I make this every Christmas. I haven't tried the substitutions yet although I've been tempted to try the semisweet morsels. Simple to make with delicious results. Time does not include chill time.

2 tablespoons butter
2/3 cup undiluted evaporated milk
1 1/2 cups granulated sugar
1/4 teaspoon salt
2 cups miniature marshmallows
2 cups milk chocolate chips
1/2 cup chopped pecans or 1/2 cup walnuts
1 teaspoon vanilla extract

Steps:

  • Combine butter, evaporated milk, sugar and salt in medium, heavy saucepan. Bring to a boil over medium heat, stirring constantly. Boil for 4 to 5 minutes, stirring constantly. Remove from heat.
  • Stir in marshmallows, morsels, nuts and vanilla. Stir vigorously for 1 minute or until marshmallows are melted. Pour into foil-lined 8-inch square baking pan; chill until firm. Cut into 1 1/2 inch squares.
  • BUTTERSCOTHCH FUDGE: Substitute 2 cups (12oz package) butterscotch flavored morsels for Milk Chocolate Morsels.
  • MINT FUDGE: Substitute 1 1/2 cups (10 0z package) mint flavored chocolate morsels for Milk Chocolate Morsels.
  • SEMI-SWEET FUDGE: Substitute 1 1/2 cups (9oz) Semi-sweet morsels for Milk Chocolate Morsels.

1 1/2 cups granulated sugar
2/3 cup Carnation Evaporated Milk (5 fl.-oz. can)
2 tablespoons butter or 2 tablespoons margarine
1/4 teaspoon salt
2 cups miniature marshmallows
1 1/2 cups nestle toll house semisweet chocolate morsels
1/2 cup chopped pecans (optional) or 1/2 cup walnuts (optional)
1 teaspoon vanilla extract

Steps:

  • 1. LINE a 8-inch-square baking pan with foil.
  • 2. COMBINE the sugar, evaporated milk, butter and salt in medium, heavy-duty saucepan. Bring to a full rolling boil over medium heat, stirring constantly. Boil, stirring constantly, for 4 to 5 minutes. Remove from heat.
  • 3. STIR in the marshmallows, morsels, nuts and vanilla extract. Stir vigorously for 1 minute or until marshmallows are melted. Pour into prepared baking pan; refrigerate for 2 hours or until firm. Lift from pan; remove foil. Cut into 48 pieces.

I double the recipe and put in a glass baking dish (9x13 inches). Nice for holidays . . . Keep it for a secret and family and friends will think you worked forever on it . . . (smiles). You can also use peanut butter chips and make peanut butter fudge.

3 cups semisweet chocolate chips
1 (14 ounce) can sweetened condensed milk
ΒΌ cup butter
1 cup chopped walnuts

Steps:

  • Place chocolate chips, sweetened condensed milk, and butter or margarine in large microwaveable bowl. Zap in microwave on medium until chips are melted, about 3-5 minute, stirring once or twice during cooking. Stir in nuts, if desired.
  • Pour into well-greased 8x8-inch glass baking dish. Refrigerate until set.

This is a bigger recipe than my Mother In Law Fudge posting. The ingredient amounts are different and it is a very delicious candy. I made this the other day so it would ripen nicely in the fridge for a movie party and it was creamy, cut beautifully, and enjoyed immensely. The recipe makes close to four pounds and it is pot-licking wonderful!

Number Of Ingredients 8

3 cups granulated sugar
1 (12 ounce) can evaporated milk
1/4 cup butter (I used unsalted)
1/2 teaspoon salt
4 cups mini marshmallows
2 (12 ounce) packages nestle's semisweet chocolate morsels (I use what I have on hand)
1 cup chopped pecans (I use 1 1/4 cups and DH says I need to use more) or 1 cup walnuts (I use 1 1/4 cups and DH says I need to use more)
2 teaspoons vanilla extract (I use home-made)

Steps:

  • Line a 13 x 9 pan with foil and leave some hanging over the edge of the pan to lift it easily.
  • Combine the sugar, milk, butter and salt in a 4 - 5 cup heavy saucepan and cook over medium heat stirring constantly. Bring to a boil and keep stirring and boil for 4 to 5 minutes.
  • Remove from heat and add marshmallows, nuts, morsels, vanilla. Stir vigorously for 1 minute or until the marshmallows are totally melted.
  • Pour into the prepared pan and refrigerate for two hours. Cut the fudge into tiny squares and refrigerate tightly covered.
  • ***I take my fudge out of the fridge when it fully sets and wrap it into 1/4 pound portions with plastic wrap and store in a container with a tight lid, in the fridge. I also let it ripen before serving as it develops a wonderful taste and texture after a couple of days. It keeps for a couple of weeks tightly wrapped.
