EASY STRAWBERRY JELLO SALAD WITH COOL WHIP



Easy Strawberry Jello Salad with Cool Whip image

one 6 oz box regular (not sugar free) strawberry jello, prepared according to instructions
one 8 oz container of Cool Whip
2 cups or 1 pound fresh strawberries, diced or sliced how you prefer
optional add-ins include whipped cream for topping, strawberry jam at the bottom, or mini marshmallows to mix in

Steps:

  • Boil one cup water on stove top, and mix into bowl with jello powder in mixing bowl. Add in one cup cold water and stir. Chill jello, preferably in a shallow pan, for about 45 minutes or until it is completely cool, just starting to set. Pour the jello into a large mixing bowl. Mix the jello up vigorously, for about one minute. Using an electric mixer is great for this step. But watch out it splashes. This breaks up any jello bits that have started to set, and adds air to the mix. Then fold in the Cool Whip and then strawberries. Mix completely, but be gentle and don't deflate the mix by stirring too aggressively. If you want to add in mini marshmallows, do it now. Add them in about 1/2 cup at a time to make sure you don't overdo it. Transfer to a 9×13 pan for serving, or into individual dishes if you prefer. You can top with whipped cream and sliced strawberries if you prefer. If you want to dress up this dish, spread a spoonful of strawberry jam in the bottom of a glass dessert dish or shallow glass. Then add the salad mix. After the dish has chilled, dollop with some fresh whipped cream and a slice of strawberry.

I love the flavor of this jello and it is very pretty when molded in a bundt type pan. My mom aquired this recipe and made it for the 4th of July as it is layers of red white and blue, however, we enjoy it so much it has become a part of most other holidays as well! Be sure to cool down the second and third layers before pouring onto the chilled set layer(s) to avoid melting set layer(s)!

1 (3 ounce) package raspberry gelatin powder
1 cup boiling water
1 (10 ounce) package frozen raspberries (partially thawed)
1 cup half-and-half cream
1/2 cup granulated sugar
1 (7 g) envelope unflavored gelatin
1/4 cup cold water
1 cup sour cream
1 teaspoon vanilla
1 (3 ounce) package raspberry gelatin powder
1 cup very hot water
1 (16 ounce) can blueberries, in juice,chilled (NOT pie filling)

Steps:

  • Layer 1: Boil water- remove from heat.
  • Dissolve gelatin in water.
  • Stir in raspberries.
  • Pour into cold gelatin mold- I use a bundt style pan.
  • Refrigerate until firm.
  • Layer 2: Over med.
  • heat, stir half and half and sugar, until sugar is dissolved and liquid is heated (about half way to boiling) Remove from heat.
  • Soften unflavored gelatin in cold water.
  • Stir softened geletin into warm cream mixture, until gelatin dissolves.
  • Add sour cream and vanilla, stir to blend, cool thoroughly at room temperature.
  • Pour thoroughly cooled mixture over first layer and refrigerate until firm.
  • Layer 3: Drain blueberries, reserving 3/4 cup of the juice, set aside.
  • Dissolve gelatin in hot water.
  • Add blueberries and 3/4 cup reserved juice.
  • Cool mixture thoroughly at room temperature.
  • Pour over chilled layers.
  • Refrigerate until firm.

1 salmon fillet (1 pound)
1/2 teaspoon salt
1/2 teaspoon plus 1/8 teaspoon coarsely ground pepper, divided
2 tablespoons lemon juice, divided
4 fresh dill sprigs
1 cup chopped peeled cucumber
1/2 cup reduced-fat sour cream
1/4 cup finely chopped sweet red pepper
1/4 cup snipped fresh dill
3 tablespoons capers, drained
8 cups torn Bibb lettuce
1 medium peach, peeled and sliced
1/4 cup chopped hazelnuts
1/4 cup fresh blueberries
4 thin slices red onion, separated into rings

Steps:

  • Place salmon on a greased baking sheet; sprinkle with salt and 1/2 teaspoon pepper. Drizzle with 1 tablespoon lemon juice; top with dill sprigs., Bake, uncovered, at 425° for 15-18 minutes or until fish flakes easily with a fork. Flake salmon into large pieces., In a small bowl, combine the cucumber, sour cream, red pepper, snipped fresh dill, capers and remaining pepper and lemon juice., Divide lettuce among 4 plates. Top with peach, hazelnuts, blueberries, onion and salmon. Serve with dressing.

This is beautiful when cut, all the layers and colors of the jello. It helps at it taste good, too. Very refreshing. For the 4th of July I have done red, white and blue, then cut it with star shaped cookie cutter. Enjoy!!! Great hit at church pot lucks!!!

4 (5 1/8 ounce) packages Jello gelatin (4 diff. flavors- Strawberry, Lime, Orange & Lemon)
2 cups milk
1 cup sugar
2 (1/4 ounce) unflavored gelatin (Knox)
1 pint sour cream
2 teaspoons vanilla

Steps:

  • Dissolve 1 pkg of jello in l ½ cups of Boiling water- (one at a time).
  • Pour into 9 X 13 pan and let gel in level frig-.
  • (yes you need to make sure your frig is level).
  • In saucepan, combine 2 cups milk and 1 cup sugar, bring to boil.
  • (careful not to scald) when boiling starts remove from heat.
  • In mean time, dissolve 2 env unflavored gelatin in ½ cup cold water,
  • slowly add to milk mixture after you remove it from the heat.
  • Let mixture cool then add sour cream and 2 tsp vanilla, mix well.
  • Pour 1 cup milk mixture over jello layer, let chill approximately 1 hour. Then carefully add next layer of jello, let chill approximately 1 hour or until solid.
  • Continue until you have 8 layers (4 jello and 4 milk mixture).
  • This can be made a day or two in advance.

I hate the term 'molded salad' - it sounds like something green & fuzzy. This is my mother's Jello salad recipe. Most people I know will turn up their nose when I say Jello salad but there are never leftovers. Hmmmm...... I'm not positive on the exact ounces - small boxs of jello, big can of cranberry & small can of pineapple. This multiplies easily & can be made several days ahead & kept refrigerated.

2 cups boiling water
1 (15 ounce) can whole berry cranberry sauce

1/2 cup mayonnaise
1/2 cup sour cream

Steps:

  • Dissolve Jello in boiling water. Add cranberry & mix well.

2 (3 ounce) packages lemon Jell-O gelatin
3 1/2 cups boiling water
1/4 cup cider vinegar
2 cups mayonnaise
1 (12 ounce) can corned beef
6 eggs (hard cooked and finely chopped)
2 cups finely chopped celery
2 tablespoons green peppers (finely chopped)
2 tablespoons onions (finely chopped)
1 teaspoon salt

Steps:

  • Dissolve jello in boiling water.
  • Slowly blend the vinegar and mayonnaise together till smooth and then slowly add to the jello mixture stirring all the while.
  • Chill till partially set.
  • While waiting for the jello to set, break up the corned beef into small pieces in a large bowl.
  • Add the eggs, celery, green pepper, onion, and salt. Chill till set.
