NUTMEG ICE-CREAM (GRENADA)



Nutmeg Ice-Cream (Grenada) image

Known as the Spice Isle, Grenada produces one third of the world's nutmeg. DO NOT substitute powdered nutmeg in this recipe. Once it is ground, nutmeg soon loses the oils which give it flavour and taste so do yourself a 'flavour' and never use that pre-ground stuff again.

1 1/2 cups milk
1 1/2 cups heavy cream
3 large eggs
3/4 cup sugar
1 tablespoon grated fresh nutmeg (about 1 whole nutmeg)
1/8 teaspoon salt
1 teaspoon vanilla extract

Steps:

  • In a saucepan bring the milk and the cream just to a boil. Do not boil but turn off the heat as soon as it gets to boiling stage.
  • In a bowl whisk together the eggs, the sugar, the nutmeg, the salt, and the vanilla.
  • Whisk 1/2 cup of the milk mixture into the egg mixture, and whisk the mixture into the remaining milk mixture.
  • Cook the custard over moderate heat, stirring constantly with a wooden spoon, until it registers 175 degrees F. on a candy thermometer.
  • Transfer the custard to a metal bowl set in a larger bowl of ice and cold water and stir it until it is cold.
  • Freeze the custard in an ice-cream maker according to the manufacturer's instructions.

2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon allspice
1/2 teaspoon clove
1/2 teaspoon ginger
1/4 teaspoon nutmeg
1 cup butter, soft
1 1/2 cups sugar
3/4 cup brown sugar
4 large eggs
2 cups canned pumpkin
1/2 cup buttermilk
2 teaspoons vanilla
1 1/2 cups nuts
confectioners' sugar
cinnamon-nutmeg ice creme (recipe below)
1 quart vanilla ice cream
1 1/2 teaspoons cinnamon
1/2 teaspoon nutmeg

Steps:

  • Sift dry ingredients together.
  • In separate bowl, beat butter and sugars 3 minutes.
  • Add eggs (1 at a time) Beating well after each beat in pumkin.
  • In measuring cup and buttermilk and vannilla.
  • Into pumkin mixt.
  • beat in flour mixt in 3 additions, alternating with buttermilk.
  • Stir in nuts.
  • Pour batter into greased and floured 13x9 pan.
  • Bake 1 1/4 hours.
  • Cool 10 minutes.
  • Turn out on wire rack and dust with powder sugar.
  • Serve with a big spoonful of CINNAMON NUTMEG ICE CREME.

This rich ice cream is the perfect way to complement your Christmas pudding

Number Of Ingredients 5

284ml pot double cream
200ml full-cream milk
6 egg yolks
50g sugar
1 tsp freshly-grated nutmeg

Steps:

  • Heat the double cream and the full-cream milk in a pan until just starting to boil.
  • Meanwhile whisk the egg yolks and sugar in a large bowl. When milk and cream mix is ready, steadily pour it over the yolks, whisking continuously.
  • Pour back into a clean pan, then heat gently, stirring, for about 10 mins until the mix thickens enough to coat the back of a spoon. Strain custard through a sieve into another large bowl, stir in the freshly-grated nutmeg, then cool.
  • Churn in an ice cream machine or pour into a freezer-proof container, then freeze for about 1½ hrs until frozen around the edges. Stir the frozen edges into the mix, then repeat this twice more or until the ice cream is smooth and thick. Leave for at least 4 hrs to freeze before serving with Sticky orange & marsala pudding (see link, right).

Ice cream
1 quart vanilla ice cream or frozen vanilla yogurt, slightly softened
1 1/2 teaspoons ground nutmeg
Pudding
1/4 cup yellow cornmeal
1/4 teaspoon salt
3 cups whole milk
2 tablespoons (1/4 stick) unsalted butter
2 large eggs
1/2 cup mild-flavored (light) molasses
2 tablespoons (packed) golden brown sugar
2 tablespoons sugar
1 teaspoon ground ginger
1/2 teaspoon ground cinnamon
1/3 cup dark or golden raisins

Steps:

  • For ice cream:
  • Stir ice cream and nutmeg in medium bowl to blend. Cover with foil and freeze. (Can be prepared 3 days ahead. Keep frozen.)
  • For pudding:
  • Preheat oven to 300°F. Butter 8x8x2-inch glass baking dish. Combine cornmeal and salt in heavy medium saucepan. Gradually whisk in 21/2 cups milk. Whisk over medium heat until mixture boils. Reduce heat to medium-low and simmer until mixture is thick and creamy, stirring often, about 10 minutes. Whisk in butter. Remove from heat.
  • Whisk eggs, molasses, brown sugar, sugar, ground ginger and cinnamon in large bowl. Gradually whisk in hot cornmeal mixture. Stir in raisins. Pour pudding into prepared baking dish. Pour remaining 1/2 cup milk over pudding (do not mix into pudding). Place pudding dish in large roasting pan. Pour enough hot water into roasting pan to come halfway up sides of pudding dish.
  • Bake pudding until just set, about 1 hour 30 minutes. Remove pudding from roasting pan. Cool until lukewarm, about 20 minutes. (Can be made 8 hours ahead. Cool; cover with plastic and let stand at room temperature. Rewarm covered pudding in microwave oven on low about 8 minutes.)
  • Spoon warm pudding into shallow bowls. Top with scoop of ice cream.

This turned out very well. I thought up this recipe to complement my Thanksgiving Candied Walnut Sweet Potato Cream Cobbler with Orange Gingerbread. I only regret not making more!

2 can(s) evaporated milk
1 can(s) sweetened condensed milk
2 eggs
1 c dark brown sugar
2 Tbsp cinnamon, freshly grated
1 tsp nutmeg, freshly grated
2 tsp vanilla
1 Tbsp grand marnier (optional)

Steps:

  • 1. Place all ingredients in a saucepan. Whisk.
  • 2. Start at the lowest heat, and slowly raise heat while whisking. This is to temper the eggs.
  • 3. When you finally reach the highest setting, let it just reach a boil. Then pull from heat.
  • 4. Whip with an immersion blender until frothy.
  • 5. You may either place this is an ice cream maker. Or flat freeze it, in your freezer.
