ALMOND MELTAWAY COOKIES

These Almond Meltaway Cookies are a lot like shortbread cookies, with a sweet almond glaze on top. They're soft, sugary, and I promise you'll be hooked after just one bite!

Number Of Ingredients 10

2 cups all-purpose flour
1/2 tsp baking powder
1/4 tsp salt
1 cup unsalted butter, room temperature
3/4 cup granulated sugar
1 large egg
2 tsp almond extract
1 cup powdered sugar
1 tbsp milk (or sub water)
1 1/2 tsp almond extract

Steps:

  • Preheat oven to 375°F. Line a baking sheet with parchment paper or a silpat. Set aside.
  • In a medium bowl, whisk together flour, baking powder and salt. Set aside.
  • In a stand mixer, beat butter and sugar until light and fluffy. Add egg and almond extract, mixing until combined. Add flour mixture 1/2 cup at a time, mixing until completely combined.
  • Roll 1 tablespoon of dough into small circles and then press with hands (or with the bottom of a cup) into a disk shape. Place on prepared baking sheet.
  • Bake for 8 minutes. The cookies will not look browned or cooked, but they are! Remove from oven and let cookies rest on baking sheet for 5 minutes. Then, transfer to a wire rack to cool completely.
  • To Ice: In a small bowl, whisk together powdered sugar, milk and almond extract - until smooth.
  • Using a spoon, smooth icing onto the top of each cookie and let set for 10 minutes, or until hardened. Store in the fridge, let come to room temperature when ready to serve.

These flour-less almond butter cookies are SO good, and made with only 3 ingredients (almond butter, raw sugar and an egg)! They are so easy to make you don't even need a mixer, so these are perfect for any beginner baker.

1 cup Justins Maple Almond Butter
6 tbsp raw sugar
1 large egg (lightly beaten)
cooking spray

Steps:

  • Preheat the oven to 350°F and place the racks in the upper and lower third of the oven. Spray two nonstick baking sheets lightly with cooking spray.
  • In a medium bowl, mix the almond butter, sugar and egg until well combined. Spoon 1 level tablespoon of the mixture about 1 inch apart onto baking sheets. Flatten the mounds with the tines of a fork, making a crosshatch pattern on the cookies.
  • Bake until golden around the edges, about 10 minutes, switching the position of the sheets halfway through baking. Let cool completely before removing from the cookie sheet.

You could dress it up a bit by adding some chopped dried cranberries and some chopped candied ginger...but they are perfectly good plain.."just...

3/4 c almond meal
1 1/2 c all purpose flour
1 c sugar
1/2 tsp salt
1 1/4 tsp baking powder
3/4 tsp baking soda
2/3 c canola oil
2 large egg whites
1/2 tsp vanilla
1/4 tsp almond extract

Steps:

  • 1. Mix dry ingredients in a large bowl.
  • 2. Mix oil, eggs and extracts in a separate bowl. Combine with the dry ingredients just until the dough comes together.
  • 3. Chill dough an hour.
  • 4. Make 1 1/4 - 1 1/2inch balls of dough. The dough will need a good squeeze to stick together. Place 12 balls of dough on an ungreased cookie sheet. Gently flatten each with a fork.
  • 5. Bake in a 375 degree oven (350 for a convection oven)for 11 minutes.
  • 6. Remove from oven and rest 2 minutes before transferring to a rack to cool completely. Store airtight. Makes 32 cookies.

1 dash salt
2 tablespoons butter, softened
1 egg white
¼ teaspoon vanilla extract

Steps:

  • Mix almond flour, sweetener, and salt together in a small bowl with a fork. Add butter, egg white, and vanilla extract; continue mixing with a fork. Place in the freezer to help it harden for 15 minutes.
  • Meanwhile, preheat the oven to 325 degrees F (165 degrees C). Line a baking sheet with parchment paper or use a silicone baking mat.
  • Remove batter from freezer. Measure out 1 teaspoon at a time; roll into balls and place on the prepared baking sheet. Place plastic wrap on the bottom of a glass and roll dough balls flat.
