Number Of Ingredients 12

1/4 cup brown sugar
1/4 cup finely chopped pecans or 1/4 cup walnuts
1/2 teaspoon cinnamon
1/2 cup butter
1/2 cup sugar
2 eggs
1 cup sour cream
1 teaspoon vanilla
2 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt

Steps:

  • Mix together all filling ingredients and set aside.
  • Mix butter, sugar and eggs, then add sour cream and vanilla.
  • Add dry ingredients and mix.
  • Grease muffin tins or insert cupcake liners.
  • Spoon 1 tablespoon of batter into prepared muffin pan.
  • Top with 1 teaspoon filling, then add 1 tablespoon batter.
  • Sprinkle tops of each muffin with remaining filling.
  • Bake at 375° for 25 minutes.
  • Remove from pan and cool.

1 teaspoon baking soda
1/2 teaspoon salt
1/8 teaspoon ground nutmeg
1 cup sour cream
1/2 cup granulated sugar
1/2 cup coconut oil (melted (see note for other oil options))
1 teaspoon vanilla extract
2 large eggs

Steps:

  • Preheat the oven to 350 degrees F. Lightly coat a 12-cup muffin tin with nonstick cooking spray or line with muffin liners.
  • In a medium bowl, whisk together the flour, baking soda, salt and nutmeg.
  • In a liquid measuring cup or in a separate bowl, whisk together the sour cream, granulated sugar, coconut oil, vanilla and eggs.
  • Pour the wet ingredients into the center of the dry and using a rubber spatula or large spoon, fold and mix until just incorporated (no overmixing unless you want dense, dry muffins!). The batter will be on the thick side of things.
  • Fill the muffin tins evenly, 1/2 to 2/3 full, and bake for 14-16 minutes until the top lightly springs back to the touch.

½ cup white sugar
¼ cup margarine, melted
¾ teaspoon ground nutmeg
½ cup milk
1 teaspoon baking powder
1 cup all-purpose flour
¼ cup margarine, melted
½ cup white sugar
1 teaspoon ground cinnamon

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease 24 mini-muffin cups.
  • Mix 1/2 cup sugar, 1/4 cup margarine, and nutmeg in a large bowl. Stir in the milk, then mix in the baking powder and flour until just combined. Fill the prepared mini muffin cups about half full.
  • Bake in the preheated oven until the tops are lightly golden, 15 to 20 minutes.
  • While muffins are baking, place 1/4 cup of melted margarine in a bowl. In a separate bowl, mix together 1/2 cup of sugar with the cinnamon. Remove muffins from their cups, dip each muffin in the melted margarine, and roll in the sugar-cinnamon mixture. Let cool and serve.

¾ cup white sugar
2 eggs
1 ¼ cups all-purpose flour
½ teaspoon baking soda
¾ cup nonfat sour cream
1 cup fresh blueberries

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Line a muffin pan with paper muffin liners.
  • In a medium bowl, stir together the applesauce, sugar and eggs. Combine the flour and baking soda, add to the wet mixture and mix well. Stir in the sour cream, then fold in the berries. Spoon the batter into the prepared muffin cups. Cups should be at least 3/4 full.

2 cups all-purpose flour
3/4 cup sugar
1 tablespoon double-acting baking powder
1 1/2 tablespoons freshly grated nutmeg (about 1 1/2 nutmegs)
1/2 teaspoon salt
1 large egg, at room temperature
3/4 cup heavy cream
3/4 cup milk
5 tablespoons unsalted butter, melted and cooled

Steps:

  • In a large bowl with a fork, stir together well the flour, sugar, baking powder, nutmeg and the salt In a small bowl, whisk together the egg, the cream, the milk, and the butter until the mixture is combined well.
  • Stir the cream mixture into the flour mixture until the batter is combined well.
  • Divide the batter among 12 buttered 1/2-cup muffin tins, and bake the muffins in the middle of a preheated 400° oven for 15-20 min.
  • ,or until they are pale golden and a tester comes out clean.
  • Turn the muffins out onto a rack.

  • Combine apples, half& half, cinnamon, nutmeg, 2 Tbsp.
  • butter, 1/4 cup brown sugar and raisins in sauce pan.
  • Simmer over low heat until apples are very soft, stirring frequently.
  • Sift flour, baking powder, remaining brown sugar and salt together.
  • Combine egg, milk, 3 Tbsp melted butter and sour cream in mixing bowl, beat well.
  • Add flour mixture; mix well.
  • Fold in apple mixture.
  • Place cupcake liners sprayed with non-stick cooking spray in muffin cups.
  • Fill 2/3 full.
  • Bake at 400 degrees for 15 to 20 minutes or until muffins test done.
