Nanny's Macaroni and Cheese image

1 pounds pasta
2 quarts low fat milk
2 pounds velveeta
1 cans tomatoes

Steps:

  • Make pasta. While pasta is cooking heat milk with the Velveeta (cut up to melt quicker). Mix until melted and smooth.
  • Drain pasta, and pour into baking pan. Add most of the cheese sauce. Tuck tablespoons full of crushed tomatoes into areas around the pan. Cover loosely with aluminum foil.
  • Bake at 350 degrees for about 45 minutes to one hour. Use the leftover sauce for reheating if there are any leftovers.

Slow Cooker Macaroni and Cheese image

Cooking spray
8 ounces elbow macaroni, cooked
One 12-ounce can evaporated milk
1 1/2 cups whole milk
1/4 cup (1/2 stick ) of butter, melted
1 teaspoon salt
Dash of pepper
2 large eggs, beaten
Two 10-ounce bricks sharp Cheddar cheese, grated (about 5 cups)
Dash of paprika

Steps:

  • In a large 4-quart slow cooker sprayed with cooking spray, mix the macaroni, evaporated milk, milk, butter, salt, pepper, eggs and all but 1/2 cup of the grated cheese. Sprinkle the reserved cheese over the top of the mixture and then sprinkle with paprika. Cover and cook on low heat for 3 hours and 15 minutes. Turn off the slow cooker, stir the mixture and serve hot.

6 tablespoons butter
1/2 cup all-purpose flour
4 cups milk, warm
1 teaspoon dry mustard
1/4 teaspoon freshly grated nutmeg
1/4 teaspoon cayenne pepper
Dash salt and freshly ground black pepper
Dash hot sauce
Dash Worcestershire sauce
3 cups shredded Cheddar
1 pound cavatappi pasta, cooked al dente
1 cup crushed potato chips
5 slices cooked bacon, crumbled
1/2 cup freshly grated Parmesan, for topping

Steps:

  • Heat oven to 350 degrees F.
  • Melt 6 tablespoons butter in a large saucepot over medium heat. Add flour and cook, stirring, for 1 minute. Whisk in the warmed milk and bring to a boil, continue to whisk constantly. The mixture will thicken as the heat increases. Continue to stir while adding
  • the dry mustard, nutmeg, cayenne, salt, pepper, hot sauce and Worcestershire. Stir in the 3 cups of Cheddar until it melts.
  • Pour the cheese sauce over the noodles and add to a 3 quart casserole dish.
  • Sprinkle the chips, bacon and Parmesan on top and bake for 35 minutes.

SOUTHERN MACARONI AND CHEESE



Southern Macaroni and Cheese image

There is macaroni and cheese, and then there is special occasion macaroni and cheese like this one. Unlike most recipes, which start with a roux, this one begins with a milk-and-egg base, which gives the dish an incredibly rich, silky taste. It's adapted from Millie Peartree, the owner of Millie Peartree Fish Fry & Soul Food restaurant in the Bronx, who has been making this dish since she was a little girl. The recipe was passed down in her family for generations, but because of the generous amount of cheese used, the dish was only made for events like Christmas and Thanksgiving. Extra-sharp Cheddar adds tartness and a layer of Colby Jack creates a gooey, molten center. If you can't find a Colby Jack blend, shredded mozzarella or a Mexican-style blend will work in its place.

Kosher salt and black pepper
1 pound elbow macaroni
2 cups whole milk
2 large eggs
4 cups shredded extra-sharp Cheddar (about 16 ounces)
1/2 cup unsalted butter (1 stick), melted
2 cups shredded Colby Jack (about 8 ounces)

Steps:

  • Heat oven to 350 degrees. Bring a large pot of generously salted water to a boil. Add macaroni and cook according to package directions until a little under al dente, about 4 minutes. Transfer to a colander and rinse under cold water to stop cooking. Set aside.
  • In a large bowl, whisk milk and eggs. Add cooked macaroni, 2 cups extra-sharp Cheddar, melted butter, 1 1/2 teaspoons salt and 1/2 teaspoon pepper, and stir until well combined.
  • Add half the macaroni mixture to a 9-by-13-inch baking dish in an even layer. Sprinkle 1 1/2 cups Colby Jack evenly on top. Spread the remaining macaroni mixture on top in an even layer. Cover with aluminum foil, transfer to the middle rack of the oven and bake for 30 minutes.
  • Remove from oven. Carefully remove and discard the aluminum foil. Top the macaroni mixture with the remaining 2 cups Cheddar and 1/2 cup Colby Jack. Broil on top rack until cheese is browned in spots, 3 to 5 minutes. (The broiled cheese can go from golden to burnt fairly quickly, so keep a close eye on it.)
  • Remove from oven and let cool until the macaroni and cheese is fully set, 10 to 15 minutes. (The mixture may first appear jiggly, but it will firm up as it cools.) Serve warm.

1 pound sharp or extra-sharp Cheddar, grated
1/2 pound elbow pasta, uncooked

Steps:

  • Heat oven to 375 degrees and position an oven rack in upper third of oven. Use 1 tablespoon butter to grease a 9-inch round or square baking pan.
  • In a blender, purée cottage cheese, milk, mustard, cayenne, nutmeg and salt and pepper. Reserve 1/4 cup grated Cheddar for topping. In a large bowl, combine remaining grated Cheddar, milk mixture and uncooked pasta. Pour into prepared pan, cover tightly with foil and bake 30 minutes.
  • Uncover pan, stir gently, sprinkle with reserved cheese and dot with remaining tablespoon butter. Bake, uncovered, 30 minutes more, until browned. Let cool at least 15 minutes before serving.

Nanny G's Macaroni and Cheese image

This is my grandmother's recipe which I grew up on. It is my personal favorite, and without a doubt--the ultimate comfort food. I even love to eat it cold. It is one of my favorite side dishes, since it goes especially well with chicken and pork. Note: this is not a creamy mac & cheese recipe.

1 (8 ounce) package elbow macaroni
3 cups grated cheddar cheese
2 large eggs, slightly beaten
1 1/2 cups milk
1 teaspoon salt
pepper
paprika

Steps:

  • Cook macaroni according to the package directions and drain.
  • In a large mixing bowl, mix together the hot macaroni and 2 cups of the cheese, letting the cheese melt a bit.
  • Stir in the milk, eggs salt and pepper.
  • Pour into a lightly greased one quart casserole dish.
  • Sprinkle the remaining 1 cup of cheese on top.
  • Top with some paprika for color.
  • Bake uncovered for about 1 hour at 350°F until golden, and brown on the sides (if using glass dish).
