3 tablespoons butter, divided
2 slices Cheddar cheese

Steps:

  • Preheat a skillet over medium heat.
  • Spread butter on one side of the bread. Place the bread on the skillet, butter-side-down. Top with a slice of cheese.
  • Spread butter on another slice of bread and place it on top of the cheese, butter-side-up, to close the sandwich.
  • Grill the sandwich until the bottom side is lightly browned. Flip it over and grill until the bottom side is brown and the cheese is melted.

Non-stick cooking spray
24 soft caramel candies, unwrapped
3/4 cup toffee peanuts

Steps:

  • Preheat oven to 200 degrees F.
  • Line a jelly roll pan with aluminum foil. Spray foil with cooking spray and place pan in warm oven. Spray a heavy small saucepan with cooking spray. Add caramels and stir over low heat until melted. Stir in toffee peanuts and continue stirring for a couple minutes. Spray a dull knife or metal off-set spatula with cooking spray. Remove pan from oven and then quickly spread caramel-peanut mixture over prepared pan. Cool completely; cover pan with plastic and refrigerate for 30 minutes. Break into bite-size pieces. Store in refrigerator.

3 (3 ounce) packages cream cheese
1/4 cup orange juice, plus
2 tablespoons orange juice
3/4 cup chopped raisins
24 slices nut bread (thin slices)

Steps:

  • Blend the cream cheese with an electric mixer on slow speed for about 1 minute to soften it up.
  • Add the orange juice and raisins to the cream cheese and stir with a spoon to mix.
  • Spread the cream cheese spread on 24 thin nutbread slices to make 12 sandwiches.
  • Make two diagonal slices across each sandwich to make 4 triangular sandwiches.
  • You can trim the breadcrusts off the sandwiches if you like.
