Asparagus Soup image

This recipe was handed down to me by my father. His father used to make it for him when he was a boy. You could subsitute the meat for pork, chicken or even vension. Goes good with fresh baked bread or rolls.

Number Of Ingredients 12

1-1 1/2 lb fresh aspargus
1 lb ground chuck
1 medium onion chopped
1 can(s) beef broth, reduced sodium
1 large bay leaf
1 can(s) water
1-16oz. can(s) stewed tomatoes
1-12oz. can(s) tomato juice
2 Tbsp beef boullion
1/2 tsp thyme, dried
1/2 tsp marjoram, dried
slat and peper to taste

Steps:

  • 1. Brown meat and onion in skillet. Drain any grease.
  • 2. In a cooking pot add all ingredients except for the asparagus and cook for 1/2 hour on medium to low heat (do not boil)
  • 3. Wash and cut up the asparagus into bite size pieces.
  • 4. After 1/2 hour is up add the aparagus to the pot and continue to cook for another 1/2 hour or until vegetable is done.
