NACHO MAMAS BEAN DIP

This is a great way to get your kids to eat beans and you will love it as well! You can add extra onions and canned or fresh jalapeno peppers to taste, but my kids love it this way!

1 (16 ounce) package sharp Cheddar cheese, chopped
4 green onions, cut into 4-inch pieces
½ (8 ounce) package reduced-fat cream cheese
1 (15 ounce) can ranch-style beans (such as Ranch Style®)
1 (15.5 ounce) can pinto beans with jalapeno peppers and bacon (such as Trappey's®), drained
⅔ cup chopped fresh cilantro
1 (10.5 ounce) bag scoop-shaped corn chips (such as Fritos® Scoops)

Steps:

  • Pulse Cheddar cheese and green onions together in a blender until evenly chopped; add cream cheese and pulse until blended. Pour in ranch-style beans; pulse to blend. Blend in pinto beans and cilantro until smooth. Serve with scoop-shaped corn chips.

With two kinds of beans, hearty cheese dip has mouthwatering Mexican flavor.

2 cans (16 oz each) Old El Paso™ refried beans
2 cans (15 oz each) Progresso™ black beans, rinsed and drained
1 can (4.5 oz) Old El Paso™ chopped green chiles, undrained
1 envelope (1 oz) Old El Paso™ 40%-less-sodium taco seasoning mix
2 loaves (2 16 oz. boxes) VELVEETA™ Jalapeno Cheese, cut into cubes
1 cup finely shredded Mexican cheese blend (4 oz)
Tortilla chips

Steps:

  • In 3 1/2- to 4-quart slow cooker, mix all ingredients except shredded cheese and corn chips.
  • Cover and cook on Low heat setting 3 to 4 hours, stirring after 2 hours, until cheese is melted.
  • Scrape down side of slow cooker with rubber spatula to help prevent edge of dip from scorching. Sprinkle with shredded cheese. Serve with tortilla chips. Dip will hold on Low heat setting up to 2 hours.

1 (15 ounce) can refried beans (or left over home made refried beans)
1 packet taco seasoning mix
guacamole
8 ounces sour cream
chopped ripe olives
diced tomatoes
chopped green onion
chopped jalapeno
shredded monterey jack cheese

Steps:

  • Spread the cream cheese on the bottom of a pie plate.
  • Heat beans, add seasoning mix, mix well and chill.
  • Then spread over cream cheese.
  • Layer remaining ingredients in the order given.
  • Chill well.

I know there are a ton of bean dip recipes here already, but I thought I'd share mine too. My husband always asks me to make it for parties, Superbowl, holidays, etc.

1 lb ground beef
2 (16 ounce) cans refried beans
1 (14 1/2 ounce) can whole tomatoes
6 ounces taco sauce
1 1/2 lbs shredded cheddar cheese
1 teaspoon chili powder
1 (1 1/4 ounce) packet taco seasoning
1 dash hot sauce
tortilla chips

Steps:

  • Brown ground beef and drain well.
  • Add taco seasoning and cook according to package directions.
  • Meanwhile, liquefy tomatoes in blender.
  • Combine all ingredients together in large pot and simmer until cheese has melted and is heated through.
  • Serve with chips.
