Adding lots of veggies and beans makes this chili full of fiber. A serving is about 2 cups depending on how much it has cooked down or how much water has been added.

Steps:
- In a large Dutch oven, cook the turkey and next 4 ingredients over medium heat until meat is browned and vegetables are tender; drain.
- Stir in the beans and remaining ingredients.
- Bring to a boil; reduce heat; simmer covered for 30 minutes and then 30 minutes uncovered or until chili reaches desired thickness.
- Ladle into serving bowls; garnish with chopped onion and low fat cheddar cheese, if desired.

GRILLED PORTABELLA MUSHROOM BURGERS - A LA DAVE
My own recipe taken from watching many, many food shows. I use it as a lower fat and calorie burger substitute.

Steps:
- Clean mushrooms by rubbing lightly with a damp towel and remove stems (if desired).
- Combine salt, pepper, garlic powder, vinegar and 3 tablespoons oil in a small bowl and combine by whisking briskly with a basting brush.
- Heat a medium-size skillet to medium heat and coat with remaining tablespoon of oil (if desired).
- Brush both sides of the mushrooms with the oil/vinegar mixture and place stem side down in the skillet for 5 minutes.
- Brush the top side of the mushrooms with some more of the mixture and turn over.
- Grill for another 5 minutes, brushing the stem side once with the oil/vinegar mixture.
- Remove from the skillet, place on the hamburger rolls and garnish with your favorite condiments.
TURKEY AND BROWN RICE CHILI
This is a slow cooker recipe. This is a lower-fat chili because it is made with ground turkey breast. Make sure that you are buying ground turkey BREAST and not ground turkey, which includes both light and dark meat and will be higher in fat. If you use ground beef instead of the turkey, you won't need the oil to cook it in.

- Heat oil in 12 inch skillet over medium heat. Cook turkey and onion in oil, stirring frequently, until turkey is no longer pink; drain.
- Mix turkey & onion with remaining ingredients except rice in a 3 1/2 to 6-quart slow cooker.
- Cover and cook on low heat setting 8-10 hours (or high heat setting 4-5 hours).
- Stir in rice.
- Cover and cook on high heat setting about 15 minutes or until rice is hot.

- Spray each of 3 skillets with cooking spray.
- Sautee the turkey throroughly. (More effort is required stirring/separating ground-turkey "crumbles" than with high-fat, slippery ground beef.).
- Lower heat. Pour off all drippings.

- Add peppers and cook for 10-15 minutes .
- Add tomatoes,onions,garlic,balsamic vinegar and salt and pepper.

NO FAT TURKEY CHILI - A LA DAVE
This is a very versatile chili recipe that also tastes great! They key is the ground turkey breast, which has almost no fat (1 gm per serving vs. 12 gm for most store-bought regular ground turkey). You can easily lower the heat by removing the seeds and pith (white stuff) from some or all of the peppers. If you want to make it Vegetarian, you can remove the turkey and substitute cubed Tofu (or not) and use vegetable broth instead of chicken broth. You can also use the dry ingredients by themselves as a nice chili powder for other recipes.

- Mix dry ingredients (cayenne, cocoa, coriander, cumin, paprika, oregano, and salt) and put aside.
- Brown turkey breast in a skillet and set aside.
- Heat canola oil in a large pot until almost smoking.
- Cook onions and garlic in oil until caramelized.
- Add turkey to pot.
- Add wet ingredients (tomatoes, tomato paste, Guinness, coffee, and chicken broth) and bring to a slow boil.
