1 pound ground beef
1 onion, chopped
1 (1.25 ounce) package taco seasoning mix
2 (16 ounce) cans refried beans
2 cups shredded Cheddar cheese
1 (15 ounce) jar salsa
1 (12 ounce) bag tortilla chips
¼ cup chopped iceberg lettuce
1 chopped green onions
1 tablespoon diced tomatoes
1 tablespoon shredded Cheddar cheese
¼ cup diced avocado
1 tablespoon sour cream
1 tablespoon taco sauce

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch pan; set aside.
  • Heat a large skillet over medium-high heat and stir in the ground beef and onions. Cook and stir until the beef is crumbly and evenly browned. Drain fat. Mix in the taco seasoning, and set aside.
  • Spread the refried beans to cover the bottom of the prepared 9x13 inch pan. Layer the cooked ground beef and onions evenly over the refried beans. Pour the jar of salsa over the ground beef and spread 2 cups shredded Cheddar cheese over the salsa layer.
  • Bake in the preheated oven until the cheese is bubbly and the layers are heated through. Serve with tortilla chips and your choice of fresh toppings.

2 pounds ground beef
2 large onions, chopped
2 large green peppers, chopped
2 cans (28 ounces each) diced tomatoes, undrained
2 cans (16 ounces each) hot chili beans, undrained
2 cans (15 ounces each) black beans, rinsed and drained
2 cans (11 ounces each) whole kernel corn, drained
2 cans (8 ounces each) tomato sauce
2 envelopes taco seasoning
2 packages (13 ounces each) spicy nacho-flavored tortilla chips
4 cups shredded cheddar cheese

Steps:

  • In a Dutch oven, cook the beef, onions and green peppers over medium heat until meat is no longer pink, breaking meat into crumbles; drain. Stir in the tomatoes, beans, corn, tomato sauce and taco seasoning. Bring to a boil. Reduce heat; simmer, uncovered, for 30 minutes (mixture will be thin). , In each of 2 greased 13x9-in. baking dishes, layer 5 cups of chips and 4-2/3 cups of meat mixture. Repeat layers. 1 small green bell pepper, seeded and chopped (optional)

2 teaspoons chili powder (or to taste)

1 teaspoon dried oregano
1/4 cup parmesan cheese (can use more)
1 (10 ounce) can condensed cheddar cheese soup, undiluited
1/2 cup milk
1 (8 ounce) can refrigerated crescent dinner rolls
1 cup grated cheddar cheese

Steps:

  • Set oven to 375 degrees.
  • Grease a 13 x 9-inch baking dish.
  • In a large skillet cook the ground beef with onion, garlic and green bell pepper (if using) until beef is browned; drain fat.
  • Add in salt, pepper, chili powder, cumin and oregano and Parmesan cheese; cook stirring for 2 minutes longer; remove the skillet from heat.
  • In a bowl whisk together the cheese soup and milk; set aside.
  • Separate the crescent dough into 4 rectangles; press perforations together firmly.
  • Roll each rectangle to 8x4 inches.
  • Cut each rectangle in half crosswise to form 8 (4-inch) squares (use a pizza cutter for this!).
  • Spoon about 1/4 cup beef mixture into center of each square.
  • Lift 4 corners of the dough up over the filling to meet in the center; pinch and twist firmly to seal.
  • Place the squares into the prepared baking dish.
  • Drizzle the soup/milk mixture around the squares in the baking dish.

1 cup long-grain rice
2 cups water
2 large chicken breasts, diced
1 tablespoon oil (or cooking spray for a healthier option)
1 (1 1/4 ounce) packet fajita seasoning mix
1/2 cup water
1 small onion, diced
1 green bell pepper, diced
3/4 cup corn
2 garlic cloves, crushed
2 cups mild salsa
1 1/2 cups grated cheese
2 ounces nacho chips (should produce 1/2 cup crumbs)

Steps:

  • Preheat the oven to 350°F or 180°C.
  • Start boiling the rice in 2 cups of water, covered. This should take 15-20 minutes.
  • Meanwhile, heat the oil in a skillet. Add the diced chicken and cook, stirring, for 3 minutes.
  • Stir in the 1/2 cup water and fajita seasoning.
  • Add the diced onion, green bell pepper, corn and garlic.
  • Cook for 10 minutes, stirring frequently, until the chicken and vegetables are cooked and the liquid has mostly reduced.

Very quick and easy dinner. Can be made ahead and baked as needed. And this recipe is easily altered. Leave out ingredient you don't like (salsa, beans, veggies). Add things you like (diced tomatoes, lettuce after baking).

