CRUSTLESS SPINACH PIE - GREEK SPANAKOPITA
Crustless Spinach Pie, also called Greek Spanakopita. It has all of the flavors and many of the same ingredients as Greek Spinach Pie, without the crust. It's the perfect low-carb or Keto spinach pie recipe.

Steps:
- Preheat oven to 375°
- In a small bowl mix spinach, diced onion, ricotta cheese, parmesan cheese, eggs, dill, panko, and black pepper. (It's best to use a fork for mixing.)
- Break the feta cheese into very small pieces and fold it into the spinach mixture.
- Transfer spinach to a baking dish that has been sprayed with non-stick cooking spray.
- Bake for 30 minutes covered.
- Remove cover and bake for another 5-7 minutes or until the edges begin to turn brown and pull away from the sides of the baking dish.
- Let it cool for 5 minutes before serving.

- Heat the butter in a small slilet over medium heat. Sauté the onion until it is translucent, about 6-8 minutes.
- Pre-heat the oven to 375F. Spray a pie pan with cooking spray. In a large bowl, add in the spinach, onion, beaten egg, heavy cream, salt, pepper, nutmeg, and cheese. Stir until all combined. Pour into the pie plate.
- Bake in the preheated oven for 35-40 minutes, or until the eggs are set. Cut into 6 slices and serve.

- Stir together ingredients and bake in a greased glass pie pan for 45-50 minutes at 375°F or until firm and lightly browned.

QUICK NO-CRUST ITALIAN SPINACH PIE
This is a delicious no-crust savory pie that goes together quickly, and is very satisfying. The oregano and roasted red pepper give it a wonderful flavor. It is a good high-protien, low-carb alternative to quiche or to the Bisquick version of no-crust vegetable pies. The original recipe called for 40 minutes baking time, but it took a full hour in my oven. One pie serves 4 as a main dish (only 320 calories per serving!), or 8 as a side dish.

- Blend in spinach.
- Add remaining ingredients mixing well.
- Pour into a buttered 10" springform pan.
- Drizzle the top with a small amount of olive oil for a golden color.
- Bake in a preheated 350 degree oven for 40 minutes.
- Serve warm or room temperature.
