1/2 cup slivered almonds, toasted until golden brown
1 (11 ounce) can mandarin orange segments, drained
1/2 cup sugar
2/3 cup vegetable oil
1 teaspoon prepared mustard
1 tablespoon poppy seed
1/4 cup vinegar
1 teaspoon salt

Steps:

  • In a salad bowl, toss together the salad ingredients.
  • In a small microwave-safe bowl, whisk together the dressing ingredients.
  • Warm in the microwave for 1 minute.
  • Pour desired amount of dressing over the salad.
  • Toss to combine well and serve at once.

I always get rave reviews when I serve this simple salad with a zesty poppy seed dressing! I often don't use the full amount of dressing, as I prefer less.

6 slices bacon
⅓ cup apple cider vinegar
¾ cup white sugar
½ red onion, coarsely chopped
½ teaspoon dry mustard powder
¼ teaspoon salt
½ cup vegetable oil
1 teaspoon poppy seeds
10 cups torn romaine lettuce leaves
1 (10 ounce) can mandarin orange segments, drained
¼ cup toasted slivered almonds

Steps:

  • Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
  • Place vinegar, sugar, red onion, mustard powder, and salt into the bowl of a blender. Cover, and puree on high until smooth. Reduce blender speed to medium-low; slowly pour in the vegetable oil and blend until incorporated and the dressing is creamy. Stir in the poppy seeds and set aside.
  • To serve, toss the romaine in a large bowl with the crumbled bacon, Mandarin oranges, and enough dressing to moisten. Place onto salad plates and sprinkle with toasted almonds.

This is a wonderful and refreshing salad that I got from Best of Bridge. I played around with it a bit and added a few other fresh fruits to it. This is yummy and great to offset a very rich main dish, such as my Death to Dieter's Lasagna.

1 bunch fresh spinach
2 pints sliced fresh strawberries, cut into thirds
1 (4 ounce) can mandarin orange sections, drained, reserving 2 tsp of the juice for the dressing
1 fresh kiwi, sliced in quarters
1/3 cup white sugar
1/2 cup light oil
1/4 cup white vinegar
2 tablespoons sesame seeds
3 tablespoons poppy seeds
1/4 teaspoon paprika
1/2 teaspoon Worcestershire sauce
1 1/2 teaspoons minced onions

Steps:

  • Combine all dressing ingredients, mix well and refrigerate.
  • Make well ahead to allow flavors to blend.
  • Taste dressing and adjust sugar/vinegar for your sweet/tart taste preferences.
  • Tear fresh spinach into bite sized pieces, wash and pat dry.
  • Wash strawberries, drain, pat dry and cut in thirds.
  • Shake dressing container well and toss with spinach, strawberries, kiwi and mandarin orange sections just before serving, otherwise the spinach will wilt.
  • This makes a wonderfully tart, slightly sweet and very colorful salad!

2 bunches green leaf lettuce, rinsed, dried and ripped into pieces
1 (11 ounce) can mandarin oranges, drained
1 (3 ounce) can rice noodles (like La Choy)
3 green onions, chopped
3/4 cup slivered almonds
1 tablespoon butter
1 tablespoon sugar
1/2 cup oil
1/4 cup white vinegar
1/4 cup sugar
1/4 teaspoon pepper
1 1/2 teaspoons poppy seeds
1 tablespoon Aunt Jane's Krazy Mixed Up Salt

Steps:

  • Make or buy candied almonds.
  • To make candied almonds, melt butter in a small frying pan over medium-low heat.
  • Add almonds and sugar, cooking until golden brown.
  • Remove from heat, transfer to a different dish to cool. As almonds are cooling, continuously separate using a fork or another utensil (if you don't, the almonds will be stuck together and will be hard to separate once cool).
  • To make dressing, mix/shake all dressing ingredients together in a salad dressing cruet, or another tightly sealed container.
  • Rinse and dry lettuce leaves. Rip into bite-sized pieces.
  • Mix together lettuce, green onions, rice noodles, cooled candied almonds, and mandarin oranges.
  • Before serving, pour dressing over lettuce and mix using salad tongs.

1 cup vegetable oil
1 ½ tablespoons poppy seeds

Steps:

  • Mix lettuce, oranges, green onions, and almonds in a large mixing bowl.
  • Blend sugar, vinegar, salt, and mustard in a blender. Stream oil into the dressing while blending. Continue to blend until the dressing emulsifies. Add poppy seeds and blend briefly to mix. Drizzle dressing over the salad and toss to coat.

I have been experimenting with different types of salads and dressings and have developed this very tasty combination of greens and dressing.

1 (10 ounce) can mandarin orange segments, drained
2 large granny smith apples, peeled, cored and cut into 3/8 inch cubes
1/4 cup lemon juice, freshly squeezed
1 bunch fresh spinach, trimmed, washed, remove stems and discard (about 10 ounces)
1 head romaine lettuce, washed, dried and torn into bite size pieces
1/3 cup pine nuts, lightly toasted
1/2 cup frozen orange juice concentrate
4 tablespoons six-year-old balsamic vinegar
6 tablespoons extra virgin olive oil
2 tablespoons liquid honey
2 teaspoons poppy seeds
1 tablespoon Dijon mustard
1/4 teaspoon salt
1/4 teaspoon black pepper, freshly ground

Steps:

  • SALAD - Drain oranges, place into a bowl and set aside.
  • Cube apples and place in a bowl.
  • Pour lemon juice over; mix well to coat to prevent from turning brown and let marinate for about 1 hour or longer.
  • Before using apples, drain any excess lemon juice.
  • Prepare spinach and Romaine lettuce; dry on paper towels, and add to a large bowl.
  • Add ice cubes and let chill for at least 1/2 hour to crisp.
  • DRESSING - In a glass jar with lid, add orange juice, balsamic vinegar, olive oil, honey, poppy seeds, Dijon mustard, salt, and pepper; shake well to blend.
  • TO SERVE - Remove ice from the greens and discard; drain any water.
  • Add apples and pine nuts and toss to mix well.
  • Add dressing mixture and toss to coat well.
  • Arrange spinach on individual salad plates and top with 3 or 4 Mandarin orange segments.
  • This dressing is also very good with young, mixed greens.

4 cups baby spinach leaves
1 (11 ounce) can mandarin oranges, drained
1 (6 ounce) can sliced water chestnuts, drained
1/2 cup mayonnaise
1/2 cup plain yogurt
3 tablespoons poppy seeds
4 tablespoons honey

Steps:

  • Make your dressing first:.
  • Add equal parts yogurt, mayonnaise and mix well.
  • Add the honey and mix inches Adjust this to your tastes. It is generally lightly sweet and rounds out the flavors of the mayo and yogurt.
  • Add the poppy seeds, mix in (if you don't have seeds, don't sweat it, they give a bit of texture but I have wanted this salad and run out and it is fine without it -- )
  • Salad:
  • Either mix the spinach, sliced water chestnuts and mandarin oranges, or make this directly on the plate. I usually break the water chestnuts because about a 1/2 slice and one mandarin orange plus a fork full of spinach leaves seems to be about perfect.
  • Top with the dressing.
  • See! Isn't that easy? Five minutes!
