1 vanilla pound cake
1 box pound cake mix
1 tablespoon cocoa powder
½ stick butter
3 oz chocolate, melted
⅔ cup milk
2 eggs

Steps:

  • Preheat the oven to 350˚F (180˚C).
  • Line a 8x4-inch (20x10 cm) loaf pan with parchment paper and generously grease the pan.
  • Slice the vanilla pound cake as the same thickness as a ghost shaped cookie cutter. Cut out the cake with using a ghost-shaped cookie cutter. Set aside.
  • In a medium bowl, combine pound cake mix, cocoa powder, butter, melted chocolate, milk, and eggs. Mix until well combined.
  • In the lined and greased loaf pan, add ⅓ of the batter. Line the cut out ghost-shaped pound cake in the middle of the pan.
  • Pour rest of the batter over the ghost-shaped cake.
  • Smooth the top and bake for 35-40 minutes, or until inserted toothpick comes out clean. Cool completely on cooling rack

1 box yellow cake mix, prepared
2 cups chocolate chips
4 cups flour
2 cups brown sugar
2 cups butter, softened
4 tablespoons milk
½ cup chocolate chips
2 teaspoons vanilla
2 teaspoons salt
½ cup chocolate chips, chopped
2 ½ sticks butter, unsalted
2 ½ cups powdered sugar
2 tablespoons heavy cream
1 teaspoon vanilla extract
1 pinch salt

Steps:

  • Preheat oven to 350˚F (180˚C).
  • Prepare 1 box of yellow cake mix according to instructions on box.
  • Add chocolate chips to the cake batter.
  • Grease two 8-inch (20 cm) cake pans, and pour batter into each pan. Bake according to box instructions.
  • Remove cake from pans and let cool.
  • Prepare for the cookie dough by evenly spreading flour out on a baking tray and baking for 5 minutes. This will cook out any potential bacteria in the raw flour.
  • In a large bowl, mix flour, sugar, butter, vanilla, milk, chocolate chips, and salt until combined evenly. If flour is clumpy after baking, use a siever to help get out the clumps.
  • Take a cake pan and line it with plastic wrap. Then fill the pan with half of the cookie dough mixture.
  • Take the other half of the cookie dough mixture, and roll it into small balls to be used as a garnish.
  • Refrigerate cookie dough layer and dough balls for 30 minutes.
  • In a large bowl, mix butter, powdered sugar, heavy cream, vanilla extract, and salt with hand mixer.
  • Use a serrated knife to cut the round top off of the cake so the cakes are even and flat. Spread a light layer of buttercream at the center of the cake stand.
  • Place the first cake on a cake stand, and spread a light layer of buttercream at the center.
  • Remove cookie dough layer from the pan using the plastic wrap, and place layer on top of the cake. Spread a light layer of buttercream at the center of the cookie dough layer.
  • Place second cake on top. Shave down the edges of the cake if necessary so that each layer evenly fits over the other. Add the remaining amount of buttercream to the top layer of cake, and frost the cake completely.
  • Top with cookie dough balls.
  • Slice and serve.

1 ¾ cups water, divided
⅔ cup oil, divided
8 large egg whites, divided
½ cup all purpose flour
2 boxes white cake mix, divided
¼ teaspoon purple gel food coloring
½ cup rainbow sprinkles
1 jar vanilla frosting
gold flake, for decorating
assorted sprinkle, for decorating
1 cookie cutter, wide number 2
1 cookie cutter, winder number 0
sparkler candle, optional

Steps:

  • Preheat the oven to 350°F (180°C). Grease a 9 x 4-inch (22 x 10 cm) loaf pan with nonstick spray.
  • In a large bowl, whisk together ¾ cup water, ⅓ cup (80 ml) oil, 3 egg whites, the flour, and 1 box of cake mix until smooth. Whisk in the purple gel food coloring until the color is evenly distributed.
  • Pour the cake batter into the prepared loaf pan and bake according to the package instructions, 45-50 minutes, or until a toothpick inserted into the center of the cake comes out clean. Transfer the cake to a wire rack and cool completely, about 30 minutes.
  • Set a wire rack over a baking sheet and grease with nonstick spray.
  • Once completely cooled, trim ⅛ inch off both ends of the cake to expose the purple interior. Use the depth of the cookie cutter to measure the width and cut the cake into equal slices. It is important that the slices are even in width so the number cut-outs will all be the same size.
  • One at a time, transfer the cake slices to a cutting board. Working carefully, use the cookie cutters to cut "2020" out of each slice. Use a cotton swab to gently release each punched-out number from the cookie cutters. Transfer the numbers to the prepared wire rack.
  • In a small bowl, whisk together 2 egg whites. Brush the numbers on all sides with the egg whites. Transfer to the freezer and freeze uncovered for 6 hours, up to overnight.
  • In a medium bowl, beat the remaining 3 egg whites with an electric hand mixer until light and fluffy, just before soft peaks form. Set aside.
  • Preheat the oven to 350°F (180°C). Grease a 9 x 4-inch (22 x 10 cm) loaf pan with nonstick spray.
  • In a large bowl, combine the remaining cup of water and ⅓ cup (80 ml) oil. Add the remaining box of cake mix and whisk until smooth. Whisk in the rainbow sprinkles. Using a rubber spatula, gently fold in the whipped egg whites.
  • Pour 1 cup of batter into the bottom of the prepared loaf pan and spread evenly. Remove the punched-out numbers from the freezer. Arrange the numbers crosswise in rows by standing upright in the batter so each row reads "2020", leaving about ¼ inch (6 mm) of space at the ends of the pan.
  • Gently pour the remaining batter over the numbers, but do not overfill the pan. You may have about ⅓ cup of batter left over.
  • Bake the cake for 40-50 minutes, until a toothpick inserted into the center of the cake comes out clean. Transfer the cake to a wire rack and cool completely, about 30 minutes.
  • Use an offset spatula to spread the vanilla frosting over the cake. Decorate with gold flakes and sprinkles as desired.
  • Place the sparkler candles in the cake, if using.
  • Slice to reveal the numbers and serve.
