NORTH POLE SOUP
This soup has been a staple in our home for so many years I can't name the magazine I clipped it from! A great way to have homemade soup with less than an hour of time and use the left over ham. The original recipe calls for basil, but I found omitting it was more kid-friendly. I do add italian seasoning when the spirit moves. Round out the meal with crispy bread and a green salad and you have Olive Garden beat!

Steps:
- In large sauce pan, heat oil and add onions and carrots.
- Cook 5 minutes or until soft.
- Add garlic and ham.
- Cook 2 minutes.
- Add tomatoes and cook 5 minutes.
- Add broth and beans.
- Bring to a boil and mash some of the beans to thicken.
- Lower heat and simmer 20 minutes.
- Return to boil and add pasta.
- Boil 6 minutes or until pasta is al dente.
- Season with freshly ground black pepper and cheese.

Steps:
- Put beans and enough water to cover in pot.
- Bring to a boil, and boil for 2 minutes.
- Remove from the heat and soak for 1 hour.
- Drain and rinse beans.
- In large pot, put beans, ham bone, and 3 quarts water.
- Bring to a boil.
- Reduce heat,cover and simmer for 2 hours.
- Add next 5 ingredients.
- Add salt and pepper to taste.
- Simmer for 1 hour.
- Remove hambone.
- Remove meat from bone and cut in small pieces.
- Return to pot.
- Heat through.
KIDNEY BEAN SOUP
This is a very easy to prepare and tasty recipe. I work and go to school full time so dont have time to prepare fancy stuff. This hardly takes half hour to prepare and very filling and delicious. I got this from a turkish friend of mine, but am not sure if its turkish.Dont matter, taste good enough to me.

Steps:
- Heat the oil in a pan and add chopped onions.
- Once the onions are translucent and soft, add the ginger, garlic, cumin seeds and parsley.
- Cook until fragrant.
- Now, add the salsa, tomato paste,alongwith some water,kidney beans plus the liquid (about half cup liquid).
- Add salt and pepper to taste.
- Simmer until thick enough.
- Serve warm with thick crusty bread.