2 lbs ground chuck
1 (16 ounce) jar taco sauce or 1 (16 ounce) jar salsa
salt and pepper
1 minced onion
1 (16 ounce) can refried beans
12 ounces sour cream
1 (6 ounce) can black olives, drained and diced
1 red pepper, diced
1 green pepper, diced
16 ounces shredded cheese, cheddar or 1 cheddar cheese, blend
1 (16 ounce) bag tortilla chips

Steps:

  • Preheat oven to 350°.
  • Season ground chuck with salt and pepper to taste.
  • Brown ground beef with minced onion.
  • After fully cooking ground beef add taco sauce (or salsa) and beans.
  • Layer mixture in the bottom of baking dish.
  • You probably will need a large one.
  • Spread sour cream on top.
  • Spread cheese on next.
  • Top with diced vegetables.
  • Cover with foil.
  • Bake for 15-20 minutes.
  • Remove foil and bake another 5 minutes, until cheese is melted and bubbly.

8 ounces bulk breakfast sausage, cooked,drained and crumbled
4 large eggs, lightly beaten
1/4 cup sliced green onion
2 tablespoons melted butter
3 cups tortilla chips, coarsely crumbled
2 cups shredded cheddar cheese
1 (16 ounce) jar salsa (or home made salsa)

Steps:

  • Preheat oven to 350°F.
  • Combine sausage, eggs and green onions in medium bowl.
  • Pour butter in medium baking dish; add sausage mixture.
  • Top with chips; sprinkle with cheese.
  • Bake for 10 to 12 minutes, or until eggs are set and cheese is melted; top with salsa.
  • Serve immediately.

I got this recipe from a friend. She uses refrigerated crescent rolls in several of her favorite recipes. I loved this one, especially.

1 lb lean ground beef
1/2 c chopped onion
1/4 tsp each salt and pepper
1 Tbsp chili powder (or to taste)
1 tsp ground cumin
1 tsp oregano
1 can(s) (10-3/4 ounces) condensed nacho cheese soup, undiluted
1 c milk
1 pkg (8 ounces) refrigerated crescent roll dough
1/4 c (1 ounce) shredded cheddar cheese
chopped fresh cilantro
salsa, (optional)

Steps:

  • 1. Preheat oven to 375 degrees. Spray 13 by 9-inch baking dish with nonstick cooking spray. Season beef and onion with salt and pepper. Brown beef and onion in large skillet 6 to 8 minutes over medium-high heat, stirring to break up meat. Drain fat. Stir in chili powder, cumin and oregano. Cook and stir 2 minutes; remove from heat. Stir together soup and milk in medium bowl; pour evenly into bottom of prepared dish.
  • 2. Separate crescent dough into 4 rectangles; press perforations together firmly. Roll each rectangle out to 8 by 4 inches. Cut each rectangle in half crosswise to form 8 (4-inch) squares. Spoon about 1/4 cup beef mixture into center of each square. Lift 4 corners of dough up over filling to meet in center; pinch and twist firmly to seal. Place squares in prepared dish.
  • 3. Bake, uncovered, 20 to 25 minutes or until crusts are golden brown. Sprinkle cheese over squares. Bake 5 minutes or until cheese melts. To serve, spoon soup mixture in dish over each serving; sprinkle with cilantro, if desired. Serve with salsa, if desired. Serving consists of 2 filled squares. Serves 4 people.

1 lb ground beef
1 pkg Taco Seasoning
3/4 cup water
3/4 cup sour cream
3/4 cup shredded cheddar cheese
3/4 cup salsa
1/2 cup crushed tortilla chips

Steps:

  • Preheat oven to 400 degrees. Prepare shells & cheese exactly as box says. While cooking pasta, brown meat; drain meat. Add taco seasoning and water; simmer 5 minutes. Stir sour cream into finished pasta. Spoon half of pasta mix into 8 inch square baking dish; top with meat mixture, half of the shredded cheese and remaining pasta. Cover. Bake 15 minutes; top with salsa, remaining cheese, and tortilla chips.; Bake, uncovered, an additional 5 minutes.

Steps:

  • In large skillet, cook beef over medium heat, until no longer pink.
  • Drain meat.
  • Add beans, water, & taco seasoning. Cook & stir 5 minutes.
  • Spray 13x9 pan with cooking spray.
  • Unroll crescent dough in pan sealing seams.
  • Spoon beef mixture over dough.
  • Top with sour cream, cheese, & chips.
  • Bake 375 for 20 minutes or until cheese is melted.
  • Top with lettuce & tomatoes.
