Fat-free, sugar-free, low-calorie, AND vegan!! This recipe came about when I was looking for something a little different to do with some apple pie filling, and for a sugar-free muffin recipe that didn't have any added artificial sweeteners. (Yes, the pie filling is sweetened with Splenda, but that wouldn't affect the texture of the final product the way adding Splenda would.) I used a kitchen scissors to chop the apple slices from the pie filling into smaller pieces. Try to get all of the "goo" from the pie filling in there, too -- don't just throw it out! If you overmix, it will probably be tough; that's why I chose to mix it by hand, though of course you could use an electric mixer if you prefer. I used a jumbo-sized muffin pan, and I got six nice-sized muffins -- for less than 150 calories each!

1/2 cup all-purpose flour
1/2 cup whole wheat flour
1/2 cup oat bran (hot cereal)
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon nutmeg
1/2 teaspoon cinnamon
1 pinch salt
1 cup sugar-free apple pie filling, apples chopped (half of a 20-oz can)
1/2 cup apple juice
1/2 cup applesauce (one 4-oz container)

Steps:

  • Preheat oven to 350.
  • Combine the first eight ingredients (flour through salt) in a bowl and mix to combine.
  • Add the remaining ingredients and stir until just moistened.
  • Spoon batter into paper-lined muffin tins. Bake until a toothpick inserted in the center of a muffin comes out clean, about 30 minutes.

2 1/2 cups uncooked oat bran
2 teaspoons baking powder
1-2 teaspoons salt ((I use 2 teaspoons but some think that's too much. Start with 1 to see how you like it))
2 teaspoons cinnamon ((omit for unsweetened version))
2 eggs or equivalent substitute
3/4 cup filtered water
2/3 cup vegetable glycerine ((omit for unsweetened version--see Recipe Notes for other sweetener options))
2 teaspoons vanilla extract ((omit for unsweetened version))
4 tablespoons coconut oil
1/4 cup nuts ((optional))

Steps:

  • Preheat oven to 425 °F.
  • Mix dry ingredients together and set aside.
  • Mix wet ingredients in a separate bowl.
  • Add wet ingredients to dry ingredients.
  • Let the batter soak overnight or for 24 hours if desired, for better digestibility.
  • Add nuts if using.
  • Put into greased muffin tins (mini or regular size) or for a simpler option (my favorite....cleaning muffin tins is one of my least favorite jobs in the kitchen :-)) simply place on a prepared cookie sheet or baking stone.
  • Bake for 10-20 minutes until the middles are pretty well set.

It is refined sugar free and oil free. For the flour, I used 1/2 cup brown rice flour, 1/2 cup sorghum, 3/4 cup buckwheat and 1/4 cup flax. The original used all oat flour.
