1 cup butter, softened
¾ cup white sugar
2 teaspoons vanilla extract
1 egg
2 teaspoons rum flavored extract
3 cups all-purpose flour
1 teaspoon ground nutmeg
3 tablespoons butter
2 ½ cups confectioners' sugar
½ teaspoon vanilla extract
2 tablespoons milk
1 teaspoon rum flavored extract
3 drops red food coloring

Steps:

  • Preheat oven to 350 degrees F (180 degrees C).
  • Cream together 1 cup butter or margarine and white sugar. Stir in 2 teaspoons vanilla, egg, and 2 teaspoons rum flavoring. Mix well. Add 3 cups flour and nutmeg.
  • Roll in long "logs" 1/2 inch in diameter. Cut into 3 inch strips. Place on lightly greased cookie sheets and bake 12 to 15 minutes. Let cool and frost.
  • To Make Frosting: Cream together 3 tablespoons butter and confectioner's sugar. Add 1/ 2 teaspoon vanilla and 1 teaspoon rum. Stir in milk (may add more to reach desired consistency). Add food coloring and spread over cooled cookies. Decorate with chocolate sprinkles (optional).

2/3 cup sugar
1 cup margarine, softened
2 teaspoons vanilla
2 teaspoons rum extract
1 large egg
3 cups flour
1/4 teaspoon vanilla
1 teaspoon nutmeg
2 cups powdered sugar
3 tablespoons margarine, softened
3/4 teaspoon rum extract
2 -3 tablespoons half-and-half

Steps:

  • In large bowl, combine sugar, 1 cup margarine, 2 tsps vanilla, 2 tsps rum extract, and egg, beat till light and fluffy --
  • lightly spoon flour into measuring cup.level off add flour and 1 tsp nutmeg --
  • mix well.cover dough with plastic wrap and chill 1 hour --
  • preheat oven to 350* --
  • divide dough into 12 pieces.shape into long rope, shape each piece of dough into 1/2" diameter and 15" long -- cut into 3" lenths --
  • place on ungreased cookie sheet.bake at 350* for 12-15 minutes. or light golden brown.
  • place on racks to cool.
  • in a small bowl, spread on tops and sides of cookies -- if desired mark frosting with tines of fork.to resemble bark --
  • sprinkle with nutmeg -- let stand until frosting is set.

This recipe has won best of show, a blue ribbon and three white ribbons. They are nicely spiced and are lovely to present.

3 cups all-purpose flour
1 teaspoon ground nutmeg
1 cup butter
¾ cup white sugar
1 egg
1 tablespoon vanilla extract
2 teaspoons rum flavored extract
3 tablespoons butter
1 teaspoon vanilla extract
1 teaspoon rum flavored extract
2 ½ cups confectioners' sugar
2 ¾ tablespoons evaporated milk
¼ teaspoon ground nutmeg

Steps:

  • Preheat oven to 350 degrees F (190 degrees C).
  • Cream 1 cup of the butter with the 1 teaspoon nutmeg and the white sugar until light and fluffy. Beat in the egg, 1 tablespoon vanilla and 2 teaspoon rum flavoring. Gradually mix in the flour.
  • On a lightly floured surface, shape pieces of the dough into long rolls 1/2 inch in diameter. Cut the rolls in 3 inch lengths (to look like small logs). Place cookies on ungreased baking sheets.
  • Bake at 350 degrees F (175 degrees C) for 12 to 15 minutes or until light golden brown. Let cookies cool then spread with frosting on tops and sides. Mark frosting with the tines of a fork to resemble bark on a log. Sprinkle lightly with nutmeg.
  • To Make Frosting: Cream 3 tablespoons of the butter with 1 teaspoon of the vanilla and 1 teaspoon of the rum flavoring. Blend in 1/2 cup of the confectioners' sugar and beat well. Add the remainder of the confectioners' sugar alternately with the evaporated milk. Beat well after each addition and continue to beat until of spreading consistency.

These are great for Christmas Platter or Cookie Swap. They're a light but very flavorful cookie. My family loves these & always request to take some home. I found this recipe in "Pillsbury Bake-off" Cookbook years ago.

3/4 c white granulated sugar
1 c margarine or butter (softened)
2 tsp vanilla extract
2 tsp rum extract
1 egg
3 c all-purpose flour
1 tsp nutmeg
FROSTING
2 c powdered sugar
3 Tbsp margarine or butter (softened)
3/4 tsp rum extract
1/4 tsp vanilla extract
2-3 Tbsp milk
nutmeg

Steps:

  • 1. Combine Sugar, butter or margarine, flavorings, and egg until fluffy. Stir in Flour and 1 tsp. nutmeg. Wrap in Plastic wrap and chill for at least 45 min.
  • 2. Divide dough into 12 pieces. Shape each into rope of 15inches long & 1/2 inch in diameter. Cut each rope into 3 inch lengths. Place on baking sheet 1/2 inch apart. Bake at 350*F for 12-15 minutes or until light golden brown.
  • 3. To Make Frosting: Beat Powdered Sugar, margarine or butter, flavorings, and 2 to 3 tbls of milk to make a thick frosting.
  • 4. When Cookies are cool, Frost. Then using tines of a fork run lengthwise down each cookie creating a design (log), sprinkle with nutmeg.

Place 2 in. apart on ungreased baking sheets. Bake at 350° for 11-14 minutes or until center is set and edges are lightly browned. Cool for 2 minutes before removing from pans to wire racks., For frosting, in a bowl, combine the butter, confectioners' sugar, extracts and enough cream to achieve a spreading consistency. Frost cooled cookies.

3/4 c sugar
1 egg
2 tsp rum extract
2 1/2 c all purpose flour
1 1/4 tsp ground nutmeg
dash(es) salt
FROSTING
1/4 c butter, softened
3 c confectioners' sugar
2 tsp rum extract
2 to 3 Tbsp 2 % milk
ground nutmeg

Steps:

  • 1. In a large bowl,cream butter and sugar until light and fluffy. Beat in egg and extract. Combine the flour,nutmeg and salt; gradually add to creamed mixture and mix well.
  • 2. Divide dough into 3 portions. Roll each portion into 3/4 inch thick logs; cut into 2 inch pieces. Place on ungreased baking sheet; flatten slightly.
  • 3. Bake at 350 for 12-16 minutes or until bottoms are lightly browned. Cool for 2 minutes before removing to wire racks to cool completely.
  • 4. For frosting, in a large bowl, beat butter until fluffy. Beat in the confectioners' sugar,extract and enough milk to achieve desired consistency. Frost cookies. Press down with tines of a fork, make lines down frosting to simulate tree bark. Sprinkle with nutmeg.
