1 minute. Add the applesauce, egg and vanilla and mix until blended about 2 minutes. Add the flour to the applesauce mixture and mix well. Remove the bowl from the mixer and stir in the oats and raisins.
  • Drop rounded teaspoonfuls onto the prepared baking sheets about two inches apart.
  • Bake until slightly golden, about 10 to 12 minutes.
  • Remove the baking sheets from the oven and cool on wire racks for 5 minutes. Remove the cookies and cool completely.

In 2005 I had back surgery. My Mom came for a week to watch the kids/take care of the house. She made these for the boys and they devoured them she said. I don't know how many these make. I know at least 3 dozen - so that is the amount I will put. Okay - I have tried at least 2 different times to edit this recipe on the directions. More than one person has wanted to make it so I will finish the directions here! :) Basically - mix all ingredients very well in large bowl. Drop by teaspoons onto greased cookie sheets. Bake at 375 degrees for 11 minutes. If you like them crunchy - let them bake a bit longer. Enjoy!

They're sweet, chewy, and just plain GOOD!, and because they're made with whole grains, honey and fruit -- no refined anything -- my dessert-loving brothers and sister can have as much as they want! (Well, within reason, of course.) Oh, and they're egg- and lactose free. :-) I bake these on a Pampered Chef baking stone, so the cooking time will probably be less if you use a regular metal baking sheet. This recipe is the result of playing around with MartiniQueeni's Ginger Oat Cookies -- they're definitely different enough to claim as my own recipe, but a lot of the ingredients and proportions are similar. So if you like these cookies, try hers too!

This is my healthy oatmeal cookie recipe that I used to make for my kids. We called them "Cookie Monster Cookies." Look for the non-instant nonfat dry milk powder. I use Sanalac. In my area, Kroger carries it. Nestle also makes a whole milk powder that you may find in your grocery store's Mexican section.

Steps:

  • Cornell Flour Formula 1 tablespoon soy flour 1 tablespoon nonfat dry milk powder (Not the instant granules) 1 teaspoon wheat germ Measure soy flour, nonfat dry milk and wheat germ into the bottom of a measuring cup before measuring each cup of flour in any bread recipe. The addition of these ingredients improves and enriches bread greatly. This formula can also be used with cakes and cookies.
  • Cookies 3/4 cup applesauce 3/4 cup butter, softened 1 cup brown sugar 1 egg 1 teaspoon vanilla 1/4 cup water or apple juice 2 cups flour (see Cornell Flour Formula) 1-1/2 cups oatmeal 1/2 teaspoon salt 1 teaspoon baking soda 1 cup raisins
  • Preheat oven to 350 degrees. Whisk dry ingredients together.
  • Mix together applesauce, brown sugar, butter, vanilla, and egg with electric mixer.
  • Add remaining ingredients (except raisins) and mix until combined. Fold in raisins with a rubber spatula.
  • Scoop by heaping spoonfuls onto a greased cookie sheet. (I use a melon baller to scoop up the dough.) Bake for 12-15 minutes (until golden).
