EASY CHEESY NACHOS
There's no need to brown ground beef when fixing this satisfying snack. Laura Jirasek of White Lake, Michigan tops crunchy chips with warm canned chili and melted cheese, then sprinkles it all with chopped tomato and onion for fresh flavor and color.

- Divide chips among six plates; set aside. In a saucepan, warm chili until heated through. , Meanwhile, in another saucepan, heat cheese over medium-low heat until melted, stirring frequently. Spoon chili over chips; drizzle with cheese. Sprinkle with onions and tomato.

BEEFY BURRITOS OR NACHOS BY MAGGIE
Burritos or Nachos. Pretty similar at our house. The main difference is the vehicle - tortilla chips or a tortilla ? Since we usually have both on hand we came up with this pretty close to perfect all-in-one filling for either use. It's simple and quick and really tasty. It also freezes well so make a big batch and freeze some for later. Opt to add any or all of the toppings .. no rules here other than enjoy :)

- If you don't have leftover white rice prepare that so it has a chance to cool before beginning.
- Brown the ground beef and drain well. Return the cooked beef to the pan and add the rice, salsa, diced green chilies, black beans and taco seasoning.
- Add the 3 Tbsp each of all the cheeses and cook over medium low until the cheese has melted and the contents are hot. Ladle the meat mixture into bowls and sprinkle with corn chip crumbles.
- For burritos, spoon the contents of the bowl into soft flour tortillas. For nachos serve with tortilla corn chips. Top your selection with any or all of the toppings your desire.

- In a large skillet, cook beef, onion and garlic over medium heat until beef is no longer pink, breaking up beef into crumbles, 6-8 minutes; drain., Transfer beef mixture to a 5-qt. slow cooker. Drain 1 can tomatoes, discarding liquid; add to slow cooker. Stir in beans, chili powder, cumin, salt and remaining can of tomatoes undrained. Cook, covered, on low 6-8 hours to allow flavors to blend. Mash beans to desired consistency., Just before serving, cut open tortilla chip bags. Divide chili among bags; add toppings as desired. Freeze option: Freeze cooled chili in a freezer container. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally; adding water if necessary.
