1 tablespoon butter
1 cup chopped pecans
2 tablespoons maple syrup
1/8 teaspoon salt
BEANS:
1/4 cup finely chopped shallots
2 tablespoons butter
2 teaspoons all-purpose flour
1/2 teaspoon grated orange zest
Dash cayenne pepper
1-1/2 pounds fresh green beans, trimmed
2/3 cup reduced-sodium chicken broth
1/3 cup orange juice
1 teaspoon fresh sage or 1/4 teaspoon dried sage leaves
1/4 teaspoon salt
1/8 teaspoon pepper

Steps:

  • In a small heavy skillet, melt butter. Add pecans; cook over medium heat until toasted, about 4 minutes. Add syrup and salt; cook and stir for 2-3 minutes or until pecans are glossy. Spread on foil to cool., Meanwhile, in a large skillet, saute shallots in butter until tender; stir in the flour, orange zest and cayenne. Add the remaining ingredients; cover and cook for 5 minutes. Uncover; cook and stir 4-5 minutes longer or until beans are crisp-tender. Transfer to a serving bowl. Sprinkle with pecans.

1/4 cup maple syrup or 1/4 cup honey
1 tablespoon canola oil or 1 tablespoon olive oil
2 cups cooked and drained green beans
1/2 teaspoon salt (or more if desired)

Steps:

  • combine maple/honey, and oil.
  • Stir beans in mixture to coat thoroughly.
  • Stirring Constantly, heat mixture (medium heat) in non-stick pan (I've tried to oven roast this but it's just too messy that way) until dry.
  • Cooking should not take more than 5 to 7 minutes, tops.
  • Remove from heat and sprinkle lightly with salt.

2 pounds fresh green beans, trimmed
1 tablespoon olive oil, or as needed
1 teaspoon kosher salt
½ teaspoon freshly ground black pepper

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Pat green beans dry with paper towels if necessary; spread onto a jellyroll pan. Drizzle with olive oil and sprinkle with salt and pepper. Use your fingers to coat beans evenly with olive oil and spread them out so they don't overlap.
  • Roast in the preheated oven until beans are slightly shriveled and have brown spots, 20 to 25 minutes.

These sweet-savory beans with 2 kinds of mustard and maple syrup are a dressed up _Sunday dinner_ version of one of my favorite sides, roasted green beans. Recipe adapted from Cook's Illustrated.

1 tablespoon maple syrup
1 tablespoon Dijon mustard
1 tablespoon grainy mustard
1 pinch cayenne pepper
1 lb fresh green beans, stems snapped off
2 carrots, peeled and cut into matchsticks
1 tablespoon vegetable oil
salt
1 tablespoon fresh minced parsley

Steps:

  • Preheat oven to 450 degrees F. Line a baking sheet with foil.
  • Combine the maple syrup, mustards and cayenne in a small bowl and set aside.
  • Place green beans and carrots on baking sheet. Drizzle with oil and toss with hands to coat evenly. Sprinkle with salt, toss to coat. Distribute in an even layer.
  • Roast for 10 minutes. Remove from oven. Drizzle with syrup/mustard mixture and using tongs, toss to coat evenly.
  • Return to oven and continue roasting until beans and carrots are dark golden brown in spots and beans are beginning to shrivel, 10-12 minutes longer.
  • Remove from oven, season with a little more salt to taste. Transfer to serving dish and garnish with parsley.

2 pounds fresh green beans, washed and trimmed
2 tablespoons butter
1 cup chopped walnuts
2 tablespoons walnut oil
2 tablespoons minced fresh parsley
ground black pepper to taste
salt to taste

Steps:

  • Place the walnuts on an ungreased baking sheet. Bake at 350 degrees F (175 degrees C) for 5 to 8 minutes.
  • Cook beans in large pot of boiling salted water until just tender, about 5 minutes. Drain. Rinse beans with cold water, and drain well. Can be prepared 6 hours ahead. Let stand at room temperature.
  • Melt butter or margarine with oil in heavy large skillet over high heat. Add beans and toss until heated through, about 4 minutes. Season with salt and pepper. Add walnuts and parsley and toss. Transfer to bowl and serve.
