I made this in a punch bowl for my Grandsons graduation and everyone remarked how good it was. It is so simple to make you won't believe it. It tastes like the Olive Garden's Bellini Tea.

1 gal tea, instant raspberry works well
or 1 gal brewed and chilled tea
raspberry flavored syrup to taste
1 bag(s) frozen peach slices
1 bunch fresh mint, optional

Steps:

  • 1. Brew tea if making your own iced tea. If using a mix, make one gallon of tea.
  • 2. Add the raspberry flavored syrup to taste, or mix up a gallon of raspberry flavored ice tea mix.
  • 3. Add the frozen peach slices to each glass or in the punchbowl right before serving. Garnish with a sprig of mint if desired.
  • 4. Adding some light rum makes this an adult drink.

2 ounces peach nectar
4 to 5 ounces sparkling cider
Optional garnish: peach slice

Steps:

  • Gather the ingredients.
  • Pour the peach nectar into a Champagne flute .
  • Slowly add the sparkling cider.
  • Garnish with a peach slice. Serve and enjoy. Refrigerate any leftover peach puree or juice in the refrigerator for up to one week or freeze it to use for up to three months. Peach nectar will add the most peach flavor. Look for peach nectar in the juice section of the grocery store. Nectar will be more concentrated than peach juice, but you can use peach juice if that is what is available. If you have fresh peaches available during the peach season, you can make your own peach juice or peach puree for the freshest Bellinis. Peaches are ripe during the summer months of June through August in most areas. Using a mixed selection of peach varieties , they will create even more flavor for your juice or puree as each will be a little different. It is easy to make peach juice using an electric juicer. You'll need to wash the peaches well and remove the pit, but you can leave the skin on as it is edible. Strain the juice to remove any chunks. To make a peach puree, wash and pit the peaches, slice them to fit into your food processor or blender, and blend them until the puree is smooth. You can add a teaspoon of sugar and a teaspoon of lemon juice to boost the flavor. Strain out any lumps that remain after processing. If you're using fresh peaches, save one to make a slice for a garnish, either on the rim of the glass or floated in the drink. You can freeze slices sprinkled with a little lemon juice to use to cool the drink as well as add a tasty treat when the drink is finished.

This is good, refreshing and very easy to make with only a few ingredients. It looks very pretty served in champagne flutes. It will serve two - four people, depending on size of glass. Enjoy! *Please Note: Cook time is chill time.

1 1/3 c peach nectar, chilled
1/3 c seltzer water, orange, chilled
1/8 c peach nectar (rimming glasses)
2 Tbsp white sugar (yellow, orange, pink)
4 orange wedges, small, for garnish

Steps:

  • 1. Chill glasses in freezer.
  • 2. Combine chilled peach nectar and seltzer in pitcher and blend well, place back in refrigerator until ready to use.
  • 3. Remove the glasses from freezer, just before serving.
  • 4. Rim the glasses with peach nectar, don't worry if it runs down into the glass.
  • 5. Dip the glass in sugar, to evenly coat rim of glass. You could use colored sugar, yellow, orange or pink, for this garnish.
  • 6. Pour the peach and orange Bellini mixture into the glasses and garnish with a small orange wedge.
  • 7. Serve immediately.
