NUTTY COLESLAW
This is the best variation I have ever had of the Ramen Noodle Coleslaw. The red pepper gives the salad a delicate sweetness, the roasted nuts, seeds and noodles adds crunch and the proportions are so well balanced that you will be asked time and again for this recipe.

Steps:
- Roast nuts, seeds and crunched up noodles on a cookie sheet sprayed with Pam at 350 degrees for 15 minutes.
- Cool and store in airtight container until ready to add to slaw.
- Combine cole slaw, peppers and onions in a large bowl.
- Whisk together vinegar, oil sugar and noodle flavor packet until well blended.
- Pour over slaw.
- It tastes best when this is allowed to marinade overnight but it is not necessary.
- Just before serving, add nut mixture and stir well.

- Salad needs 4 hours to marinate.Prepare the dressing prior to adding it to slaw. Mix coleslaw and crumbled ramen noodles in a large bowl. Add the dressing mixture and mix. Chill in the refrigerator and toss the coleslaw and dressing at least every hour. Add the topping just prior to serving. Enjoy!
NUTTY COLESLAW
My mom used to make this coleslaw often when I was little. I think my three siblings and I must've requested it often, because each of use was allowed to eat six peanuts as a special treat while Mom was making it. I remember we'd all line up at the kitchen table to wait for her to count them out!

- Place cabbage and peanuts in a large salad bowl; set aside. In a bowl, beat eggs and cream until frothy; set aside. , In a small saucepan, bring remaining dressing ingredients to a boil over medium heat, stirring constantly. Gradually beat into egg mixture. Return to heat; cook and stir over low heat until mixture thickens and coats a spoon. Set aside to cool. Pour over cabbage; toss to coat. Refrigerate.

this is a really good coleslaw. goes with any entree, or eat it alone with a piece of good bread. this is a keeper.

- mix the cabbage, green onion, the noodles only from the beef ramen noodle package. (break them up into small pieces), the almonds and the sunflower seeds.
- In a small bowl mix the oil, the cider vinegar, the sugar and the beef packet from the ramen noodle package. when mixed pour over the cabbage mixture. let sit in the fridge for at least 2 to 4 hours to blend the flavors. stir once and awhile when in fridge.
