I've tried several different versions of this cocktail over the years. I've developed my favorite version. The half and half mellows out the sweet sharpness of the frangelico while showcasing the yummy hazelnut and berry flavors.

3/4 ounce Absolut kurant vodka
3/4 ounce Chambord raspberry liquor
3/4 fluid ounce amaretto liqueur
3/4 fluid ounce Frangelico
1 ounce half-and-half

Steps:

  • Fill metal shaker with ice and add all ingredients. Shake until outside of the shaker is frosty. Strain into a snifter. For garnish you can add a little whipped cream and drizzle a little chambord over the top.
  • Perfect drink for a dessert. It tastes a lot like a milkshake though so be careful -- they go down quick!

1/2 cup chopped pistachios
1/2 cup chopped almonds
1/2 cup dried cherries

Steps:

  • Melt chocolate over double boiler until smooth and velvety. Spread evenly onto a half sheet pan lined with parchment paper.
  • Top with pistachios, almonds and cherries. Cool for about 40 minutes. Break into pieces and serve.

Ice cubes
1 part berry vodka (recommended: Skyy Berry)
1/2 part creme de cassis (recommended: Hiram Walker)
1/2 part amaretto (recommended: Disaronno)
1/2 part lemon/lime soda
Freshly squeezed lime juice
Fresh cherry, for garnish

Steps:

  • Chill martini glasses.
  • Put ice cubes in a shaker. Pour in vodka, cream de cassis, amaretto, and lemon/lime soda.. Squeeze in lime juice. Shake. Strain into chilled martini glass. Garnish with a fresh cherry.

I have made variations of this festive rice dish many times with rave comments from my guests. It will vary almost every ingredient, the rice, citrus, dried fruits. It is healthy and you can serve it all year long.

1 cup wild rice
3 cups water
1 cup brown rice
2 cups water
2 cups chopped pecans, toasted
2 cups golden raisins
8 green onions, chopped
½ cup chopped fresh mint leaves
3 oranges, zested and juiced
½ cup dry Marsala wine
½ cup olive oil
salt and freshly ground black pepper to taste

Steps:

  • In one saucepan, combine the wild rice and 3 cups of water. Bring to a boil, cover and reduce heat to low. Simmer for 40 to 50 minutes, or until rice is tender and water has been absorbed.
  • In a separate saucepan, combine the brown rice and 2 cups of water. Bring to a boil, cover and reduce heat to low. Simmer for 45 minutes, or until rice is tender and water has been absorbed.
  • After both kinds of rice have finished cooking, spread out on baking sheets to cool and dry for about 30 minutes.
  • In a large bowl, combine the wild rice, brown rice, pecans, raisins, green onions, mint, orange juice and zest. Stir in the wine and olive oil; season with salt and pepper. Cover and set aside for 2 hours to blend flavors. Serve at room temperature.

1 navel orange
3 tablespoons packed brown sugar
1/2 teaspoon kosher salt
1/2 clove garlic, crushed
1/8 teaspoon curry powder
1/8 teaspoon cracked black pepper
1/2 cup fresh cranberries
3 tablespoons coarsely chopped red onion
1 tablespoon honey
2 teaspoons canola oil
3/4 pound Brussels sprouts, trimmed and very thinly sliced (about 3 cups)
3 tablespoons toasted hazelnuts, coarsely chopped

Steps:

  • For dressing: With a vegetable peeler, remove a wide, 2-inch-long strip of peel from the orange. Peel and segment orange; set segments aside; discard peel. In a food processor, combine orange peel, brown sugar, salt, garlic, curry powder and pepper. Cover and pulse with several on/off turns until peel is finely chopped. Add cranberries and onion; cover and pulse until cranberries are chopped. Add reserved orange segments and pulse three or four times to chop. Transfer to a small bowl; stir in honey and oil. (Dressing can be chilled, covered, for up to 24 hours.)
