Kittencal's Easy Make Anytime Fat-Free Gravy image

This is a wonderful easy and quick no-fat gravy that may be used with canned broth or de-fatted chicken or turkey pan drippings and also may be made using beef drippings or canned beef broth --- if you are using chicken or turking drippings from the pan defat in a fat separator firstly then if needed add in fat-free chicken broth or water to equal 2 cups there is no need to add in the bouillon powder and garlic powder with the drippings just heat on top of the stove in a saucepan and continue with the flour/milk mixture --- this is a wonderful recipe for no-fat gravy!

2 cups fat-free chicken broth (or de-fatted pan drippings and if needed add in chicken broth or water to measure 2 cups)
1/2 teaspoon fresh ground black pepper (or to taste)
1/8-1/4 teaspoon garlic powder (OMIT if using pan drippings)
3 teaspoons oxo chicken bouillon powder (or 1 small envelope, OMIT if using pan drippings)
4 tablespoons all-purpose flour (for a thicker gravy increase flour by 1 tablespoon)
1/2 cup nonfat milk (or for a more creamy gravy use 1/2 cup fat-free evaporated milk)

Steps:

  • In a medium heavy-bottomed saucepan combine the broth with black pepper, garlic powder,and chicken boullion powder; cook over medium-low heat until at a simmer.
  • In a bowl whisk the flour with milk until smooth; add to the simmering broth stirring constantly with a whisk.
  • Continue stirring until bubby and thickened.
  • Season with more black pepper if desired.

This is a very easy and quick NO FAT gravy to make. No fuss and you do not have to worry about the gravy going lumpy. I developed this recipe almost 20 years ago using my homemade chicken broth or vegetable broth.

3 cups fat free chicken broth or 3 cups vegetable broth
1 (10 ounce) can mushroom stems and pieces, include liquid
1/4 teaspoon black pepper
1 teaspoon granulated garlic powder
1 teaspoon chicken soup base
1 teaspoon soy sauce
1 teaspoon Worcestershire sauce
4 tablespoons instant potato flakes (Idaho)

Steps:

  • In a large frying pan, add broth, mushrooms and liquid and bring to boil.
  • Add pepper, garlic powder, chicken soup base, soy sauce and Worcestershire sauce, stir to blend.
  • While still at boil, add potato flakes stirring constantly until gravy thickens to a desired consistency.
  • Use additional instant potato flakes if gravy is too thin.
  • If gravy gets too thick, add small amounts of water.
  • Adjust seasonings to taste.
  • If you desire a brown color, add a few drops of (Bovril, beef concentrate).
  • This gravy is excellent with roasts or chicken.

½ cup all-purpose flour
4 cups low-sodium chicken broth
2 tablespoons chicken bouillon granules
1 teaspoon garlic powder
½ teaspoon dried rosemary

¼ teaspoon smoked paprika

Steps:

  • Heat oil in a 2-quart saucepan over medium heat. Whisk in flour until smooth. Cook, stirring occasionally, until lightly golden brown, 7 to 10 minutes. Add chicken broth 1 cup at a time, whisking well after each addition. Add bouillon, garlic powder, rosemary, black pepper, onion powder, and paprika. Whisk until smooth, about 3 to 5 minutes. 3/4 cup crushed cornflakes
1/2 teaspoon poultry seasoning
1/2 teaspoon paprika
1/4 teaspoon salt
1/4 teaspoon dried thyme
1/4 teaspoon pepper
2 tablespoons fat-free evaporated milk
4 boneless skinless chicken breast halves (4 ounces each)
2 teaspoons canola oil
GRAVY:
1 tablespoon butter
1 tablespoon all-purpose flour
1/4 teaspoon pepper
1/8 teaspoon salt
1/2 cup fat-free evaporated milk
1/4 cup condensed chicken broth, undiluted
1 teaspoon sherry or additional condensed chicken broth
2 tablespoons minced chives

Steps:

  • In a shallow bowl, combine the first six ingredients. Place milk in another shallow bowl. Dip chicken in milk, then roll in cornflake mixture., In a large nonstick skillet, cook chicken in oil over medium heat until a thermometer reads 170°, 6-8 minutes on each side., Meanwhile, in a small saucepan, melt butter. Stir in the flour, pepper and salt until smooth. Gradually stir in the milk, broth and sherry. Bring to a boil; cook and stir until thickened, 1-2 minutes. Stir in chives. Serve with chicken.

1/2 cup finely chopped fresh mushrooms
2 tablespoons chopped fresh parsley
2 cups reduced-sodium beef or chicken broth, divided
2 tablespoons cornstarch
Pinch pepper

Steps:

  • In a saucepan, saute onion, mushrooms and parsley in 1/4 cup broth until vegetables are tender. Combine cornstarch, pepper and 1/2 cup of broth; stir until smooth. Add to pan with the remaining broth. Bring to boil, stirring occasionally; boil for 2 minutes.

2 tablespoons whole wheat flour or 2 tablespoons all-purpose flour
1 cup fat free chicken broth or 1 cup pan dripping
1/4 teaspoon poultry seasoning
salt and pepper
1/8-1/4 teaspoon Kitchen Bouquet
1/4 cup sliced mushrooms (optional)
1 cup fat free chicken broth (optional)
1 egg white (optional)

Steps:

  • Heat a heavy skillet over low heat.
  • Add flour and cook, stirring occasionally until light brown.
  • Before using meat drippings, remove the fat by placing in a seperator or quick chill in freezer for about 30 to 60 minutes and skim visible fat from top.
  • Put 1/2 of defatted drippings/broth in a jar, add the browned flour.
  • Cover tightly and shake until mixture is smooth.
  • Pour into a saucepan, add remaining liquid.
  • Bring to a simmer and cook for a few minutes, stirring constantly until desired consistency.
  • Season to taste with salt and pepper.
  • If desired add a few drops of Kitchen Bouquet until desired color.
  • Please Note: The cooking time allows for the quick chill method on the broth.

2 c "cold" water *
2 Tbsp corn starch (a.k.a. corn flour)
2 Tbsp chicken bouillon powder
1 Tbsp italian seasoning
1/2 tsp garlic powder
1/2 tsp onion powder
1/4 tsp black pepper, ground

Steps:

  • 1. In a 1 quart saucepan, pour in the cold water. Add remaining ingredients and whisk.
  • 2. Place pan on the stove, on medium heat, and constantly stir until gravy comes to a boil. Continue to boil for 1 minute, remove from heat and serve.
  • 3. Makes 2 cups (8 "1/4 cup" servings) This is great on rice, potatoes, stuffing or anything you like gravy on.
  • 4. * NOTE: Make sure the water is cold when you start. If you add dry corn starch to warm liquids, you end up with big clumps of goo and not a smooth gravy. At this point it can't be saved, dump it out and start over.
