- In a large bowl, combine the allspice, thyme, cayenne pepper, black pepper, sage, nutmeg, cinnamon, salt, garlic powder and sugar.
- With a wire whisk, slowly add the olive oil, soy sauce, vinegar, orange juice, and lime juice.
- Add the pepper, onion, and green onions and mix well.
- Add the chicken breasts, cover and marinate for at least 1 hour, longer if possible.
- Preheat an outdoor grill. Remove the breasts from the marinade and grill for 6 to 10 minutes on each side or until fully cooked.
- While grilling, baste with the marinade.

- Preheat the oven to 220°C/Gas 7.
- (marinade ingredients begin at the chillies. use 1-2 scotch bonnet chillis (deseeded and finely chopped)). First prepare the marinade by combining all the ingredients with a good grinding of black pepper and a dash of oil. Rub the marinade into the chicken pieces, massaging it into the scored meat. Leave to marinate for at least 1 hour (or, better still, overnight).
- Heat a large ovenproof pan over a medium-high heat and add a dash of oil. Fry the chicken pieces for about 10 minutes until golden brown on all sides. Add the Worcestershire sauce and cook for 2 minutes.
- Cover with an ovenproof lid or foil and place in the preheated oven for 20 minutes until cooked through (if your pan isn't ovenproof, simply transfer the chicken to a roasting tray). Remove the foil for the last 5 minutes if the chicken needs colouring a little more.
- Serve the chicken hot with rice.

LYNN'S FAVORITE JERK CHICKEN
This recipe came from my brother-in-law with a few variations from me. Wonderful and flavorful with very few carbs. If you like your jerk chicken spicey, add more crushed red pepper flakes and cayenne pepper. Cooking time does not reflect marinating time.

- Mix all ingredients, except chicken, in a medium bowl.
- Cut each chicken breast into 4-6 long pcs.
- Add marinade to chicken breasts.
- Marinate at least 4 hours or overnight.
- Can be grilled on barbecue or in broiler.
- Cook just until done, do not overcook. This will dry out if overcooked.

- Add the Scotch bonnet pepper, onion, and green onions and mix well.
- Place chicken into one-gallon plastic freezer bag; pour marinade into bag; remove excess air from bag and seal. Marinate for at least 12 hours, turning bag every 6 hours -- marinate longer if possible, up to three days!
- Preheat an outdoor grill.
- Remove the chicken from the marinade and grill for 6 minutes on each side or until fully cooked.

- In a large resealable plastic bag, combine the first seven ingredients. Remove skin from chicken; if desired, use a sharp knife to cut through the leg quarter joints.
