This is the best New England clam chowder recipe, ever! In the Pacific Northwest, we dig our own razor clams and I grind them for the chowder. Since these aren't readily available, the canned clams are perfectly acceptable. -Sandy Larson, Port Angeles, Washington

Number Of Ingredients 13

4 center-cut bacon strips
2 celery ribs, chopped
1 large onion, chopped
1 garlic clove, minced
3 small potatoes, peeled and cubed
1 cup water
1 bottle (8 ounces) clam juice
3 teaspoons reduced-sodium chicken bouillon granules
1/4 teaspoon white pepper
1/4 teaspoon dried thyme
1/3 cup all-purpose flour
2 cups fat-free half-and-half, divided
2 cans (6-1/2 ounces each) chopped clams, undrained

Steps:

  • In a Dutch oven, cook bacon over medium heat until crisp. Remove to paper towels to drain; set aside. Saute celery and onion in the drippings until tender. Add garlic; cook 1 minute longer. Stir in the potatoes, water, clam juice, bouillon, pepper and thyme. Bring to a boil. Reduce heat; simmer, uncovered, until potatoes are tender, 15-20 minutes., In a small bowl, combine flour and 1 cup half-and-half until smooth. Gradually stir into soup. Bring to a boil; cook and stir until thickened, 1-2 minutes., Stir in clams and remaining half-and-half; heat through (do not boil). Crumble the cooked bacon; sprinkle over each serving.

2 tablespoons butter
1 cup chopped onion
2/3 cup chopped celery
2 teaspoons minced green pepper
1 garlic clove, minced
2 cups hot water
1 cup cubed peeled potatoes
1 can (28 ounces) diced tomatoes, undrained
2 cans (6-1/2 ounces each) minced clams, undrained
1 teaspoon salt
1/2 teaspoon dried thyme
1/4 teaspoon pepper
Dash cayenne pepper
2 teaspoons minced fresh parsley

Steps:

  • In a large saucepan, heat butter over low heat. Add onion, celery, green pepper and garlic; cook, stirring frequently, for 20 minutes. Add water and potatoes; bring to a boil. Reduce heat; simmer, covered, until potatoes are tender, about 15 minutes. , Add tomatoes, clams, salt, thyme, pepper and cayenne; heat through. Stir in parsley. Serve immediately.

1/4 pound(s) bacon
4 - tomatoes, cored, seeded and cubed
2 pint(s) light cream
2 can(s) cream of asparagus soup
2 teaspoon(s) crab spice
2 tablespoon(s) parsley
1 teaspoon(s) celery powder
1/2 teaspoon(s) pepper
2.5 cup(s) potatoes, sliced, cooked
24 - chowder clams, liquid reserved
2 - medium onions
- asparagus, garnish

Steps:

  • Fry bacon in soup pot until crisp, remove.
  • Saute onion until clear, add clams, liquor, and heat to cook clams.
  • Add potatoes and spices and cook briefly.
  • Add soup, tomatoes and cream.
  • Simmer 10-15 minutes.
  • Do not boil.
  • Add clam broth to taste.
  • Garnish with asparagus spears.

3 slice(s) bacon
1/2 cup(s) onions, minced
1 cup(s) potatoes, cubed
1 can(s) cream of celery soup
1 1/2 cup(s) milk
pinch(es) black pepper

Steps:

  • Save the clam liquor.
  • Cook bacon in frying pan until crisp.
  • Remove, drain and break into 1\" pieces.
  • Brown onion in bacon fat.
  • Add clam liquor and potatoes.
  • Cover.
  • Cook over low heat until potatoes are done (about 15 minutes).
  • Blend in bacon pieces, minced clams and other ingredients.
  • Heat, but don\'t boil.
  • Bacon may be used for garnish.
