½ cup butter
1 large onion, chopped
1 (16 ounce) package frozen chopped broccoli
⅓ cup milk
1 (10.75 ounce) can Campbell's® Condensed Cream of Chicken Soup (Regular or 98% Fat Free)
1 (8 fl oz) jar pasteurized process cheese sauce (like Cheez Whiz®)
1 ½ cups cooked regular long-grain white rice

Steps:

  • Heat the butter in a 10-inch skillet over medium heat. Add the onion and cook until tender-crisp, stirring occasionally.
  • Stir the broccoli in the skillet and cook until it's tender-crisp, stirring occasionally. Stir in the milk, soup, cheese sauce and rice. Cook and stir until the cheese is melted. Pour the broccoli mixture into a 2-quart shallow baking dish.
  • Bake at 350 degrees F. for 30 minutes or until the mixture is hot and bubbling.

My sister-in-law served this at a family function and it's been a hit ever since. No Cheese Whiz, just real cheddar cheese. Delicious, and kid-friendly. My now-grown son would request this when he came home from college. This recipe is very adaptable as well - add crushed Ritz crackers or panko crumbs on top during the last 5 minutes of cooking for a crunchy topping. Add bacon bits to the mixture for some extra flavor, or add a couple teaspoons of hot sauce for some heat. I also have used brown rice successfully with this recipe, and frozen broccoli cuts instead of chopped.

2 (10 ounce) boxes frozen chopped broccoli, thawed
2 cups cooked rice
8 ounces shredded cheddar cheese
2 (10 3/4 ounce) cans cream of chicken soup (or you use 1 can each cream of chicken and cream of mushroom)
1 small onion, chopped
2 tablespoons butter

Steps:

  • Cook onion in butter in large skillet until soft.
  • Add remaining ingredients and cook just until cheese is melted.
  • Put in 2 quart casserole dish.
  • Bake at 350 (uncovered) for 1 hour.
  • To make ahead and freeze: Mix all ingredients together (start with your rice cooked, not raw) and spoon into two or even three smaller casserole dishes, cover, label and freeze. If you thaw overnight, just cook the one hour. If cooking from frozen state, add ten minutes or so, check for doneness. Many thanks to Tornado Ali, for her wonderful tips for freezing this.

This recipe allows you to tailor your dish for the amount of time and availability of ingredients. This can be prepared two ways, with fresh or frozen broccoli, with cooked rice or uncooked minute rice, or with Cheese Whiz or colby cheese.

1 (10 ounce) box frozen chopped broccoli or 1 head fresh broccoli
1/4 cup chopped celery (optional)
1 cup diced onion (optional)
1 (8 ounce) jar Cheese Whiz or 1 cup shredded colby cheese
1 (10 ounce) can cream of mushroom soup or 1 (10 ounce) can cream of celery soup
3/4 cup milk
1 cup instant rice, uncooked or 2 cups cooked rice
salt and pepper

Steps:

  • If using fresh broccoli cook broccoli to desired tenderness. Sauté celery and onion in a bit of butter if desired. If using cooked rice, prepare rice. This can all be done ahead of time.
  • Mix all ingredients and pour into a greased 2 quart casserole with a lid (or cover with foil).
  • Sprinkle additional cheese on top.
  • Bake covered at 350ºF for 45 minutes if using uncooked minute rice, if using cooked rice bake until warm through and cheese is bubbly.
