1 1/2 lbs ground sausage
1 large onions, chopped or 1 cup chopped onion
2 garlic cloves, minced
3 (15 ounce) cans black-eyed peas, rinsed and drained
2 -3 cups cabbage, chopped
2 cups water
2 (14 1/2 ounce) cans stewed tomatoes
1 (10 ounce) can Rotel Tomatoes
1 tablespoon beef bouillon granules
1 tablespoon molasses (you could substitute brown sugar) or 1 tablespoon honey (you could substitute brown sugar)
1 teaspoon Worcestershire sauce
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon ground cumin

Steps:

  • In a large stock pot or Dutch oven, brown sausage along with onion and garlic. When the sausage browned add all of the other ingredients and mix well. Bring up to a boil. Reduce heat to simmer and cook for 45 minutes to an hour.
  • If you want to do this in your slow cooker. Brown the sausage with the onion and garlic first in a skillet. When browned place the meat with the other ingredients in a 5 - 6 quart slow cooker and cook on low 6-8 hours or on high for 3-4 hours.
  • Serve with your favorite cornbread. Letting this soup sit a day or 2 will meld the flavors even more.

1 pkg 16 oz. black eye peas
3 c cooked rice
4-6 can(s) chicken broth ... regular size cans
2 large smoked ham hocks
1 can(s) spinach, drained and cut up. ..(green backs for good luck)
2 large carrot, sliced....................(gold coins for good luck)

Steps:

  • 1. The night before... Put smoked ham hocks in the crock pot with 3 cups of water. Simmer over night.
  • 2. The night before..... Rinse the black eye peas and put in a saucepan, covered with water. Bring to a boil. Cover and let sit for one hour.Drain,and rinse two tines. Put in a bowl covered with fresh cold water. Put in refrigerator over night.
  • 3. Next morning: strain the pork hocks,and the liquid, into a bowl. Pick out, the pork hock meat,bones,and skin and put on a plate to cool. Now strain the liquid again, put the clear liquid back into the crock pot. and add the drained black eye peas. Cook on high.
  • 4. When the hocks are cool enough , pick off all the meat. Throw all scraps away, and put the meat back into the crock pot. Cover. Cook the rice. Set aside.
  • 5. Scrape and slice the carrots into coins,chop the onion, and put into the crock pot. Cook on high till the carrots are done.
  • 6. When the carrots are done add the cooked rice, and the cut up canned spinach. Add more chicken broth if needed. Simmer til serving time.
  • 7. Instead of canned spinach you can use fresh cut up collard greens,or fresh spinach. Serve with hot sauce, and home made corn bread, for a delicious meal. Or at half timefor your foot ball friends! Happy New Year ! ....12/17/11

2 can(s) black-eyed peas
1 can(s) rotel (any degree of spice) i like hot.
1 medium cabbage head-red or green
1 tsp salt (or to taste)
1 tsp black pepper (or to taste)

Steps:

  • 1. Open cans of black-eyed peas, put into 3 quart cooking pot.
  • 2. Open can of Rotel, add to pot. Remove cabbage core and chop up into bite size pieces. Put this into pot. Add salt & pepper to taste.
  • 3. Cook on medium heat until cabbage is soft.

4 oz thick sliced pepper bacon
4 oz country ham
1 Tbsp olive oil, extra virgin
1 c onion, chopped
1/2 c carrots, chopped
1/3 c green bell pepper, chopped
1 fresh jalapeno pepper, seeded and chopped
1 1/2 c grape tomatoes
1 1/3 c french lentils, dry
4 c chicken stock, no salt
1/4 c fresh basil or parsley, chopped

Steps:

  • 1. Chop the bacon and ham into small dice.
  • 2. In a medium skillet over medium heat, cook bacon and ham in the olive oil until bacon begins to crisp. Add in onion, carrots, green pepper, and Jalapeno pepper. Continue cooking until onions are wilted and translucent, about 5 minutes, stirring frequently.
  • 3. Stir in tomatoes; cover, and lower heat. Simmer about 15 minutes, until tomatoes burst and release their juices. Keep warm over low heat.
  • 4. Wash and sort the lentils to remove any debris. Place lentils and the chicken stock into a 2-3 quart slow cooker on high. Stir in bacon and vegetable mixture. Add water if necessary to fill slow cooker at least 2/3 full.
  • 5. Cover and cook on high power for 3 hours.
  • 6. When lentils are soft but not mushy, the soup is done. Stir in the basil or parsley and allow flavors to blend for 10 minutes. Cooker may be turned to low and soup kept for 2-3 more hours until serving time. Top servings with fresh ground black pepper if desired.

4 cups kale, chopped

6 cups water
1 cup bow tie pasta

Steps:

  • 1) Place all ingredients except for the pasta in crock pot.
