Steps:
- Bring milk almost to a simmer. Place oatmeal and dates in a large mixing bowl and add milk. Set aside to cool to room temperature. In another bowl, whisk together flour, baking powder, salt and sugar. When oat mixture is cool, beat in egg. Stir in dry ingredients, mixing well.
- Pour batter into a buttered 9x5 inch loaf pan. Bake at 325 degrees for 45-50 minutes or until the top is crusty and golden. Cool before slicing.

MOIST DATE NUT BREAD
A moist not too sweet version of a figgy pudding but made with dates and minus the spices. You could try covering with buttered foil and steaming it for a even moister version. This can also be baked in a (28 ounce) can.

- Preheat the oven to 350 degrees F (175 degrees F). Grease and flour a 9x5 inch loaf pan.
- In a medium bowl, combine the dates and butter. Pour boiling water over them, and let stand until cool.
- When the dates have cooled, stir the mixture to break up any clumps. Mix in the brown sugar and egg until well blended. Combine the flour, baking soda, baking powder, and salt; stir into the date mixture until just blended. Stir in walnuts. Pour into the prepared pan.
- Bake for 50 minutes in the preheated oven, or until a wooden pick inserted into the center comes out clean.

A light, high volume bread machine bread. It works well when you use the Dough selection, and allow the bread to rise in a bread pan.

Steps:
- Place ingredients in the pan of the bread machine in the order suggested by the manufacturer. Select the Dough setting, and Start.
- After the dough has risen once, remove it from the machine. Knead it a few times, and then shape into a loaf. Place in a greased 9 x 5 inch loaf pan. Allow to rise until doubled in bulk.
- Bake at 350 degrees F (175 degrees C) for 35 to 40 minutes, or until done.
- Alternatively, choose the Basic or White Bread setting, and Start.

I was a novice at break making when a neighbor gave me this recipe 15 years ago. Now bread making is one of my favorite things to do. This recipe won a blue ribbon at the Clackamas County Fair in 1993.

- In a large bowl, dissolve yeast in 1/2 cup warm water. Add oil, sugar, molasses, salt, wheat germ, bran and remaining warm water; mix well. Add oats, whole wheat flour and 2 cups all-purpose flour; beat until smooth. Add enough remaining all-purpose flour to form a soft dough. Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. Punch dough down and shape into four loaves. Place in a greased 8x4-in. loaf pans. Cover and let rise until doubled, about 30 minutes. Bake at 350° for 30-35 minutes. Remove from pans and cool on wire racks.

- Grease and flour 9x5-inch loaf pan.
- In a large bowl, pour boiling water over dates or raisins, add soda and let stand for 5 minutes.
- Add natural bran, flour, rolled oats, sugar, baking powder, salt and milk.
- Mix until combined.
- Pour into loaf pan.
- Bake at 350°F for 70-80 minutes or until toothpick inserted in middle comes out clean.

Steps:
- Sift dry ingredients together.
- Dust dates with 1 T flour mixture, then add to the bowl.
- Then add the brown sugar, all bran, and grated lemon peel.
- Combine 3/4 cu buttermilk, 2 beaten eggs, 1/4 cup vegetable oil.
- Add all once to flour mixture with the sourdough starter, stirring until well moistened.
- Pour into greased or waxpaper lined loaf pan about 9 x 5-inches.
- Bake at 350 degrees for 1 hour.
- Allow to stand 10 minutes in pan and then remove from pan and cool until cold.
- Wrap in plastic wrap or foil and place in Refrigerator.
- Use cream cheese or home made butter on this bread for an out of this world taste.

Steps:
- Warm water/ milk to lukewarm temperature.
- Melt shortening.
- Warm mixer bowl with warm water.
- Dissolve yeast in a little water.
- Add water/milk and shortening.
- Add salt and sugar.
- Add flour and bran.
- Stir all ingredients for 30 sec.
- Mix on Speed 2 for 2 minutes or until elastic.
- Dough should be moist. If it looks dry add water as needed but not more than 1/4 cup.
- Place dough in greased bowl and cover.Allow dough to double in size (approx 1 hour).
- Punch down and form into a loaf, allow to rise for 30 minutes.
- Preheat oven to 350 degrees and grease large loaf pan.
- Bake for 40 minutes.
- I used a Kitchen Aid Mixer to mix this dough so if using a different mixer you may need to use different settings.

- Place all ingredients into the bread pan in the following order:.
- water, oil, brown sugar, salt, flour. oatmeal, dates, yeast.
- With your finge make a samll indentation for the yeast so it does not touch the water.
- Carefully insert pan into bread maker. Choose express bake and start.
- Once it is done, carefully run a rubber spatual around the sides to loosen.
- Place on rack to cool. Enjoy!

- Place ingredients in order given in bread pan. Set machine to quick bread/cake cycle, medium crust.
- After batter has mixed for 4 minutes, stir sides and bottom with rubber scraper to ensure complete mixing.
- Just before baking starts, pause machine and remove paddle (if your machine has this feature). When baking is completed, remove bread from machine, put on wire rack to cool. Bread slices best cool. Wrap in plastic wrap to maintain freshness.
