NANA'S LEMON CHEESE (LEMON SPREAD) FOR MICROWAVE
Lemons are a kiwi favorite. This simple, yet stunning, lemon spread is divine over hot scones, toast, or muffins. Use nice, juicy lemons with a bright yellow rind. A special thank you to Nana for sharing her recipe.

Steps:
- Note about lemon rind: use only the yellow part of the rind. The white part can be bitter.
- Place all ingredients in large microwave safe bowl and mix lightly. You may want to cover lightly with a lid.
- Cook on high for 4 minutes.
- Stir and cook on high for a further 4 minutes.
- Stir again and let cool for a while.
- Put in small jars and place in the refrigerator.

MICROWAVE CHEESE
Make your own fresh homemade cheese easily in a microwave with only two ingredients! Yield is a guess.

Steps:
- Microwave milk for 30 seconds or until just slightly warm.
- Mix in lemon juice (or vinegar) and stir a few times until lemon juice has reached all parts of the milk.
- Microwave the mixture for 40 seconds. You should see small pieces of a soft white substance (your cheese) floating in a clear yellowish liquid (whey).
- Put the mixture over a strainer and drain out the whey by pressing with a spoon. Flip the cheese upside down and strain again. Press a clean napkin against the strainer under the cheese towards the end of the straining process.
- Move the cheese to a bowl and enjoy.
- If not used immediately, spread cheese on a cheesecloth or a clean tablecloth and let sit over a bowl or cup for at least one hour to drain away more of the whey. Squeeze cloth to get rid of the last bit of liquid.
- Run cheese in a food processor if you wish for a smoother texture. Use within a week.

LEMON CHEESE
This recipe came over with my grandmother from England. It is great as a spread on toast, or use for filling in frozen pre-baked tart shells....top with whipped cream for a quick and easy dessert for unexpected guests.

Steps:
- Combine the juice of the two lemons and the sugar.
- Grate about a tablespoon of lemon rind and add.
- Bring to a boil in a pot.
- Beat the 3 eggs til thickened.
- Pour a small amount of the hot lemon mixture into the eggs, beating continuously.
- Continue adding the hot lemon mix until it has all been added.
- Take care to add it slowly so as not to curdle the eggs.
- Cook on low heat until mixture is thickened.
- Remove from the heat and add vanilla and butter.
- Mix.
- Place in a sterilized jar and refrigerate immediately.

- Grate the zest of 2 lemons; squeeze juice from 3 lemons.
- Melt butter with sugar over very low heat in a double boiler; slowly pour in beaten eggs and lemon juice. Stir lemon zest into butter mixture; continue to stir constantly until mixture is thickened. Remove from heat to cool completely.

LEMONY GARLIC BEANS (MICROWAVE)
This is a really nice way to serve beans, the beans retain a nice crispness & the sauce has a subtle lemon flavour which goes nicely with the garlic.

Steps:
- String & cut beans into 2.5cm lengths. Place into a shallow dish with stock, cover & cook on high for 8 minutes or until beans are tender; drain & reserve stock.
- Place butter, onion & garlic in a separet dish, cook on high for 4 mins or until onion is tender.
- Stir in flour, then lemon juice and reserved stock, cook on high for 3 mins or until mixture boils & thickens, stirring once.
- Combine beans with hot sauce, reheating for approx 2 mins if necessary.
