Creamy Beef Noodle Bake is a layered casserole with tomato sauce seasoned ground beef, creamy egg noodles, and shredded cheese. Simple ingredients and It's something the entire family loves!

1 lb ground beef
1 can (15 oz) tomato sauce
½ teaspoon onion powder
½ teaspoon salt
¼ teaspoon pepper
1 package (12 oz) wide egg noodles
3/4 cup sour cream
1 container (16 oz) cottage cheese ((equals 2 cups))
2 cups shredded cheese

Steps:

  • Heat oven to 350°F. Prepare a 9x13 baking dish and spray with cooking spray.
  • Cook the ground beef in a skillet pan, over medium-high heat, until no longer pink. Drain any excess grease.
  • Add the tomato sauce, onion powder, salt, and pepper into the meat. Stir and let it simmer, over medium heat, while the egg noodles cook.
  • Cook the egg noodles according to package directions. Don't forget to add at least 1 teaspoon of salt in with the noodles. * I usually add about 2 teaspoons of kosher salt.
  • In large mixing bowl, stir together the sour cream and cottage cheese.
  • When noodles are done cooking, drain the noodles, but do not rinse. Add the noodles into the mixing bowl with the cottage cheese and stir to coat all the noodles.
  • Pour half the egg noodle mixture into your prepared pan, top with half the ground beef mixture, and then half the shredded cheese. Repeat.
  • Cover with foil and cook for 20 minutes.* If you want those crunchy casserole edges and noodle edges then don't cover with tin foil.

1 lb ground beef
1 onion, chopped
1 green bell pepper, chopped
1 (6 ounce) can tomato paste
1 (8 ounce) can tomato sauce
3/4 cup water
1/2 teaspoon dried Italian seasoning
2 cups elbow macaroni
8 ounces cream cheese, cubed
3/4 cup milk
1/3 cup sour cream
3/4 cup grated parmesan cheese, divided

Steps:

  • Preheat oven to 350 degrees. Brown ground beef, onion and pepper in saucepan. Cook until beef is done. Drain well.
  • Add tomato paste, tomato sauce, water, and dried Italian seasoning and stir well to blend.
  • Let simmer for 10 minutes.
  • Meanwhile, cook elbow macaroni as directed on package. While macaroni is cooking, combine cream cheese and milk in medium bowl. Cook in microwave on medium power for 2-3 minutes, stirring once halfway through cooking. Remove from microwave and stir with wire whisk until sauce is smooth.
  • Drain noodles and add to cream cheese sauce along with sour cream and 1/2 cup Parmesan cheese; stir.
  • In 2 quart casserole dish, place all of cream cheese mixture. Top with all of the ground beef mixture and sprinkle with remaining 1/4 cup Parmesan cheese.
  • Bake at 350 degrees for 20-30 minutes until casserole is bubbly.
  • To freeze, add 1 tablespoons cornstarch to the cream cheese sauce. Prepare casserole as directed, except instead of baking, chill in refrigerator. Wrap well and freeze up to 3 months.
  • To thaw and reheat, thaw casserole overnight in refrigerator.
  • Bake, covered, for 25-35 minutes 5 minutes longer until bubbly.

1 (8 ounce) can tomato sauce
1 teaspoon salt
1/2 teaspoon garlic powder
1/2 teaspoon onion powder

1 cup small curd cottage cheese
1 cup sour cream
1/2 cup minced chives
8 ounces medium egg noodles, cooked and drained
3/4 cup cheddar cheese, shredded

Steps:

  • In a skillet over medium heat, cook beef until no longer pink; drain.
  • Add tomato sauce, salt, garlic powder, onion powder and pepper. Bring to boil.
  • Reduce heat, cover and simmer for 5 minutes.

1 yellow onion, diced
3 cloves garlic, minced
1 pound ground chuck
Kosher salt and freshly ground black pepper
1 tablespoon tomato paste
12 ounces egg noodles
2 1/2 cups beef broth
1 tablespoon grainy mustard
1 teaspoon smoked paprika
A few dashes Worcestershire sauce
1/3 cup sour cream
2 tablespoons heavy cream
2 tablespoons chopped fresh chives

Steps:

  • Heat the butter in a large skillet over medium heat. Add the onion and garlic and cook for 1 minute. Add the ground chuck and sprinkle with salt and pepper. Cook the meat, crumbling as you go, until cooked through, about 5 minutes. Add the tomato paste and cook for about 30 seconds.
  • Add the noodles, broth, 1 cup hot water, the mustard, paprika and Worcestershire sauce. Give a big stir and bring to a simmer. Cover and allow everything to simmer, stirring occasionally and adding up to 1/2 cup more water if necessary, until the pasta is al dente and the sauce has thickened, about 12 minutes. One 15-ounce can tomato sauce
1/2 teaspoon salt
Freshly ground black pepper
8 ounces egg noodles
1/2 cup sour cream
1 1/4 cups small curd cottage cheese
Pinch red pepper flakes
1/2 cup sliced green onions (less to taste)
1 cup grated sharp Cheddar
Crusty French bread, for serving

Steps:

  • Preheat the oven to 350 degrees F.
  • Brown the ground chuck in a large skillet. Drain the fat, and then add the tomato sauce, 1/2 teaspoon salt and plenty of freshly ground black pepper. Stir, and then simmer while you prepare the other ingredients.
  • Cook the egg noodles until al dente. Drain and set aside.
  • In a medium bowl, combine the sour cream and cottage cheese. Add plenty of freshly ground black pepper and a pinch of red pepper flakes. Add to the noodles and stir. Add the green onions and stir.
  • To assemble, add half of the noodles to a baking dish. Top with half the meat mixture, and then sprinkle on half the grated Cheddar. Repeat with noodles, meat and then a final layer of cheese. Bake until all the cheese is melted, about 20 minutes.
  • Serve with crusty French bread.
  • To freeze: Assemble the Sour Cream Noodle Bake in a disposable aluminum oven-proof pan and seal the top of the container with the lid or heavy foil. Seal the edges to prevent freezer burn and place in the freezer.
  • To cook from frozen: Place directly in a 375-degree F oven and bake, covered, for 45 minutes. Remove the lid and bake until lightly brown and bubbly, about 20 minutes more.

This is a great alternative to lasagna. Its fast, easy and yummy, and a perfect weeknight meal. My girls who eat like birds asked for seconds the first time I made it. I knew then it was a keeper. I got this recipe from the taste of home cookbook. I also add other things like onion powder and a little bit of season salt when cooking the beef. Keep in mind this is just the base recipe. You can make it to suit your needs. Lower fat recipe use whole grain pasta, neufatel cheese (instead on regular cream cheese) lite sour cream and so on.Enjoy!
