SPAGHETTI FRUIT SALAD

My great-aunt gave me the recipe for this rich, fruity salad, which goes especially well with a ham dinner. Before I even tasted it, I knew it would be good. I've never walked away from her kitchen disappointed. -Carolyn Shepherd, O'Neill, Nebraska

1 cup confectioners' sugar
2 eggs
1/2 cup lemon juice
1/2 teaspoon salt
1/2 pound spaghetti, broken into 2-inch pieces
1 can (20 ounces) pineapple tidbits
3 medium tart apples, diced
1 carton (8 ounces) frozen whipped topping, thawed
1/4 cup chopped walnuts
Maraschino cherries, halved

Steps:

  • In a saucepan, combine sugar, eggs, lemon juice and salt; cook and stir over medium heat until temperature reaches 160° and mixture is thickened, about 4 minutes. Cool completely. , Cook spaghetti according to package directions; drain and rinse in cold water. Place in a large bowl. , Drain pineapple, reserving juice. Pour juice over the spaghetti; stir in apples. Toss gently; drain. Stir in the egg mixture and pineapple. Cover and refrigerate overnight. , Fold in whipped topping just before serving. Garnish with walnuts and cherries.

1/2 box of acini de pepe # 48 noodles
1/2 cup sugar
1 1/2 tablespoons flour
1 (15 ounce) can chunk pineapple drain well and save juice
1 (15 ounce) can fruit cocktail drain well and save juice
1 egg, slightly beaten
1 (8 ounce) container Cool Whip

Steps:

  • Cook noodles according to direction. Drain and rinse with cold water put aside. Next mix sugar flour egg and juice from both cans of fruit Bring to a boil stir until it thickens like custard. Remove from heat fold in noodles and refrigerate overnight. Next day fold in fruit followed by cool whip. Cooking time does not include refrigerator time.

Kosher salt
1/2 pound thin spaghetti
1 pound sugar snap peas
1 cup vegetable oil
1/4 cup rice wine vinegar
1/3 cup soy sauce
3 tablespoons dark sesame oil
1 tablespoon honey
2 garlic cloves, minced
1 teaspoon grated fresh ginger
3 tablespoons toasted white sesame seeds, divided
1/2 cup smooth peanut butter
2 red bell peppers, cored and seeded, and thinly sliced
4 scallions (white and green parts), sliced diagonally
3 tablespoons chopped fresh parsley leaves

Steps:

  • Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package directions. Drain and set aside.
  • Meanwhile, bring another large pot of salted water to a boil, add the sugar snap peas, return to a boil, and cook for 3 to 5 minutes, until crisp tender. Lift the sugar snap peas from the water with a slotted spoon and immerse them in a bowl of ice water. Drain.
  • For the dressing, whisk together the vegetable oil, rice wine vinegar, soy sauce, sesame oil, honey, garlic, ginger, 2 tablespoons sesame seeds and peanut butter in a medium bowl.
  • Combine the spaghetti, sugar snap peas, peppers and scallions in a large bowl. Pour the dressing over the spaghetti mixture. Add the remaining 1 tablespoon of sesame seeds and the parsley and toss together.

1 package(s) ramen noodles, 3oz.
1 cup(s) chopped walnuts
1/4 cup(s) butter
1/4 cup(s) sugar
2 tablespoon(s) red wine vinegar
1/2 teaspoon(s) soy sauce
8 cup(s) torn romaine lettuce
1/2 cup(s) chopped green onions
2 cup(s) fresh strawberries, sliced

Steps:

  • Discard seasoning from ramen noodles or save for another use. Break noodles into small pieces. In a large skillet, cook noodles and walnuts in butter over medium heat 8-10 minutes or til golden. Cool
  • For dressing, in a small bowl, whisk the sugar, oil, vinegar and soy sauce. Just before serving combine the romaine, onions, strawberries and noodle mixture in a large bowl. Drizzle with dressing and toss gently.

A friend at work gave me this recipe. It didn't seem like one I would like, but she made it one day and brought it to work. It has been one of my favorites ever since. It's quick & easy to make.

1 (8 ounce) bag coleslaw mix (I used half of a 16 oz. bag)
1 package ramen noodles, raw & crushed (I like the Oriental Flavor)
1/2 cup sunflower seeds (I used dry roasted)
1/2 cup oil
1/4 cup cider vinegar
1/4 cup sugar (I use 6 pkts. of Splenda)

Steps:

  • Mix together the coleslaw mix, crushed noodles& sunflower kernels.
  • In a small bowl, mix the Ramen Noodle seasoning pkt.
  • ,oil, vinegar& sugar together.
  • Mix all together& refrigerate at least 2 hours.
