- Put chicken breast in a Pyrex baking dish sprayed with non-stick spray.
- Sprinkle chicken breast with spice mix on both sides to desired spiciness.
- cut butter into small pieces and top chicken with butter.
- Cover dish with foil paper.
- Bake at 350 for about 50 minutes (start checking it after about 45 minutes to know what's right for you oven) or to a temperature of about 170°.

- Preheat oven to 375°F.
- In a small mixing bowl, mix thyme, garlic powder, cajun seasoning, onion powder, black pepper, and bread crumbs.
- In a separate bowl, beat one egg.
- Spray a 13"x9" baking dish with a nonstick coating.
- Dip chicken breasts in beaten egg and then in bread crumb/seasoning mixture to coat.
- Arrange in baking dish leaving a small gap between each chicken breast.
- Bake on the middle oven rack for 25-30 minutes, turning once (optional - I never do).

- Heat oven to 350°F.
- Melt butter in large skillet on medium-high heat. Add nuts and celery; cook 2 to 3 min. or until celery is crisp-tender, stirring occasionally. Remove from heat. Stir in cracker crumbs, apples, apricots, onions, pepper and thyme.
- Place chicken, smooth sides down, on work surface; top each with 1/3 cup nut mixture. Roll up, starting at one short end of each; secure with wooden toothpicks. Spread any remaining nut mixture onto bottom of 13x9-inch pan sprayed with cooking spray; top with chicken. Cover.
- Bake 30 min. (Chicken will not be done.) Meanwhile, mix preserves, orange juice and vinegar until blended. Reserve 1/2 cup preserves mixture; spoon remaining over chicken. Bake 15 min. or until chicken is done.
- Heat broiler. Broil chicken, 6 inches from heat, 3 to 5 min. or until golden brown. Discard toothpicks from chicken. Serve chicken topped with reserved preserves mixture.

NELDA'S BAKED CAJUN CHICKEN BREAST
I wanted to try to cook breast on the bone in the oven that would be tender and moist so I gave this a try and everyone loved it. You could use any seasoning you wanted in the place of Cajun.

- Sprinkle chicken with salt, pepper and Cajun seasoning. Pour chicken broth in a 9x13 baking dish add 1-2 tablespoons of Cajun seasoning to broth and mix together. Place chicken in broth, cover with foil and bake at 375 degrees for 40 minutes (depending on size of chicken breast, mine were very large) remove foil, turn breast over, turn oven to 400 degrees and bake another 15 minutes or until done( again depending on size).
